For sure, and I'm
really keen to get a bit more of
your background and then,specifically, to learn more
about the Mayborn in BeverlyHills.
I mean, what an incredibleplace to be based and to work,
for that matter.
But tell everyone a little bitof your backstory, because I
think this is really importantto understand, because I'm such
a huge fan of the Fairmont.
So tell us a little bit abouthow you got into hospitality and
(03:06):
how you ended up in BeverlyHills.
Speaker 1 (03:08):
Fantastic.
So, as we were just discussing,my hospitality journey actually
started at the Fairmont BanffSprings on a summer program when
I was in school and was offereda role as a room attendant.
So it was a four-month programcleaning rooms, really learning
the industry from the absolutebase.
Speaker 2 (03:32):
That's the best place
to start in this business.
Those people that I know thathave risen up in their careers,
like yourself that is one of theVIPs being interviewed here
that you actually started bycleaning rooms, so you fully
understand the whole ecosystemof running a hotel operation.
Speaker 1 (03:45):
Yes, and you know, in
my career that's to this day
probably one of the things I'mmost proud of right that
starting out just in a reallychallenging and such an integral
role in what we do From there.
I was so fortunate to spendabout just shy of 10 years with
Fairmont Hotels and Resorts andhad incredible opportunities and
(04:06):
that was actually how I came tothe US was transfer with them
down to the Fairmont ScottsdalePrincess you mentioned Shannon
earlier.
That's where she and I hadcrossed paths and was then
fortunate to spend time withthem in California before I
moved out of Fairmont and joinedDorchester Collection, which
(04:29):
was what brought me up toBeverly Hills originally.
Speaker 2 (04:32):
Yes, the Dorchester I
know very well.
I worked with the Red CarnationHotels for many years yes, and
of course the Dorchester wasalways the one that we were
looking at to understand some ofthe developments and new
properties and I guess would saywas the closest in parallel.
So the Dorchester CollectionActually just mention that for
some of our listeners that maynot be familiar the Dorchester
Collection is some absolutelyremarkable luxury hotels around
(04:52):
the world.
So maybe just give everyone alittle bit of overview, since
you mentioned that and I pausedon it.
So tell everyone a little bitabout the Dorchester Collection.
Speaker 1 (04:59):
Well, so that one I
was with Hotel Bel Air, which
really a beautiful, iconicproperty, and when I came from
Fairmont, my managing directorat the time, I remember, had
said to me that joining his teamwas going to be hotel finishing
school for me.
And he was right.
(05:24):
Moving into that Beverly Hillsfive-star market was really
fantastic and a really wonderfulplace to learn that side of the
business.
Very cool.
Now let's jump to the.
Speaker 2 (05:30):
Mayborn now, because,
I mean, it's great to get your
backstory and I think that's soimportant for our listeners
because obviously it certainlybuilds credibility and trust,
Because one of the things I'mgoing to ask you about, as you
know, sarah, is some of the bigtrends that you're seeing in
2025, and travel and having thatbackground and experience is so
valuable, not only in the rolethat you have today, but in
terms of how the industry isgoing to continue to evolve.
(05:51):
But, yeah, tell us about theMayborn Hotel.
I've not had the privilege tostay there.
I'm familiar with it, but tellus about this property.
Speaker 1 (05:56):
Yeah, it's just
absolutely amazing.
So we were the firstinternational property for
Mayborn Hotels, best known atthat time for Claridge's, the
Connacht and the Barclay, whichare three really of the most
iconic hotels in London.
So when we had the opportunityto bring that brand to North
America such an incredibleopportunity and I think what
(06:20):
makes Mayborn Beverly Hills sospecial is we have that
connection to the incredibleheritage of these iconic London
hotels.
But we really marry that withwhat it is to be a luxury
operator in Southern Californiaand really lean into doing
things our way and in the waythat our customer is looking for
(06:42):

So one of the examples of thatwe're going to be launching
shortly, actually this weekend,with Oscars weekend and awards
season Pret-a-Porter, which goesback to our London roots the
Barclay Hotel used to do abeautiful afternoon tea service
(07:04):
with a play on the fashionindustry.
