Can I get a Vegas bum?Sorry, I don't have any energy drinks.
QUI, I'll take a Fuka redbull. I still don't have any
energy drinks? Why not? Becausehere we're big fans of science and want
you to get tired and go home. What can I get you drunk?

(00:37):
Barbarians? Welcome to episode fifty sevenof the Signal award winning podcast Behind Bars,
Cocktails and Wasted Nights. I'm yourhost, Greg. I've been working
as a bartender for over twenty years, and over those years, I've seen
a lot. My goal here isto share some of those high and low
lights with you. Quick warning, this podcast contains sex, drugs, and
some language. It isn't suitable foranyone under twenty one years of age,

(00:58):
So you got to have some ideafor this one. I interviewed Ryan,
the owner of the Bluegrass Lounge inOld Town, Arvada, c O.
He's a self proclaimed asshole, butI disagree. He's actually a good human
who admitted lead teeters on the edgeof booze obnoxious. He popped in with
Patrick, the beverage director the nightof his interview, and after we all
pre game together, I decided topick his brain on record as well,

(01:21):
and as one who's on the lowertier on the totem pole, it's always
interesting to hear about the view fromthe top. Turns out it ain't so
different. So before we get started, you'll need a drink for this one.
I recommend the last word because Ryanseems to have it often. First
chilla martini or coop with ice water, Then into a shaker tin. Add
equal parts all point seven five ofthe following fresh squeeze, lime juice,

(01:45):
gin, green chartreuse and mariskino liqueur. Shake and strain into your chilled coop,
garnished with a single mariscino cherry, and enjoy beati dubs. When garnishing
with olives, onions or cherries, the rule is either one or three,
never two because that's bad luck. And as always, if you don't have
any of that ship lyne around,go to Plan B, which is probably

(02:07):
Plan A at this point. Adouble swaller of the silver te quill you
and a Game of Thrones dragon tailof the pow pow into the breather ah.
Now don't you feel disturbingly better?Good? And now, without further
ado, here's Ryan. Are anybodywelcome to behind Bars, Cocktails and Wasted
Nights. I'm your host, Greigand I am here with Ryan. Ryan.

(02:28):
Welcome. How are you tonight?Pretty good, dude, Thanks for
coming in tonight. Have you enjoyedthe pre game so far? I have
enjoyed the pregame and that's been it'sbeen nice. Nice dude. So you
are a friend of Patrick's. Ijust met you tonight. You're seemed like
a pretty cool guy, and you'rein the industry as well, so I
figured, hey, let's fucking let'srap about it. What's your what's your

(02:49):
thing? Like? What do youdo in the service industry? Yeah?
So I'm a part owner of acouple of bars. I've been working on
the services since I was sixteen.I own the Bluegrass Lounges. There's one
an old town or Vada. There'sone way like northwest our Vada. Uh.
No one really knows for that areais so I put the Google Maps
link in the show notes. Yeah, yeah, it's it's it's a very

(03:09):
wealthy area, but it's kind ofin the middle of nowhere. Canadian listeners,
just in case you guys come downyou want to meet Ryan, you
know where to go? Yeah, look up Ken Dellas. Do you like
uh oh wait, what's an inventken Dellas is? That's where the other
one is? Oh okay, okay, So do you like owning or working
in went better? Like there's alot of stress in both, but like,
what what side do you like themost? Honestly kind of depends.

(03:30):
So like, obviously owning your yourschedule is you know, a little more
flexible depending on the day, right, I mean, if you've got a
bunch of people out and you're shorton staff, I mean, your life's
kind of fucked, honestly, butyou gotta take over. You know they're
gonna fuck exactly. But when you'refully staffed, I mean you can you
can basically fuck around as much asyou want, honestly. I mean it's

(03:52):
you got to do your job.But in general, once you're doing it,
you can leave, you can comeand go. It's it's nice nice
And you don't have to answer thisif you don't want to, but I'm
gonna ask you point blank. Yeah, more tail bartending or more tail owning?
Fuck, I'd probably say owning honestly, really, all right, if
I'm being honest, that face Idid not grow that face. You know,

