La Dra. María del Rosario Fresno Baquero —más conocida como Marichu Fresno— es una destacada veterinaria e investigadora canaria con una trayectoria admirable en el campo agroalimentario. Natural de La Palma, su carrera se ha centrado en la mejora de la producción láctea y la preservación de las razas caprinas autóctonas, así como en el estudio de los quesos tradicionales de Canarias. Ha liderado numerosos proyectos de alcance internacional, colaborando con instituciones científicas, ganaderos y denominaciones de origen. Recientemente ha sido nombrada Directora Científica del Instituto Canario de Investigaciones Agrarias (ICIA), reflejando su compromiso con la investigación, la divulgación y el desarrollo rural sostenible. Su vocación, humanidad y pasión por la gastronomía la convierten en una referente en el ámbito científico y cultural del archipiélago.