Really off the red carpet ishow our interpretation of this
is going to go.
So really leaning into thosebeautiful roots that we have
with these iconic Londonproperties, but doing it
differently and doing it our way.
Speaker 2 (07:20):
That's amazing.
There's a couple of things youmentioned there I just wanted to
call out.
So, claridge's, I'm assumingyou're a fan of the White Lotus.
Speaker 1 (07:27):
Oh my goodness and I
heard that shout out on the
first episode this season.
I was so excited me too, I likeit really made me laugh.
Speaker 2 (07:34):
So it's like they're
at, uh, the four seasons and
kosamui, of course, for anyonewho's uh not watching this
season yet.
But uh, and in the firstepisode, uh, the mom makes a
reference to the fact like whydon't we just have clarages in
london?
Speaker 1 (07:47):
exactly.
Well, no better place to bereally.
Speaker 2 (07:51):
Yeah, well, it sounds
like the Mayburn is probably
the place to be now, but clearlytell us a bit about your role
there.
The other thing you mentionedtoo is that, you know, with the
connection to the Oscars in LA,I mean this is where certainly
some of the trends that we'veseen in our industry are shaped
in the area that you're based.
So I mean you really are inmany ways at the epicenter of
(08:13):
hospitality.
I mean I had Rick Fidel on theshow last year from the Rosewood
in Miramar Beach and the numberof people I spoke to afterward
that referenced Miramar Beach asan influence on some of the
working with families and someof having these packages that
would allow young families to beable to have their kids stay
(08:34):
there, like this turnkey cribsolution that they had
implemented and the fact thatthey allow celebrities to stay
there that don't get bothered byanybody.
Speaker 1 (08:44):
Tell us a little bit
about your role at Mayborn and
what currently you're focused onand some of the priorities
there pillars of luxuryoperations and I think that I'm
really fortunate in my role inthat I get to spend so much time
(09:11):
on the service component andreally perfecting that guest
experience, so that component isa huge part of my role.
We're also looking at a lot ofdifferent activations right now
within our property as well assome renovations bringing to
(09:31):
market some new experiences overthe next couple of years in the
hotel.
Speaker 2 (09:36):
Very cool.
Now, of course, the theme forthis series is leaders behind
the stars, and you are certainlyone of those leaders, sarah,
and I guess I would like to askyou along those lines what the
role of Forbes Travel Guide hasbeen, either for you personally,
but also specifically for theMayburn Hotel, and I'm keen to
get your advice for those peoplethat are on the journey.
(09:56):
I mean last year, when I spoketo about 20 different guests at
my very first summit, I wasamazed to get such an
understanding about the impactit's had on their business once
they get their five stars, andnot only in terms of the
business that it gives them thatcertification, but also how
they improve the guestexperience in that entire
(10:18):
journey to get to a point wherenot only is it a great
certification, it also improvestheir entire operational
processes because they go handin hand right.
So tell us a little bit aboutyour journey with Forbes Travel
Guide and their rating system.
Speaker 1 (10:31):
I mean, it really
would have been years ago when I
was doing a hotel opening andwe had a very ambitious goal of
getting our five-star award inthe first six months of opening
the hotel, which is a reallydifficult thing to do.
Usually, second year ofoperations is when you might
enter that journey.
Yeah, and what I learnedthrough that process is just
(10:54):
what an incredible partner theteam at Forbes Travel Guide are.
The training is absolutelyworld class and the approach is
one that has been so valuable inthat it feels like a
partnership and it feels like weare working together towards a
goal.
Um, you know, I I was jokingwith jennifer lodge when, when I
(11:18):
spoke with her the other day,that it, um, it felt like she
was part of our team on some ofthese openings because we were
just working so closely on,really that real-time feedback
of what the guest experiencefeels like and then what our
goals are and how we align ourteam in order to accomplish
those.
Speaker 2 (11:38):
Well, what's
interesting to having this
conversation with you is thatthe Mayborn is a new five-star
hotel.
You've just achieved thatstatus, which is amazing.
Congratulations, thank you.