(04:14):
for for a while, I tryto stay away from it. But
it's it's he's servicing that she's tough. It's just you're just around so many
people all the time, and it'si mean, how many people meet the
people they're sucking around with the work, right, So that's the place.
This is the place that I workat. It's yeah, it's it's not
the easiest thing to stop. That'sone of the things I've always been afraid
of about, like working on anoffice job. I'm like, this is

(04:35):
gonna be like, you know, twenty people that I can't even like come
on to you, Like, whoam I gonna bang? Unless you just
got a really hot office. Yeah, you never know. I mean it's
like an office like in those movieson the internet. So I should say
documentaries what happened to the American Family? Jesus? You know, I always
think about, like, you know, when I went to school, we

(04:57):
studied Oedipus Rex. You know,it's like he was cursed, he was
separated from his parents at birth,he fulfilled the prophecy of killing his father
and marrying his mother, and hestabbed out of his eyes. Now it's
just going porn hub and it's likea guy banging his step mom and no
one's stabbing out their eyes because youwant to see what happens. Yeah,
well, and it seems kind offun honestly, who knows. Yeah,
yeah, as long as you're dad, like you know, trades up.
It gets a hot step all right. Anyway, we're good enough track.

(05:19):
We're getting way off track. Soas an owner you have to take care
of a lot of ship when shitgoes south, Like do you leave it
up to your bartenders or do youstep in and handle it when it goes
like to a certain level. Doyou do you trust them? Do you
give them the authority? I will? It kind of depends on who's there,
what what what, what's kind ofhappening. Definitely am I one an

(05:40):
old town. I mean we theythey're basically bartender managers. Everyone who works
for me front of house is abartender. We don't have servers. Everyone
knows how to make everything boris,to run food, make drinks, all
that kind of shit. But yeah, for the most part, I mean
they they'll kick people out, they'llthey'll you know, talk to customers things
like that. So I mean it'sthrough the most part, I let them
do their thing, but I willsay the one that's in the richer area,

(06:04):
that one I kind of have tostep in a little bit more people
are a little more. Yeah, you gotta kind of you know, you
know, you gotta kill them withkindness and you know, make sure they're
like feel like they're being treated theway they're supposed to because oh my god,
you're the owner. Oh wow,Well you know what, we love
this place, but you know,we're just worried about this. I'm like,
oh my god, don't worry aboutit, you know what I mean.

(06:25):
So it kind of depends on whereI'm sucking out. If I'm not
gonna lie, if it's someone iknow really well, which when we're in
All Town, I know everybody. We've been there for eight years. It
is a super regular bar. Imight just walk up and be like,
you know what, I honestly gofuck yourself, yea. And they will
know that I'm obviously going to helpthem out, but they know I'm just
a piece of shit asshole, Sothey know that that's how I talk,

(06:45):
and I know that I'm gonna goback and buy them some bringks or do
something else and fix the problem.Well, I don't think that makes you
an asshole. I think that's that'swhat happens. When people come in often
and you get to really know them, you get familiar, you get comfortable.
You will tell them to fuck offand mean it. But it's okay,
sure, And I'm not saying itmakes me an asshole. I'm just
I am an asshole. So andthey know that very well, so they
know that that's how I'm going toreact. So yeah, oh yeah,
that in general doesn't make me one. Everything else I do is what makes

(07:10):
me that. Everything else, whatwhat do you think everything else you do
make an asshole? What kind ofthing you know? Just the way I
talk to people and just you know, just the things that I do when
I'm out of bars and stuff likethat. I mean, I'm not gonna
say like, I'm not like thatbig, like piece of shit douchebag that
does stuff, but I am.I am definitely the person who you know
is bringing up shit that you don'twant to be brought up. I'm the

(07:30):
one who's just making fun of fuckingeverybody. I'm the one who's walking on
the bar, who's loud as shitand just getting drunk. But not like
the most obnoxious is gonna get kickedthat way just close enough awareness, Yeah,
yeah, because you know they're allof their jobs just like me.
I'm not gonna you know, I'mtipping well, I'm doing that type of
stuff, but I am in theredoing and saying ridiculous things. That's for
sure, worst worst guests you've everhad in your bar that you had to

