Sunny Lau est professeure titulaire à la Faculté d'éducation de l'Université Bishop's et titulaire de la Chaire de recherche du Canada (Niveau 2) sur l’enseignement et l’apprentissage multilingues intégrés. Elle est également professeure affiliée à l'Université Simon Fraser et co-éditrice de la revue Critical Inquiry in Language Studies. Avant de rejoindre l'Université Bishop's, elle a travaillé comme instructrice pour les programmes de formation des enseignants à OISE/University of Toronto et pour la formation TESL au conseil scolaire catholique de York à Toronto.