So tell us, given that you'vegot a background and
understanding about ForbesTravel Guide, having opened up
other hotels, what will it meannow for the Mayborn that you've
now become a five-star ForbesTravel Guide property?
Speaker 1 (11:57):
Yeah, I mean, I think
that this is such an incredible
accolade that is in recognitionof the hard work that we know
our team has been doing.
Speaker 2 (12:04):
We have just such an
incredible team of talented
individuals at this hotel and Ithink that this really helps to
(12:25):
solidify the journey that we'vebeen on to ensure that we
continue to innovate and wecontinue to drive our service
delivery and guest experience tobest in class, and you now get
to hang out with other five-starhotels and properties here in
Monaco.
Speaker 1 (12:31):
We're in very good
company.
Yes, definitely.
Speaker 2 (12:34):
Rub shoulders with
the other stars.

so, on that note, I'd love tohear some of your thoughts about
being here in Monaco.
And, of course, we're catchingup on the first day of this
event, and we had a spectacularopening session this morning,
with royalty included, and soyou and I were just talking to
Amanda Fraser from Forbes TravelGuide just before this, who
walked him down the aisle intothe event.
Speaker 1 (12:55):
Yes, which is?
Speaker 2 (12:55):
a pretty spectacular
opening.
But yeah, tell us what bringsyou here this year and some of
the things you're hoping to getout of being here at the Forbes
Travel Guide in Monaco.
Speaker 1 (13:04):
Yeah, I mean, first
and foremost, it's felt like
such a celebration for ourproperty.
We've worked really hard atreaching this milestone, so
being here feels a bit like aculmination of the last year.
And at the same time, inhospitality, you know, we are
first and foremost in the peoplebusiness, and so to have the
(13:25):
opportunity to come together andconnect with some people who
have been mentors to me in thisindustry and others who have
been new friends and that'sreally one of the special things
about this is we don't have alot of opportunities to come
together like this in luxuryhospitality, and the network and
the company that we are in hereis just so impressive and I
(13:46):
just feel so grateful to beincluded.
Speaker 2 (13:48):
Yeah, there's no
question, it's a who's who of
luxury hospitality globally.
That was sort of my takeawayfrom Vegas last year, but it's
that much clearer here in Monacobecause this is much more of a
global destination, and I wasspeaking to a number of new
colleagues that had traveledhere from Australia and various
(14:08):
parts of the world.
That I definitely didn't see inVegas last year, but you
mentioned something reallyinteresting there, which is the
fact you get to mentor and learnfrom other people in this space
, and so, now that you areactually in the privileged
position to be one of theshining stars, I would love for
you to be able to share someadvice to those people listening
to this, which, you know, thisis now the world's most popular
(14:31):
B2B travel podcast, and I'mthrilled to say that, because I
think there's still so muchopportunity for us to grow,
especially in the hospitalityspace, and so, for those
listeners that are trying towork their way up in their
careers, I would love for you tobe able to share some valuable
pieces of advice for them toeventually be at a Forbes travel
guide event like this and to beable to have to be sit down and
(14:53):
interviewed like this.
So what are some of therecommendations you'd have for
those people who are on theirjourney.
Speaker 1 (14:57):
Oh, my goodness.
Well, I mean it goes back to usbeing in the hospitality
business and I think the mostkey thing to be successful in
leadership roles in thisbusiness is you have to truly
love what you do.
And what you do is createexperiences that make people
(15:18):
feel really great, and thatshould be your guest experiences
.
That also needs to be yourcolleague experiences.
That's the team at the end ofthe day who gets us here, and I
think a genuine care and concernfor all of those stakeholders
is the most important thing.
And then it's really hard workand the reality of our business
(15:41):
is we are often at the hotel onChristmas Eve, on Christmas Day,
on weekends, on holidays.
It's a 365-day operation andfor each person, how you balance
that and your life is different.
But it's absolutely possibleand I think that really comes
(16:04):
down to you've just got toreally love this business and
love being there.
