my Biscuits. But I definitely wanted to ask you just
talk about just how it all began. You know, you

begin your career as a special education teacher, and then
I just want to know, like what specific lessons from
that classroom shaped your approach to lunching and running Eat
my Biscuits, particularly in terms of leadership, empathy, and of
course mentorship.

It's a lot of components. I gotta break it down.
I was a specially as a special education teacher for
the bulk of my educational career. Started teaching when I
was about twenty two to twenty three. Taught in total
for about twenty five years, eighteen years in special education
so I'm gonna need you to bear with me and
break that question down kind of peace. No wraries the

first part of the question, you know, with asking how
did I transition from education into the restaurant industry. Yes, okay,
basically as a child, I've you know, a few things.
I love to do, playhouse, play school, and play restaurant.

I didn't want to be a mom, I did not
want to be a teacher, and I never wanted to
own a restaurant.

that were innately in me as a child.

I decided. I learned how different education had become, and
I really had the passion for being in the classroom

which I teach. I taught in Humble Park, which is
one of the most drug infested communities in America, but
of course with drugs, there's poverty, there's this function, there's violence.

(31:10):
So I had lost a lot of students. I built
very close relationship with my students and their families, and
I had experienced so much loss within my own family
with gun violence, within the my school family, with the students.

Speaker 4 (31:28):
And that last year online of COVID one kids were
not in school.

Speaker 5 (31:36):
I did not have to go back into the class,
into the classroom because of my medical history as well
as some of my students.

Speaker 4 (31:45):
They remote the full year.

Speaker 5 (31:47):
And that year two of my eighth two of my
eighth graders were shot, and one of the first graders
at our school was shot and killed.

Speaker 4 (32:00):
And I told myself, this is it. This is it.
The class that was my eighth grade as.

Speaker 5 (32:06):
That were graduating, I had had most of them since
fifth grade. M So I wouldn't get like a new
group of kids until we kind of went back.

Speaker 4 (32:20):
I thought it was.

Speaker 5 (32:21):
And it had always been hard for me to just
up and leave them because I knew how much they
needed me. And I know it's a lot of teachers
that aren't good teachers, and I know that many times
students have been removed from my classroom they did not
do well they didn't do well at other schools. I
knew the community that I built in my classroom and
with my students, and it didn't carry over oftentimes in

(32:45):
the educational system. M I couldn't just leave them right
every year that I wanted to do something different, I
just you know, you look at them and it's always
what about us?

Speaker 4 (32:57):
Ms Royan, What if you leave?

Speaker 1 (32:58):
What we gonna do?

Speaker 5 (32:59):
And you know what I'm saying, And I'm like, well,
believe me. Was the perfect transition. Two of my eighth
graders were shot. One was shot in the chest, she lived.
The other one was shot in the leg.

Speaker 3 (33:12):
He lived.

Speaker 5 (33:13):
But the first grader that belonged to our school was
shot and killed and a McDonald's driving drive through, and.

Speaker 3 (33:22):
I just.

Speaker 4 (33:24):
The trauma is this So I'm a huge impath. I
just couldn't do any more. It was it was taking
a toll on me. It was taking a toll on me.

Speaker 5 (33:35):
So I knew that if I took this leak at
this moment and did something drastic that I really couldn't change.
So in December, excuse me, in December December of twenty twenty,
I just packed up and left.

Speaker 4 (33:52):
My lease was over. I didn't renew it. I spoke
with my children.

Speaker 5 (33:57):
They were in full support of me leaving and trying
eat my biscuits. I talked to them about the brand
and what I wanted to do. They thought it was
a great concept. So I passed up and I left
side so I couldn't get out of the lease leave me.
When I got here, I asked myself a million what

(34:18):
have I done?

Speaker 4 (34:22):
But I get to still teach in a different platform.

Speaker 5 (34:25):
Yeah, I'm still very much connected to my instead of
my students, my staff and their families.

Speaker 4 (34:31):
A lot of the same.

Speaker 5 (34:34):
Qualities that I maintained in the classroom of creating a
safe environment and creating a comfortable workspace, a family workspace.
The same thing I did in the classroom is the
same thing I do here at eat my business.

Speaker 4 (34:49):
So my I'm sorry. I have asthma.

Speaker 5 (34:54):
My girlfriend had me outside two nights ago at a
cigar shop.

Speaker 4 (34:58):
Oh no, right, okay, I'm living for since then.

Speaker 1 (35:02):
No, I just said that if you have to take
a breather, it's fine.

