Jack Simpson says the best thing about being an apprentice carpenter, was getting to go to great coffee shops all over Melbourne.
It was the best part of his day.
Truth is, he didn't really like carpentry, but started to really love coffee.
One chance day, he walked into a great cafe in Brighton who had a sign on the window looking for baristas, and so, Jack took a leap.
With no experience, Jack assumed he wouldn't make the cut, but the owners saw his enthusiasm and potential, and offered him a shot at the role, so Jack quit his apprenticeship, and charged head first into his new career.
Fast forward to 2023, and Jack Simpson is not just another Melbourne barista, he's is now the Australian Barista Champion, and is leading innovation in the coffee industry.
He describes the competitions being akin to F1 for motor vehicles.
The competitors innovate and implement new techniques and equipment, on the ultimate quest for the perfect cup of coffee, which eventually filters down into the average corner cafe.
The changes in technology since he started are huge, with all sorts of machines finding their way into the average cafe, and Jack has proven he is at the forefront of innovation.
Jack wants to embrace the tech, and use it not to do his job for him, but to allow him time and space to improve other elements of coffee making.
Word of warning, this is serious business, and to Jack, 1% improvements can make of break your chance of winning the title or not.
