my home turf and here in CantonOhio that is something that I've
been involved with from prettymuch the very start.
I watched the initial wineryand restaurants get built.
We saw the initial vineyardsget planted and then, as it got

bigger, they built morebuildings and they have villas
and they have the buildings onsite so that you can stay there.
Now it's utilized throughoutthe summer and had been and has
been for weddings.
Some famous people have gottenmarried there and had been and

has been for weddings.

Plus, we have the Pro FootballHall of Fame in Canton Ohio, so
a lot of the inductees stay atJervasi.
It's just a fantastic groundsexperience, but it's crazy.
Grounds experience, but it'scrazy.

Hey, frayed, it is crazy that100% that it's five minutes from
a house.
When they put it in it was likethis doesn't belong here,
because where we are and whatlevel of service and hospitality
that exists there, you wouldnever know it.
I mean, it has become adestination.

But as it evolved they put inwhat they call the Javasi
Stillhouse, which is in anold-fashioned Italian or Spanish
church kind of setting.
It's got a bell tower.
I can show you the outline ofit because it's right here on
the Hat.
But this is the top of theactual bar and in it is also the

distillery.
There is a distillery, there isa distillery, so it's half
distillery, with the stills andeverything in the back.
There's a giant window betweenthat and the bar and it's also,
during the day, a coffee shop offantastic espressos and
cappuccinos and coffee espressos.

And you know cappuccinos andcoffee, they, they, you know
everything.
There is high-end, five-startype stuff.
The bar has great pours.
Uh, we have our christmas partythere.
Uh, every the last three yearswe've had our christmas party at
gervasi and love it, we love topush it.
But uh, initially, when I, whenthe, when the still house was
built and the distillery went inthe original uh, the original

master distiller I met about twoweeks before he was leaving and
they they took a little bit oftime but they now they're now
who we've had on the podcastbefore Shea Pridemore.
He became the master distillerafter Bill Hockett was there.
Now the stuff that Bill Hocketthad laid down uh is now coming

to uh old enough to release andthey released it.
And it's fantastic becausewe've been a part of almost
every step of the way.

And then also this is thebottle, the single barrel, the
that I was able to get.
Now it came with this awesomeglass, this tasting glass,
gervasi single barrel.

And this is bottle number 15out of all of them I am saving
this one and I bought bottle 21.
Now it doesn't say the stillhouse but Shea signed it also
First batch.
That's really kind of cool tohave the first batch Now.

Before this they put out adecent amount of finished
bourbons but they initially cameout with a seven and an eight
year of a weeded bourbon.
That was their initial releases.
That, through Shea, they wereable to do and honestly, this
eight year was fantastic.

There was a huge story how thiswas distilled in Colorado by
Steve Nally, purchased then byAlan Bishop at the Spirit of
French Lick but then eventuallyresold to Gervasi and they took
those barrels and Bill Hockettand Alan Bishop have a working
relationship.

They're friends.
And Bill was able to becausethey had changed some rules in
Indiana and you had to have moreIndiana bourbon to be Indiana
bourbon than you did before theychanged the rules.
There were some barrels thatAllen wasn't going to be able to
use but there was one barrelthat initially was fantastic and

they let that go an extra yearand Bill had left but they
bottled that and I was able toget Bill a bottle of this but I
still have this eight-year righthere.
I opened this with Shea andthat's the first thing that I'm
going to taste.
I love this weeded bourbon.
It was that the eight years wasof going and aging, and it aged

for a year and a half in Ohio,it aged probably for a couple
years in Indiana and it agedprobably for five years in
Colorado.
So, oh, we got the San DeSantosfrom Brazil.

Gervasi Spirits of Canton, ohio, earned the runner up spot
taking home in the whiskey thing.
They took second in runner upbut they took five medals two
gold, two silvers and one bronze.
And in the US SpiritsChampionship that's where they

did they actually earned fourmedals in the Spirits Division,
including two golds, one silverand one bronze and two golds and
then two golds, one silver andone bronze.
So they said the top threewhiskey distilleries were
Moylan's distilling inCalifornia, gervasi Spirits was

second in Ohio and nearest greendistillery in Tennessee was
third.
The top spirits distillerieswas Gervasi Spirits Ohio,
waypoint Spirits, connecticutand Pappas Hilton Distillery in
Ohio.
So they did pretty damn good atthe World.

