Hello, Happy Monday, and holyhell, this is always a very tough
Monday to go back to work aftera long holiday weekend, usually always after
Thanksgiving because Thanksgiving was always on Thursdayand you always gets the long weekend.
So back to the grind. Ofcourse, no problem for me. I
did end up doing pretty much well. I'll tell you a couple of things

to you guys. And as aas a chef who worked in a restaurant
for twelve years and cooks every singleday, I shouldn't be telling you this,
but I'm going to. I won'tsay it on YouTube. I made
a smoke turkey, smoked it overapple wood, injected it with a homemade

Creole garlic butter sauce, and Iglazed it with a homemade honey bourbon sauce.
Yeah, honey bourbon I made withsome jim Bean bourbon and some other
stuff. And it wasn't edible.Now now check it out. That was
so. Thanksgiving was Thursday, andwe had one friend over Thursday who usually

you know, we'll have somebody everdidn't have a family or a place to
go whatever. You know, youdon't stay home for Thanksgiving if I could
help it. So that was Thursday. Then Friday, all of the kids
and grandkids were coming over. SoI said, honey, I'll make this
the smoke turkey, the smaller oneThursday, and then you make yours Friday.
Thursday's turkey was an abomination. Imean it looked great, it smelled

great. The backyard was just smokedout. Thought the fire department was coming
and we were cutting into it.It just man, it was dry.
God. I even had wood soakingfor days and I was just stoking in
there to just get maximum smoke.And man, it was dry. So

that sucked. But we redeemed ourselveswith Michelle's turkey, which I originally had
started doing that. I you know, because back in the day she would
make a turkey just like everybody else. I was like, no, you
gotta be different, so our turkeythis time she did. She made an
herb fresh herb wrote fresh herb butterwith thyme, rosemary and sage chopped up,

putting the herb in the butter,and then she tucks everywhere in the
skin, I mean all the nooksand crannies. And she stuffed it with
oranges and lemons, a couple ofonions and clove of garlic smashed up and
thrown in there, and some freshtime as well inside, and then we
put bacon over the top of it. Well, then she she coated the
outside with this herb butter as well. Then we put bacon streaks over the

whole top of it, and thebacon renders down, the fat drips down
with the turkey, and man,the best turkey gravy you've ever made is
in a pan. Uh And thatcame out amazing. So that was the
redeemer there. And of course thekids and grandkids never showed up. Everybody's
fighting or everybody hates. I meanone son of his girl and his kids

showed up. And then I hada friend from work who his family's out
in north so I said, comeon over. Everybody else just kind of
shipped the bed man and so butyeah, I made so many signs.
I made an ultimate smoked Yeah.Of course everybody wants to call on trying

to do a podcast mobile hair uh, So the ultimate smoked Guda Mac and
cheese that I ground with a wheelof Guda shaved braded parmesan, cheddar,
Colby jack huh, some other whatevercheese I threw in there, and then
topped it with bacon, cheddar cheeseand crackers over kabatappi pasta. You know,

made the sauce with the roue andthe cream and all that heavy cream,
and cooked it down with the cheese. Oh it's amazing. It was
freaking amazing. And the green Beecast are all anything made from scratch.
You know, we don't use cansof prema mushroom soup. Put the mushrooms
in therese altatum, it's a butterwith some milk and some stock in there,
and cooked it down that We usedgarlic, peppercorn, French fried onions

on top. Oh amazing. Imean so much more, my my fuji
apple sage and bacon panchetta stuffing.Oh so to die for. But all
this stuff we've been eating, we'reeating it one more night tonight because there's
just so much. And after thatwe are back to our regularly scheduled program.

So hope everybody had a great Thanksgiving. I spent yesterday working on my
satellite tracker. If you haven't seenthe videos, it was about four years
ago. I made an autonomous satellitetracker with some servos and ESP eighty two
sixty six USA boards and I gotthe plans the plans online from u Elwood

Downey from Clear Sky Institute, whoall this stuff in there. Then it
was a you know, it givesyou this, it says go and then
you have to modify things and putit together your own way or whatever.
So I took that out and triedto work at a ninety two satellite and
you know, I forgot It.Took me all of Saturday to remember.

I had to watch my own videospart one, part two, part three
in the final part to figure outwhat I even did with this, and
couldn't remember the IP address, Icouldn't remember how to log into it just
and that. Tried flashing it witha new sketch for the or do we
know ide and couldn't figure out whatthe errors were, which I fought with
years ago, with library numbers andstuff. It was a mess. Spent

the entire Saturday. Got it working, then the elevation was not calibrated or
something missed the pass. But backinto the satellite tracker's been sitting for years
and a lot of I guess theservos that I use they don't make anymore.
And people are always still commenting onthis video, like, hey,

tips and tracks? Where I getthe servos that are not there anymore?
They're not made anymore. Well,it takes a I guess I'd have to
go through the whole thing and seewhat parts are sourced wear some of them

is the creator that made the hamclock. But I sold my hamclock.

the other one I have to sendback. I think so that the one
is just going to be for youknow, simplex and stuff like that.

and you give it to somebody andsay that you got it for them whatever.
But that way I could you know, there's ten people potentially I can
get interested in the hand radio justby mainly off ten books. And then

so fast that I got ten generalbooks. I'm gonna do the same thing.

into HF. I mean, I'mon HF mobile every day. But you

know, I jumped think the thing. I haven't touched the satellite tracker for
four years. Forgot how I evenput it together, made one contact,
two contacts on it. Four yearsago. It packed it away, So
here I am back to it.That's that's what keeps the hobby fun.

when they're wrapped under the tree.So that satellite tracker. I spent a

good seven months playing with that andstudying it and making it and tweaking it,
doing my own thing. Was soexcited. Gung Ho made a couple