(07:54):
deal with treat your employees like shitor just actively and they like, you
know, how did you like whathappened? How did you deal with it?
Oh? Man? So I probablyI'll do one that that was recent,
just because one of my bartenters broughtit up the other day and he
was just kind of, you knowwhat, I got two if that's okay,
because I got one that's kind ofquick and they're they're each of the

(08:16):
one and another bar. So Ihad won. This was like a couple
of years ago, I think, either right before COVID or around COVID.
I had a guest who we haveclipboards for our checks, and he when
he was normally either leave the checkon the table or you hand it to
your server, he threw it athim. Oh no, and like little
like Tassam was like here take it, which and I was outside drinking.

(08:41):
I wasn't even inside anymore. Thisis like nine thirty at night. We
closed at ten on that day.He walks, I walk in, He
tells me that, and I go, no fucking way, there's no way
that person fucking did that. Andhe already said he's like the chick at
the end of the bar brought himin. She's a fucking bitch too,
And so I walked over to him, because you're responsible who you bring in,
correct, you know, And soI I walked over to him and
I go, did you happen tojust throw the check at my bartender?

(09:05):
And he's like, what do youmean. I go, it's a simple
fucking question. Did you throw thischeck in my bart And he's like,
well, I kind of toss itto him. I go, could you
imagine if I threw this at youright now, how fucking mad you would
be? And I was like,I hon'est say, I'm gonna pay for
your check. Both of you getthe fuck out of here. It was
pouring rain, which I loved, and they wanted to sit there. Way,
I go, either get out,I'm calling the police and taking I
wait for your uber and honestly,it's gonna be a soul. So I'm

(09:28):
and I'm cool with that. I'mtelling me through it really really hard,
and the cameras aren't working, seeyour fucked. Next one was this guy
was That one was great and nowthat chicks never come back, So thank
god. I love having like likethe owner or the boss who like sticks
up for you where it's like, hey, you know, we gotta be
nicer. No, fuck that,we don't need your money, fuck you

(09:48):
exactly. And then the other onewas, and this was very recent.
We uh, we had just changedsome some prices online. We don't print
out our menus that quickly. They'reexpensive nowadays. I don't know if anyone
knows how expensive ink is, butit's fucking wild. I have two printers
there because like I ran out ofink and I just bought a new printer.
Yeah, because it comes to things. Yeah yeah, no, it's

(10:09):
actually cheaper. And I almost dowith that, yeah exactly. And so
this guy was pissed. He hadtwo RUMs and in Manhattan, and they
were all a dollar off on themenu that he looked at, which is
paper because he's old. And thenthe online one was more and he was
fucking pissed for the dollars. Forthe dollar. He had two rooms that
were supposedly seven dollars a piece, but they were six on there and then

(10:31):
Manhattan, I was like twelve orthirteen, and so he's flipping out,
I mean, just going nuts, and so I'm trying to be nice to
him. I'm like, dude,I just walked over you. Don't be
a fucking dick, like I'm gonnahelp you out. And then he said
something to me and I can neverremember what it is. And I looked
at him and I was like, honestly, fuck you. And I looked
at it and I go, it'sthree fucking dollars, dude, And he's
like, excuse me. I go, it's three dollars. I'm gonna go

(10:52):
over there. I'm just gonna buytwo of your drinks and just come back
and give you one. And man, was he offended. And he wrote
us the review, which we actuallygot taken down, which I love.
But this is a guy who reviewedthe Boulder Theater and gave it a one
star. Oh god, I don'tknow what a vendu you could do to
you, but it got a onestar. Yeah, it was at the
theater or the act that night.I don't know, you know what,

(11:13):
how could you fucking look at thepaper menu, not go on the online
menu, but somehow get online andwrite a review? The fuck absolutely right.
It's fucking three dollars. I'm like, I take it off. I'm
like, you know, to bea dick. It's not like he said
we were trying to steal from him, Like, oh my god, I
would get it was like a sixdollars difference. That quite a bit.
One dollar a drink. Maybe itwas like the three drinks. Alcohol is