So that's kind of cool.
So that was one thing that itdid.

They use consistently and theykeep, so they were taking it and
finishing it with the.
They purchased some morebarrels uh, similar barrels from
the first time, I believe thesame colorado barrels and they
did a lot of finishing and onewas a.

They did a wine barrel finishand a maple barrel finish twice
and that's what they kept ontheir shelves for the last.
So they didn't have any actualbourbon.
So I'm so excited because atthis distillery they released
their first single barrel andnow they've got batch.
Two on the shelf and they had afew batch ones when I was there

last week.

I want to say burntbutterscotch and maybe a little

made white raisins and you smellit.
That's, that's the smell.
That's there.
It just a little bit of thecurrent, a little bit All right.

What does it do in the glass?

Uh, I wonder if I can spin thisone better than I can.
A Glenn, uh-uh, this onedoesn't like to spin, but the

Now, if you compare the two,it's not the, the weed, it is

You can tell it's pot distilled.

It's not a, what would you say,it's not a big Kentucky bourbon

pot distilling, I don't thinkand I said this to Alan when
he's Spirit of French Licking,now that he's at Old Homestead,
which I'm going to be visitingsoon, hopefully, see him then
but why are you trying to makebig Kentucky bourbon when
they've already made it 50,000times?
If you're doing a pot still andyou're trying to come forward
with this, this is definitelywhat you want.

(41:01):
As far as a flavor, I love potdistilled bourbon and this comes
through 100%.
There's a little bit of a grapetaste to it.
There was an actual Super Nash.
He basically bought a BardstownBourbon Company $389 bottle at

(41:31):
one point.
I forget what the batch was,but this is very similar to that
.
That was a very expensive.
Now I believe this is five year, because it was either five, it
could be six.
Um, I wish I would have grabbedthe note, the notes on it,

because she gave me a ton ofnotes on it.
I could have read through itand known exactly what it was.
But um, oh, it even smellsbetter in there off to the side
whenever.
All right, I'm just trying tofigure out how it finishes.

Yeah, it's a fantastic.
It almost tastes like a cognac.
I've tasted cognac before itwarms you like a cognac.
It's almost like a cognac,before it warms you like a
cognac.
It's almost like a cognac, um,cause there's like a grapey
flavor to it.

So that's really kind of cool,all right.

It has a has that fall spicepack so it's got like an

allspice with, uh, raisins andcurrants I mean white raisins
and currants.
I mean, if you love that,you're gonna love this.
It's very, very, very festive,fall, winter warming, perfect
for the fireplace, kind of thing.

So the nose'm going to give thenose on this one a four.
So that's pretty good for thenose, all right.
The body it's got a big body at116.

(45:51):
It reaches the cheeks but itdoesn't sting the cheeks, so

it's really a tough one.
On this one, it got, I think, afull body.
You gotta give it a three onthe body.
It's not quite the five, allright.
Nice, this is very interesting.
Oh so we have a jack fromrussia, is from Russia, is
enjoying the podcast tonight.

So we're seven out of eight sofar.
Now this hits my wheelhouse.

As far as taste, I can givethis up to five.
I enjoy it, I like it, I bought.
I got the bottle.
I bought another bottle becauseI wanted to drink it and I'm
not being let down at all.
I and and you know, as AlanBishop will tell you, or anybody
who runs a, that I know thatruns a pot.

Still, I do love pot.
Still, whiskey, um, it'sdifferent than column, still, it
just is.
And I like the, I like the, Ilove Kentucky bourbon, whatever,
but this is more of on thefruitier festive.

Now it's doing the trick.
I mean, honestly, I can feelthe warmth, it's fantastic.
The taste taste caramelly andvanilla.

On the sweetness, this is sweet.
So there's a little bit ofleather.
Now, that's there.
I could taste that little bitof leather, but it's not a
bitter leather.
It's, but it's not a bitterleather, it's sweet.
It's got some sweetness.
Now the finish.
Okay, so the taste.