Speaker 4 (35:07):
It's gonna cough a little bit here and there.

Speaker 3 (35:09):
That's perfect.

Speaker 5 (35:10):
The same ideologies and community that I wanted to build
in my classroom that I did build in my classroom,
I've managed to build instead of a classroom in a
work in a work environment.

Speaker 1 (35:25):
So oh my gosh, And look that was a big leap.

Speaker 3 (35:28):
Indeed.

Speaker 1 (35:29):
I mean, you're in East Point right now, and of course,
if you think about East Point, it just offers a
rich tapestry of just history and community. And I guess
my question to you is just how have you integrated
the neighborhood's heritage or local negatives into your restaurant's atmosphere,
of course the menu, and of course community outreach.

Speaker 4 (35:51):
So I'm just learning east Point.

Speaker 5 (35:55):
So coming from Chicago, there's a lot of things about Georgia,
I did not know what I did know about Georgia.

Speaker 4 (36:02):
I knew I was going to be in the South.

Speaker 3 (36:04):
I knew that there was a.

Speaker 4 (36:06):
Lot of history in terms of I knew King, doctor
King was.

Speaker 3 (36:09):
Here right I knew it was a.

Speaker 5 (36:12):
Very influential place as it stood, you know, as it
relates to civil rights for the black communities.

Speaker 4 (36:21):
And so I knew that history, and I knew that.

Speaker 5 (36:24):
Black people here were on a very different level than
the black people that were coming out of Illinois, you know,
Illinois only being and I had restaurants in Illinois as well,
but with Illinois only being twelve to what thirteen percent black,
to come to Atlanta, to come to Georgia and experience

(36:51):
black on this level all over the country, like very
few people I've met are from Atlanta. The opportunity to
be in East Point. I'm right by the airport right yes,
learn while I'm here. It is the busiest airport in
the world.

Speaker 1 (37:09):
That is correct.

Speaker 4 (37:11):
So I immediately thought about connection.

Speaker 5 (37:14):
Okay, not being from here, creating a home here, building
a business here.

Speaker 4 (37:21):
How can I connect these dots?

Speaker 5 (37:23):
And I thought East Point would be the first, like,
would be the best place to do that in terms
of still being a small community, still being a very
diverse environment. East Point has a very rich history as
it pertains to Black people. I have a restaurant in
south Shore that I just sold a month ago called
Serfs Up, and south Shore has that same rich history

(37:49):
African Americans that East Point have.

Speaker 4 (37:51):
Wow, where we used to be.

Speaker 5 (37:54):
And you know where we lost it along the way,
but where we have the potential to go. I want
to be a part of that growth of where we're
moving forward. It's like we're moving forward but going backwards.

Speaker 4 (38:07):
If that makes sense right. Going back to where we
once were.

Speaker 5 (38:13):
And being in at the at the ground platform of
that for me was important absolutely being a leader to
you know, where other business will come and look, you know,
you don't want to just when I came into here,
you look around and you don't see, you know, anything
that's very eye catching, don't say anything that anybody say,

(38:35):
oh I would want to come here.

Speaker 4 (38:38):
So people were visual how do we make the city
more appealing?

Speaker 5 (38:45):
And we're not having much of that here in East Point,
but having so much rich background, so much possibilities, so
much diversity. I want to be a place that welcomes
everybody to rebuild what, you know, what East Point once had.

Speaker 4 (39:01):
So I'm happy to be a part of it. I'm
happy to be at the ground level.

Speaker 5 (39:06):
And now they're doing construction and now they have bigger
projects coming, so it's exciting.

Speaker 4 (39:12):
I think that chose up absolutely absolutely.

Speaker 2 (39:15):
I think so too.

Speaker 3 (39:16):
I'll be welcome to the A. It's amazing to happy here.

Speaker 1 (39:20):
But if I had to speak on another place, would
that be considered food network?

Speaker 2 (39:25):
I would say, but.

Speaker 1 (39:28):
Most importantly just competing on the great American food from
Spotlight to eat my biscuits. So my question is what
valuable insights or momentum did that experience generate for product development, storytelling,
and of course brand strategy.

Speaker 4 (39:50):
That experience was nothing like I expected. Of course that's
fine part of me, yes, please explain. You know, you
learn quickly that really reality TV isn't very real.

Speaker 3 (40:10):
It is, but yeah, yeah, but.

