Øl har eksisteret i omkring 10.000 år. Men det er ikke sikkert, at vi moderne danskere lige sådan ville genkende øl fra fortiden ved første tår. I begyndelsen var det nemlig en slags grødet masse, som man drak med sugerør for at undgå bundfaldet.
Gennem historien har øl undergået en kæmpe udvikling, både i forhold til ingredienserne, smagen og selve produktionen – og det er ikke mindst forskernes skyld.
I denne episode af Grundtanker er vi på tur i Carlsbergs drivhus-laboratorium. Her prøvesmager vi bl.a. nye øltyper i pilotbryggeriet sammen med professor og forskningsdirektør Birgitte Skadhauge. Hun fortæller om de genvidenskabelige forskningspionerer, om udviklingen af nye kornarter og om samspillet mellem grundforskning og øludvikling.