I would have to say the taste.
I will give it a 4 out of 5.
So now we get to the finish.

(48:33):
So now we get to the finish.
It's long, but there is just alittle bit.
There's the leather, and for meit's long.

(49:13):
I have to think about this.
Yeah, all right, let's try itone more time.
I will say that this is also onthe finished side especially.
It's weird in my opinion, thisdrinks on the front really sweet

(49:37):
, but on the back end it goes tothat leather and the more I do
it, the oiliness of it, the bodycomes through and keeps making
that finish last longer andlonger and longer and it's
leather.
But there's a sweetness to theleather and what's wrong with
leather?

(49:57):
I mean, honestly, people lookfor that flavor in a lot of the
single malts and they're alwayslooking, and it's, it's warm and
comforting and it's not and itis not negative.
So I will give this a four outof five on the finish too.

(50:18):
So my home turf distillery, intheir first ever bat release of
a single barrel and their and oftheir expression of bourbon, I
give it a 14 out of 18, which Ibelieve is a fantastic

(50:44):
suggestion.
Uh, I think anything whenyou're talking about 18,
anything above a 12, 13, 14, 15,16, 17, 18 is a bottle buy.
So if you're at Gervasi andyou're there and they have this

100%, I suggest you get it.
Canton, ohio, gervasi, is aplace to come, and now that the
distillery is producingfantastic aged bourbon, plus the

(51:26):
Distillers Club, plus all thestuff that they got going on
special events, tastings, bringyour wife, come down here, bring
your wife, your wife hang outand do all the bourbon stuff
while she goes to the spa.
They have a world-class spot.
Everything they do is fantasticand you just gotta check out

Gervasi.
Because oh so Jack Noyce fromRussia is asking he only drinks
whiskey with ice.
So there's nothing wrong, jack,with drinking whiskey with ice.

I don't care what anybody says,it's what you want to do.
But what I will tell you is ifyou get some decent I don't know
what you get in Russia, but ifyou can get some bourbon or you
get some stuff over there, witheverything that's happening in

the world, that our countriesalign, and you can get some
bourbon, because I think thatAmerica should be shipping
bourbon to Russia becauseRussians appreciate good spirits
.
But I will tell you this ifyou're going to drink it on ice,
this is what I do when youdrink it on ice.
It's a decision that you'redrinking, but what I do is I

pour a couple sips in the glass.
First, I smell it and I sip itand I drink those little bits of
sips.
Then I drop my ice cube in anddo the pour Every single time.
You should do that, because youshould always experience your
bourbon neat, at least for acouple sips, and then add your

(53:21):
ice or start drinking anold-fashioned or a drink of.
That particular bourbon is whatthe distiller and the
distillery wants you and thinksis one of the things that
they're putting out for thelevel that you're buying.

(53:43):
It's the best that they put out.
So you should always just sipit a little bit.
Uh, when I'm, when I'm, I don't, you know, drinking bourbon and
sipping bourbon are twodifferent things.
When you're doing the tastingand you're doing and sipping
bourbon are two different things.
When you're doing the tastingand you're doing the sipping and
you're doing the analyzing, youdon't need a lot and you're
just tasting and sipping, andthe more you do, the more open

(54:07):
your palate is.
Now, never go off the first sip,because the first sip is what
they call a palate shock.
It shocks your palate.
Then you take the second sipand then you're a palate shock.
It shocks your palate.
Then you take the second sipand then you're going to get the
flavors that are there Now.
At that point you can choose tosip a little bit more, or you
drop your ice cube in and put iton the rocks.
There you go.

They altered their distillingprocess to be able to make
American single malt and bourbonat their distillery.
But the size of that distilleryis the same size as a Jim Beam
distillery, a Maker's Markdistillery.
It is massive in Ohio, which isunheard of.

There's nothing even close.
It's the largest distillery inohio by far.
Plus they're running theircraft distillery, which was
running 24 7 as is producingfantastic spirits.
And then now we've got the maindistillery running.
But I can't wait.

there in Columbus and you'regoing to have to check it out
once it gets going.
