"To earn respect in your kitchen, you have to be one of them. You have to show them that whatever you're doing, I can do it along with you." There is nothing more important than customer service in the restaurant business. Great food can be overshadowed by poor service. "If the food is very good but the customer service is bad, I'll just make it to go.”