Speaker 5 (40:14):
For my brand, this little girl from Chicago, you know who,
just up and moved to Atlanta. There are hundreds of
black owned, women owned restaurants in Atlanta. I don't know
if any of them haven't been on the Food Network.
So to have the opportunity to put my brand in
front of it. I think the Great Food Truck Race

(40:36):
has nine to ten million viewers. So to be able
to be on a platform to introduce.

Speaker 4 (40:43):
My brand was phenomenal.

Speaker 5 (40:46):
Right, it wasn't as It wasn't a walk in the
park like I, you know, body would be.

Speaker 4 (40:54):
It was more challenging, but.

Speaker 1 (40:57):
It gave me.

Speaker 4 (41:00):
It showed that I had the grit and that I have.

Speaker 5 (41:06):
What's necessary to change on the fly, to be flexible,
to be creative. I didn't get a food truck, so
it was supposed to be nine food trucks that compete.

Speaker 4 (41:19):
There were eight food trucks and one r V.

Speaker 5 (41:23):
I have Wow, So I made a lead that So
they asked you to submit a menu and all of
these things. You submit a menu, they ask you the
equipment that you need. You tell them the equipment that
you need, they approve it, You're good to go. And
then I get there and I don't have a food truck.

(41:43):
I have an RV and it's a one bad one bath.
I don't have any prep state space.

Speaker 4 (41:51):
I don't have any counters, I don't have any fryers.

Speaker 1 (41:55):
I have nothing good.

Speaker 5 (42:00):
I don't have anything that I'm supposed to have to
execute the menu that I submitted, So I had to
think on a fly.

Speaker 4 (42:10):
It definitely dimmed our light. I feel like it.

Speaker 5 (42:15):
It changed for myself and my team. It changed our
what's the word I'm looking for?

Speaker 4 (42:22):
Morale? Morale sank when I.

Speaker 5 (42:25):
Really realized they literally put me in a food truck,
like I mean, in a in an RV.

Speaker 4 (42:31):
What did I do?

Speaker 3 (42:32):
Yeah?

Speaker 4 (42:34):
And especially when you see the other trucks and they're
all food trucks.

Speaker 5 (42:38):
But for branding and for you know, adding to my resume,
A lot of restaurants can't say that.

Speaker 4 (42:46):
So I'm looking for more. I'm looking for.

Speaker 5 (42:51):
I'm gonna, you know, leverage just as much as I can.
It was a great experience. And then you have a
Michelin chef, Tyler Perry, who's had this show for what
eighteen years? Now, there's the eighteenth season, so this is
the eighteenth year. So clearly it's a show, a show
that does numbers. And not once did he say my
food was bad, but to say that my biscuits reminded

(43:11):
him of his grandmother's biscuits. Who's from South Carolina. So hey,
here i am in a little girl friend the stake
from the north. Yes, South biscuits in Georgia from my
Mississippi roots. So I'm thinking my Mississippi roots from Chicago,
bringing these flavors to Georgia being recognized by a Michelin

(43:34):
chef compared to South Carolina biscuits.

Speaker 4 (43:37):
I think I'm on my I think I'm on my way.
I think I'm doing something good.

Speaker 3 (43:40):
I love you.

Speaker 5 (43:42):
The menu encompasses everybody. It's not just a Southern menu
or black menu or a white menu. It's or it's
a it's a menu based off of good food, fresh food,
fast food, an excellent customer service, and just pulling all

(44:03):
of those components together from my Mississippi routs, my you know,
grandma cooking being in the kitchen with her coming to Atlanta.
Because Georgia's Southern is very different than Mississippi Southern.

Speaker 4 (44:18):
Yeah, and it's and styles.

Speaker 1 (44:23):
Yeah, it's absolutely I would agree. And it's funny that
you say that because you think being from the South,
it would be equal the same, right, But it's not right.

Speaker 5 (44:34):
It's not the same. And I was ignorant and did
not know that. I learned it while I was here.
How they do things how Mississippi South, Like my roots
are from my grandparents and great grandparents cooking, and we're
from Mississippi. So to come to Georgia, I'm assuming the

(44:55):
taste talents will all be the same, very similar. They
are are so far and so different from what we eat,
what we eat, when we eat it, to what we
name things. I'll say one thing, they'll say another thing,
and it can be the same thing. So it's it's
very different from I never heard of potatoes being called

(45:18):
home fries.

Speaker 1 (45:20):
Mm hm.