(11:35):
not for everybody. I mean hewas drinking silver rum, so yeah,
probably not. Yeah, that isgross. What do you like meats?
Silver rum? Oh god yes nota rum punch's not like trust me.
When I went over there, I'mlike, I'm like, man, I
hate this guy without even starting, what are you doing? It was weird.
He's never going to come back, never, And I'm glad I treated

(11:56):
him that way because go fuck yourself. Yeah, like I wish more,
Like again, you don't need theirmoney. There are other people, and
like, truthfully, they're making everybodyelse's life lives miserable. Oh they are
the people around them were kind oflike I can't even have a good time,
and now I'm uncomfortable because this guyis like making a stink. Yeah,
and I'm a big you know.I mean, you can't talk to
my bar twiners that way, butyou definitely can't fucking talk to me that

(12:16):
way. I'm not your slave.I'm barely even working right now. Like,
sorry, too bad. I didone once where I was like pouring
some beers and these guys came upand they asked for the manager who was
behind the heart bar helping out poursome beers, and like, we have
this this issue where like the linesfrom the kegs are like it's like a
one hundred feet long. They goupstairs, so a lot of times they
phone for sure, yeah, becauseshe's pouring a beer and it's like all
phone. Yeah. He was like, oh, first night, poorn a

(12:37):
beer to the management. She turnsaround before she didn't even talk. I'm
like, hold on, have anice night, guys. What get the
fuck out, you know, talkto my fucking co workers like that.
He's like, what do you Iwas just going to get a beer.
I'm like I wave security over.I'm like, hey, turn around,
your rides here yeah, and likethis giant dude from like Czechoslovaki who sounds
like Arnold Switzer when he talks, all the guys come with me. It

(13:00):
was great. It was so satisfyingbecause I never get to do that,
because I always worked in places whereit's like, you know, four stars
and five stars in Aspen, andlike, you know, depending on the
place, it's it's not even apossibility really unless unless they're really being shitty.
But yeah, but you get theygotta be fucked up, that gotta
be fucked up. Yeah, itwas a three minutes the rumney. That'll
get to you fast, do you. Uh? So when you when you're

(13:20):
getting the tail as the owner, are you actually are you making the effort
to go to your place or herplace? You're just doing it right there
at work. I'm trying not todo it at work, that's for sure.
One of ours has all sorts ofoffices and upstairs and all sorts of
thing. The other one has likenowhere to go. No, it's it's
I would say, it's basically it'ssomeone else's place here. All right,

(13:41):
that's good for further most part.Yeah, all right, that's good.
Yeah, yeah, yeah, what'suh what's the weirdest thing you've ever seen?
We're because you were in there sincesixteen. Hold on, before we
get to the weirdest thing, howdid you get in at sixteen? Uh?
So, I'm originally from Chicago likePat, we grew up together.
But so I was a delivery driverat sixteen, so I've just been in

(14:03):
the restaurant industry for that long andthen I kind of moved around a little
bit because I got in a littlebit of trouble. So I started straight
bartending at twenty one, mainly lyingthat I had bartended before, and I,
you got it's kind of hard toget bartending positions, and I ended
up just being good at it,which was cool. But yeah, ever
since then, it's been either bartendingor managing or owning. So wow,

(14:26):
yeah, I mean do you likeit? I do? Yeah, I
mean I almost try to get outof it a little bit and do like
different types of sales and stuff. And I was like, calls you back.
I was like, well, Ijust make a ton of money doing
it. Yeah, It's just it'sone of those things. I get paid
well, and you know, youcan take time off and you're with fun
people and you know, the otherpeople that I own the bars with are

(14:48):
super cool. So I mean,it's it's it's just one of those things.
It's it's I get when people wantto get out of it because it's
not working for them. It doeswork for me, So okay, you
know what, I'm with you andI always like the opposite schedule thing,
except when it comes to dating, because you only date people in the service
industry. You can't date nine tofivers who are like most I have Saturday
and Sundays off. Now, okay, so I can do get you get