Speaker 2 (16:09):
Yeah, that's a really
good point and one of the
things when you mentionedShannon, the thing that stood
out to me and the fact that youguys know each other how to work
together is the line that hadsomeone had referenced with me
recently is yeah, your networkis your net worth I'm sure
you've heard that expressionbefore, and every once in a
while I think I was a littlelater to that expression and so
(16:29):
it really resonated with me whenI heard it recently because
when you come to an event likethis and you start to network,
you realize just how valuablethose relationships are as you
move from different properties,and there's a value to your
personal brand to have had thesedifferent experiences to then
either open up new hotels or tohelp new hotels existing hotels
(16:50):
grow again after they've beenrenovated, and so there's just
so many unique aspects to thisindustry.
So I appreciate you sharingyour advice.
The other thing I want to getto, sarah, of course, is the
trends that you're seeing.
So it's cool you're Canadianliving in the States, because I
think that right there, thatgives you a unique lens, because
us, as Canadians who love doingbusiness in America and
(17:11):
traveling to America I'm sayingthat very consciously, given
some of the dynamics that aregoing on globally at the moment
that we are our closest friendsand neighbors and there's so
much that brings us together,and I loved traveling to the US
and I loved living in the US,and so I've got many wonderful
friends there.
So I'm staying away from thepolitics at all and focused on
(17:32):
the day-to-day reality, and Iguess that's where, as a
Canadian, though, you have hadthe privilege of being outside
the U?
S, so you can see it from adifferent perspective.
But now that you're in it andyou've been in now for over a
decade you're also in one of theareas, that is, you know, that
shapes trends for fashion.
So, for all of those reasons,I'm so keen to get your take on
what you see as sort of the thebig trends that are shaping
(17:55):
luxury hospitality in 2025.
Speaker 1 (17:58):
Yes and yes to your
point.
I mean, growing up in Vancouver, I certainly didn't see myself
in Beverly Hills of all places.
But you know, the really keyone that I think is really
exciting and that I'm so excitedfor us to move into a little
bit more, is the whole longevitypiece.
So excited for us to move intoa little bit more is the whole
(18:19):
longevity piece.
You know, over maybe five, 10years ago it seemed like the
medical spa was the biggest newtrend in wellness and it's so
exciting to actually see thatmove in a direction of really
understanding how to extendlifespan.
That's something that Maybornhas just launched with our new
spa concept, seren in Belgravia,and we'll be looking to bring
(18:43):
that concept to Beverly Hills atsome point next year.
So, really speaking to thebiohacking component, some
activities that we've beenhearing a lot about called brain
training- Tell me more aboutthis, which is?
yeah, really teaching your bodyhow to handle stress responses.
(19:03):
So it's just a fascinatingindustry right now.
But with our customers agingand really looking to how do
they extend their quality oflife, this industry is just
booming and we're really excitedto bring that out to Beverly
(19:23):
Hills in 2026.
Speaker 2 (19:25):
Very cool.
So that's a big trend rightthere.
So the concept of lifespan andhealthspan and I had a chance to
speak to Chip Conley last yearand clearly he is one of the
modern elder academy in thisidea that people are living
longer and they're living betterand healthier, and so we need
to adapt to the fact that younow have retirees that want to
(19:45):
be more active.
We just did the safari seriesand that was actually one of the
main trends that they hadhighlighted is that people want
to get out of just being in theback of a vehicle for three or
four hours in the morning andthe evening and they want to do
hikes, and they want to get outof just being in the back of a
vehicle for three or four hoursin the morning and the evening
and they want to do hikes andthey want to be more active and
they've put in like, um, notjust plunge pools, but they
actually have lap pools and like, and so, um, there's all these
interesting shifts that aregoing on.
(20:06):
So obviously, wellness is a bigtrend, so that clearly makes
sense.
Being in beverly hills, you guysshould be at the forefront of
that.
What are some of the othertrends like when it comes to
what you're seeing with yourguests, the requests that you're
seeing because I'm assumingthat that will drive some of the
decision-making is that otherproperties and some of the
activities of the customerinterests will lead you to open
(20:28):
up new restaurants or to expandthe spa.
Yeah, what are some of theother things that stand out to
you?
Speaker 1 (20:35):
I mean absolutely
From the culinary standpoint.