Speaker 5 (45:21):
When I say smothered potatoes on my menu, everybody's like,
what is this mothered with But for a missus Jimmy,
it's smothered with onions and seasoning. You know, Yeah, it's peppers,
it's potatoes. But here they do cubes that look like
little like squares, yeah, in circles that are shaped more

(45:47):
like chips.

Speaker 4 (45:48):
But it's peppers.

Speaker 5 (45:49):
It's onions and it and it's seasoned and it and
water and oil and it creates like this juice and
the potatoes that's saltaz it.

Speaker 3 (45:57):
Oh.

Speaker 5 (45:58):
So that even with my staff, they were like, huh,
what do you do from the way I see in
my chicken because most of my staff is from Georgia,
arguing and how to.

Speaker 4 (46:11):
Make grits because they do Georgia grits. I do Mississippi
Chicago grits.

Speaker 5 (46:17):
But being kind of culminate these things together, it's been
an experience. It's it's hilarious being in the kitchen here
because they're telling me.

Speaker 4 (46:26):
That's that Chicago shit. I'm telling you that's that country
ass Georgia shit.

Speaker 5 (46:29):
So we go back and forth, but we put it
together well and I think absolute volume and the flavors.

Speaker 1 (46:40):
Now, I guess my question is I wanted you to
backtrack because I'm a big grits person. Now, tell me
a little bit about these scripts. How do you do
the grits? Now?

Speaker 3 (46:49):
I want to now explain.

Speaker 5 (46:51):
I'm scared to tell my secret. So one thing I
realized here in Atlanta.

Speaker 4 (46:58):
I've never done. They like to add a broth to grits,
like the first I had.

Speaker 5 (47:08):
I initially thought to hire a chef, but I really
didn't want to because I already knew what I wanted.
I knew my menu, I knew what I wanted, and
I know how to cook these things. It's just a
matter of me putting everything on paper and putting it
into a mini right. And he tells me you got
to put chicken broths, and it absolutely not. So that

(47:31):
was one thing that kind of we bumped heads about
because I don't put chicken, you know, because I got
to make it available for everybody, right right, So starting
that that didn't last long, and neither did that cook.

Speaker 4 (47:45):
But grid is it's simple.

Speaker 5 (47:49):
It's heavy whipping cream, water, butterka and grits. But you
got it the right allens to keep it smooth. You
want to smooth clumpy. You want it creamy, but you
don't want it too gritty. But you don't want you

(48:11):
want to keep the grittiness in it, but not too gritty.
You don't want sandpaper in your mouth or sand right,
but you want to know you want grits, not mashed
potatoes too. So it's a fine line amount of water,
the way you stir, and when you add these components.

Speaker 3 (48:31):
Mhmm, it comes out so delicious. I can only imagine
it does.

Speaker 5 (48:37):
It's creamy, it's just enough gritty but not too gritty.

Speaker 1 (48:42):
I believe it.

Speaker 5 (48:43):
I think I feel like Mississippi Southern cooking is a lot.
It's more simple mm hmmm. And I was big on
being simple, producing a MENI that anyone could could reproduce
right that we can cook on the flash. All of
our biscuits we make them in house. I don't have

(49:06):
any sauce come here from outside. So from my honey
sauce or my cognac sauce, to my roumelade sauce, lime ricotta,
my apple glaze, my Cajun garlic butter, we make them all.
All my composts, we make them all in house. Fresh

(49:27):
strawberries are sliced up. I make a compo and then
I do fresh strawberries on the side. So that when
you were doing the strawberry lemea ricotta waffle. Make the
lime ricotta in here. You put the strawberries that has
the juice. They look at little weld hit not very pretty,
but so much flavor in them. And then you put
the extra fresh strawberries on there as well.

Speaker 4 (49:46):
So the lime.

Speaker 5 (49:46):
Ricotta, the honey, the hot honey, all of that we
make in house.

Speaker 3 (49:52):
Oh wow, oh my gosh.

Speaker 5 (49:56):
You have one sauce that we use a very good
friend of mine, he's out of New York.

Speaker 4 (50:01):
He has a Liberian heritage. He makes a sauce.

Speaker 5 (50:04):
Called crew k are you that's us one line. This
sauce pairs so well with eggs omelets, chicken, shrimp. So
that is a sauce that I bring, you know, to
the side to add to it. I used to make
my own jams. Not doing that becausis just too much.

(50:27):
But making biscuits and everything, yeah, are made from every day,
and we're making them throughout the shift. So you're not
getting all them biscuits two days old every times from
that day.
