Liebe Leute, sorry für die Verzögerung. Janny war krank und alles war etwas schwierig. Dafür gibt es einen wilden Ritt durch die Geschichte des Herzhaften. Wir fermentieren uns eine schöne Flasche Garum zusammen und stellen nach und nach Vegimite, Maggi, Worcestershiresauce und Dashi ins Regal, bis es dem japanischen Chemiker gelingt, Rezeptoren für den würzigen, herzhaften Geschmack dieser Lebensmittel zu identifizieren, diese schmecken das sogenannte "Umami".
Zu guter letzt räumen wir noch mit dem Mythos vom Chinese Restaurant Syndrome und der große Anthony Bourdain kommt auch noch mal zu Wort.
