1:45 de la mañana de la madrugada del día siguiente de haber realizado la jima; el maestro toca a mi puerta para ir hasta el palenque, como habíamos acordado, para prender el horno de piedra volcánica. Las piñas del maguey jimado a cinco horas del palenque ya se habían descargado de la volqueta como le decimos en Colombia o volteo como le dicen en México.
De la casa del maestro Nazario al palenque hay que caminar alrededor de 10 minutos, así que a eso de las 2 de la mañana pasaditas le estábamos echando candela a la madera que se encuentra debajo de más rocas volcánicas medianas que son las que luego se calientan al rojo vivo durante toda la madrugada y parte de la mañana. Mientras el horno arde, los ayudantes del palenque, también muy madrugados, llegan para alistar las piñas, ya que, si son muy grandes, como fue el caso, deben picarse en dos, tres y hasta cuatro partes.