(15:09):
the weekday people. But now Idon't know what to do on a Saturday.
Oh yeah, because of my wholelife, I've worked Saturdays. I
had a New Year's Eve off oncein like twenty three years, and I
was like, what am I gonnado? I stayed home. I didn't
know what to do. It's it'sit's it's you just you're not used to
it. Yeah, it's just it'sweird. But I always love like back
before, like online banking, LikeI could just go to the bank in
the middle of the day. Yougo see a movie in the middle of
the day, nobody was there,no traffic, Yes, just out there

(15:33):
and you do work with fun people, and like we're talking about like you
see a lot of weird shit. And I did do the podcast. I
was talking about it with Patrick, like, people gotta know what we deal
with like when we're on the clock, when they're getting paid in their corporate
jobs, you know, everything's sterilized. The behavior is like you know,
heavily monitored. But yeah, wefucking deal with shit like I can never

(15:54):
go to an office because five minuteswould be like, hey, sweetie,
can you get me a copy ofthis? You know, I mean I
patter on the ass or something likethat I'm gonna do in the bar.
I'll be like, I'll got themfired, aren't I. We're gonna watch
the sexual harassment video. Great, are the tricks gonna be hot? Let
me tell you about harassment. Harassmentso much to me, I couldn't wait
to grab it again. Never tellthat joke again. So, yeah,

(16:15):
weirdness. Give me some weirdness thatyou wouldn't see in a corporate job.
If people need to know about, well, I'll give you. I'll give
you one that just happened. Sowe have so obviously we got all sorts
of different employees all sorts of differentbackgrounds and different people and should they deal
with stuff like that. But wewe just had so, we just had

(16:36):
a lot of cooks leave recently, which is always obviously a fucking bomber because
it's tough to get him. ButI just had one who and he's been
planning on leaving, and you know, he's been planning on leaving to another
place. Anyways, he keeps tellingus that, but you know, he's
worked for us forever, so I'mlike, fucking we'll keep you until that
point. But for some reason onFriday, he wanted to leave incredibly early.
And I'm pretty sure everyone who's listeningto this now, the Fridays we're

(17:00):
fucking busy, and he was kindof having a little bit of a mental
breakdown. Didn't call me, didn'tcall me, other managers, you know,
try to talk to the kitchen managerto leave. And for some reason,
part of his mental breakdown was worryingabout the Crusades. What so,
yeah, so crusade so from acouple thousand years again like a horse,

(17:22):
yeah yeah, yeah, so uhso he was worried about something from a
couple of thousand years ago. Hewas very upset about it, and so
I didn't really know what to do. He's sober, which is which is
the and so so I don't knowwhat it is. And so he all
of a sudden left said something like, you know, try and fire me

(17:44):
or something like that, and Ibasically text him was like, dude,
you just fucking quit, Like Idon't know what you're talking about. And
you know, obviously then oh,we can think about the rest of the
day. Is the Crusades, right, I mean, the only thing that's
on our minds is the Crusades, which is hilarious because it's so long ago.
I mean, there's so many worsethings have happened after that. Oh
yeah. And one of my favoritethings I said I heard after I said
that was one of my chefs fromthe other restaurant and goes, I really

(18:07):
hope he doesn't know there was multipleCrusades. Yeah, I know, because
he's gonna flip a bit because hemight just be thinking about the one There
was like twelve of those motherfuckers, just Sena, Monty Python and the Holy
Girl, you know what I mean. But I just could it's and I
called one of our owners. He'sin Hawaii right now, and I go
just so you know, you know, this guy laughed and he's like why,
I'm like, it's because of theCrusades. And right away he's like

(18:30):
what am I like? No,Like like he's like, like which ones?
And I was like the ones thatwere like forever and go like like
really really long ago, you knowwhat I mean, Like we're like no
one would even think about it anymore. Right, Yeah, So that was
a that was a thing that justhappened to me this last week. That
is hysterical, man, Like, yeah, you always get like the fun
people can also be weird. TheCollins the excuses, those are those are

(18:52):
the best. Yeah, Well whatwe said were like, give me a
good excuse and you can go.Yeah, you know what I mean.
Food poisoning is a great one. Can't I can't even improve it. You
know, sixty the night before theCrusades are is not the best excuse I've
heard. That's for sure, completelyfired. You couldn't think of a good
life now. No one can usethat one anymore either. No, Yeah,
it's out there to all the listenersin the other states. Gain nobody
knows. Yeah. When I workedin LA I would do the schedule and

(19:17):
you know obviously you have like serverslike that are actresses. Yeah, so
I can't come in Tuesday, Ihave an audition at eight pm. So
you're going to it's a casting cashthing. I'll probably see you on the
interwebs when I'm at this rexing anduh yeah, So you always get kinds
of crazy kinds of excuses. Ihad somebody who had a hurt foot.

