Ma gli italiani sono anche un popolo di combattenti, pronti a difendere le proprie radici. Soprattutto quando affondano in un piatto tipico locale.
Le ricette cambiano da luogo a luogo: bastano pochi chilometri, un breve passaggio tra i paesi anche della stessa regione per vedere lo stesso piatto cucinato in modo diverso. Ma soprattutto, per sentirsi dire che è lì, e solo lì, la culla in cui quel piatto è nato.
E allora nascono le contese: da dove arriva, davvero, la parmigiana di melanzane? E chi ha inventato il ragù? Le orecchiette sono pugliesi o anche lucane? E via così, in un gioco di domande che alimentano un’autentica guerra gastronomica tra i luoghi e le tavole del bel paese, teatro di contese all’ultimo mestolo.