More and more of these reallyunique whether that be
activations or dinners, aretrending really nicely.
Very limited residency withAlinea Restaurant Group out of
(20:58):
Chicago who are going to be withus for the month of August as
part of their 20th anniversarytour.
So that's an experience that somany in Southern California
have a challenging time, quitefrankly, accessing in Chicago.
So bringing that out to BeverlyHills and giving that
experience here will befantastic.
(21:19):
And we've done a lot.
Actually, our company has anincredible reputation with our
bars, so the Connett Bar was oneof the 50s best number one bar
and that bar culture we've beenreally looking to bring out to
Beverly Hills.
We have a fantastic bar withour Mayborn Bar off the lobby
and then Dante Beverly Hills onthe rooftop another 50 best
(21:42):
winner, nice.
So we'll have some more reallyunique bar programming coming
for late this year, early nextyear as well.
And you know another reallyinteresting one that we did in
2024, we called our KindredSpirits Programming, where we
(22:02):
look to bring differentbartenders from different areas
of LA I mean anyone who spentsome time in LA from downtown LA
, from East LA, and had themcome and do one night
residencies at our bar inBeverly Hills to bring that
incredible experience cocktailprogramming from downtown up to
(22:27):
Beverly Hills, knowing that mostaren't going to travel the 45
minutes.
Speaker 2 (22:32):
I made the mistake of
telling people I live in LA and
I quickly got corrected fromanyone I lived in Orange County.
I didn't live in LA.
Yes, very different Verydifferent and I used to travel
back and forth between Cyprusand Encino and Encino obviously
is in the valley and it's awhole other area.
That, and the people that I usedto interview candidates and
they wanted to work in theirneighborhood because obviously
traffic was always a big factorbut literally came up in the
(22:54):
first five questions why you'reinterested in this opportunity,
it's like, well, actually it'sclose to where I live and so,
yeah, it is a unique phenomenonabout Los Angeles that it is
very neighborhood driven, butthere's so many amazing
neighborhoods in LA and so whenpeople are looking up the
Mayborn, I would love for you tobe able to share where they can
get more information or how,because many of our listeners,
of course, are B2B, so we mayhave, certainly, listeners that
(23:18):
are now going to book your hotelor look to experience the
Mayborn in Beverly Hills, but wealso have a lot of travel
partners that would likely bekeen to get in touch with you to
be able to sell Mayborn totheir guests and their clients.
So I would love, sarah, if youwere to be able to share how
they can connect with theproperty.
But then, also connect withyourself, too, for other
partnership opportunities.

reminded this morning by Peter
Greenberg, who I have a greatrespect for.
Peter, he was on the show lastyear and I got a chance to catch
with him last night.
He was certainly a legendaryfigure in this industry and he
presented this morning andhighlighted a few details about
Monaco that I hadn't registered.
(24:32):
That it's actually smaller thancentral park.
You know it's actually onesquare mile and so I realized
when I walked around yesterday Iguess I saw all of it.
Speaker 1 (24:36):
I think it's like it
was beautiful.
Speaker 2 (24:37):
I kept turning
corners and thinking like it's
bigger than I expected, butactually it's incredibly safe
and it also is very luxuriousthe cars, the yachts, it is just
like.
So tell everyone, if youwouldn't mind, sarah, what your
plans are while you're here forthe first time and what you're
going to do after the ForbesTravel Guide before you head
back to Beverly Hills.
Speaker 1 (24:58):
Yes, I mean, this is
such an incredible place, and I
think, especially coming from LA, one of the things that's been
so wonderful is just that youcan walk everywhere here, and I
think I covered the entire allof Monaco in heels yesterday, so
you can't say that about manydifferent places, but you know,
the dining has been exceptional.
(25:19):
The hotels have been absolutelybeautiful.
I'm staying over at Hotel deParis, which has just been
absolutely fantastic.
The team has been soaccommodating.
So hopefully a little bit morewalking around the city, a few
more of the fabulous restaurants.
It's really been quite anexceptional place.
Speaker 2 (25:37):
Oh, that's terrific.
