a lot of people talk about a lot of stuff
could be you know, additives, chemicals and blah blah blah
blah blah. What we do know is a lot of
what we eat is processed food. It's already been through
the ringer before it even gets to your stove. Shelley

Good morning, Thanks for having me. This is such a
topic that's very very near and dear to my heart
and something I've been teaching for the last nine years.
Speaker 1 (00:42):
If you could you know from the chef perspective that
term processed food. We hear it all the time. Give
us the layman's exactly what is processed food?
Speaker 3 (00:52):
I'm so glad you asked that question, So let me
just break it down in very elementary terms. You have
three types of food. You have real whole food, you
have minimally processed, and you have ultra processed. Real whole
food is exactly what it is. Eat all your natural
foods from beef to vegetables. Then you have the minimally processed.
So let's say you have fresh raspberries and they freeze them.

When they put them in the freezer at the grocery stores,
they're there's nothing changed about the raspberry. It's simply frozen.
Then there's ultra processed where they take raspberries and make
raspberry jam. They take the raspberries, they break it down,
they add a bunch of chemicals, they put it preservatives,
they put it in a jar, and they put it
on the shelf with an expiration date. Those are ultra
processed foods. So anything from a condiment to a frozen

dinner to a tub of sour cream, all of that
is ultra processed food. Does that explain it?

Yeah?

I mean it's sad that it's actually pretty good in
this study that you're talking about this morning. I mean,
this is this is legit. This isn't a discount store study.
This comes from what is the American Journal of How's
that American Journal of?

Yes, So I mean this is an actual respected publication
the processed food consumption leading into the higher death rates.
Speaker 2 (02:16):
This is a pretty substantial margin we're talking about. It is.
Speaker 3 (02:20):
You know, what started me on my journey was eleven
years ago my husband had a heart attack at twenty one,
and it made us put a big magnifying glass on
all areas of our life. But by default, I was
the one that was a cook in the family. So
I took a big hard look at what we were
eating and went to nutrition schools and just figured out that,
you know, ultra processed foods are made for convenience, but

the factories also and the big companies also want us
to get addicted to them because they so they make
them taste really really good by adding chemicals, preservative sugars
in there that make us get addicted. So we all
have our favorite condiment, right. A lot of people, for example,
say your favorite condiment is hidden Valley ranch dressing in
the South, and that's just very popular in most refrigerators.
Speaker 2 (03:04):
That's Columbus because that ranch is.
Speaker 3 (03:06):
On everything, well, it is not food if you look
at the ingredients on that jar. I hate to say it,
and I hate being the bearer of bad news. But
there's no food in that product. It's all chemicals, refined oils,
and it's not good for us. When it goes in
our body and we eat it on a regular basis,
our body on the inside gets inflamed because it's not
recognizing the chemicals that we're putting in our body. So
(03:29):
then our body gets inflamed, causes chronic inflammation, makes our
organ shut down, makes us get sick, makes our immune
system weak, and so it's just this snowball effects. Because
we're not just eating ranch stressing. And I'm using rest
ranch dressing as a metaphor. We're not just eating ranch dressing,
you know, once a month. We're putting it on our
food once or twice a week. And this adds up

like diet soda, frozen dinners, you know. It just it
adds up over time, and our bodies just get mad
and they get weak and they break down, and that's
what causes us to get sick.
Speaker 1 (03:59):
As you're talking about the rad stressing, I'm telling you
so many people I know are listening to the radio
right now.
Speaker 2 (04:04):
Like Shay jack pot d stratching is a gift. So
you know.
Speaker 1 (04:08):
But again, you know, Campy and I have both lost
a lot of weight, and I've had a what they
call a diet counselor, and they told a lot of
the sugar free stuff that I thought was good for
me was actually putting weight on or keeping me from
losing weight because of what they use to sweeten it instead.
And that too, is what you would consider a processed food,

isn't it.
Speaker 3 (04:31):
Yes, artificial sweeteners is what you're referring to. And artificial
sweeteners your body doesn't know it's fake sugar, so your
body reacts in the same way it receives it as sugar,
so your body reacts in the same way. That's why
it doesn't help with losing weight. Another thing that's bad
about art Number one, they're at carcinogen. But number two,
what's bad about artificial sweeteners is there's zero calorie, which

sounds good for marketing, But what happens is when you
consume something with an artificial sweetener diet soda, sugar free gum,
no sugar cookies, when you consume these, your body's like, okay, great,
that's sugar. What do I get from sugar? I get energy?
What happens with the energy I burn calories. Well, when
you're not getting the calories, your body's chasing the calorie.
(05:14):
That's why diet sodas are so addicting, because your body's like,
where the heck is the calorie, but it's not getting it,
and so an artificial sweeteners have now been deemed a carcinogen,
which means they cause cancer.