(19:38):
The foot hurt. Okay, nothinghappened, there was no injury, just
the foot hurt. The foot hurt. Yeah. Yeah, it's like,
uh really like man, like whatelse you know, you know, Pat's
actually called them with that one before. Oh yeah, the hurt foot.
Oh absolutely, it's great. Definitelymy planter facatious wherever you say that.
So what's the what's the long termgoal? You want to open up more

(20:00):
places or you want to keep itwhere you are? Yeah, we want
to open up more stuff. Wewant to do, you know, maybe
some other different types of rest ofbut for the most part, we want
to try and either franchise or justdo more of them just and honestly we'd
like to go into different states orsomewhere else. Yeah, I mean different
different states, kind of more conservativeon the States would be nice. Honestly,

(20:21):
it's a little bit easier to runrestaurants somewhere that's you know, Denver's
expensive, Colorado is expensive. Goto some places that got easier land to
buy, you know, I don'tknow, you can probably have like three
people, that's true. I mean, yeah, I mean it might,
it might do well. But yeah, we we we definitely want to expand
with it, do some stuff likethat. And then obviously, uh,

(20:44):
some of the other owners they they'reinto like a million different businesses, so
we kind of do like a lotof different stuff. Okay, So but
if you get everybody like focus inon this, you can like probably pull
it off. Yeah exactly, Yeah, a million businesses too, or you
just focus I'm basically just focused onthis. I do. I do kind
of get into some like like rentalhousing and like things like that. I'm
getting into that a little bit more. But yeah, as far as for

(21:07):
right now, I'm just into this, And I'm honestly okay with that because
it's it pays me enough. Ido well enough, and I honestly I
like I like taking time off.So getting into too much stuff all of
a sudden, you are just fuckingstuck. Right now, I'm over,
I get it. Yeah, andit's I like being underemployed. I hate
working. I'm not gonna lie.I fucking hate it. It does suck.

(21:30):
So before we wrap it up,I want to ask you something.
I have this theory that everybody inthe service industry it's also like a creative
type, okay, and they havelike a secret talent Okay, So I'm
guessing you do, and I wantto know what it is, man secret
talent or like a hobby, Likedo you play? Are you a musician?
Are you? You're right? Like, like, what's your thing that

(21:52):
you do outside of the service Becauseeverybody's like, you go to New York?
What do you? I'm an actor? So which restaurant do you work?
Like that ship? You know whatI mean? Which I can't see.
I don't know, you know, honestly, And I know this is
gonna sound ridiculous because I'm trying tothink of like what my special talent would
be. I think it's honestly beingable to consume insane amounts of alcohol and
honestly drugs do and being completely normal. If you ask anyone anyone of my

(22:17):
bar tenders or anyone that knows me. And I'm not the biggest guy.
I mean, he can tell you, right, I'm not six feet tall
or anything like that, right, but not doing that. But I am

Cardiac Cowboys

Cardiac Cowboys

The heart was always off-limits to surgeons. Cutting into it spelled instant death for the patient. That is, until a ragtag group of doctors scattered across the Midwest and Texas decided to throw out the rule book. Working in makeshift laboratories and home garages, using medical devices made from scavenged machine parts and beer tubes, these men and women invented the field of open heart surgery. Odds are, someone you know is alive because of them. So why has history left them behind? Presented by Chris Pine, CARDIAC COWBOYS tells the gripping true story behind the birth of heart surgery, and the young, Greatest Generation doctors who made it happen. For years, they competed and feuded, racing to be the first, the best, and the most prolific. Some appeared on the cover of Time Magazine, operated on kings and advised presidents. Others ended up disgraced, penniless, and convicted of felonies. Together, they ignited a revolution in medicine, and changed the world.
