This is a special edition of Late Night Health. I'm
Mark Gallan. We're going to talk about dry Youary. What
is dry Youuary? It's not January, it's alcohol free January.
It's for health reasons. We're going to talk right now
with the founder of Josh Wines, one of our wines
that we consume on a regular basis, except now in

January we're holding off. And his name is Joseph Carr. Joseph,
welcome to Late Night Health.

Speaker 2 (00:37):
Well, thanks a lot for having me today. I really
appreciate it. You know, I started Josh Sellers, you know,
almost twenty years ago, and it was I've been making
wine California and it was a tribute to my late father, Josh.
He wasn't a.

Speaker 3 (00:52):
Wine maker, it was actually a lumberjack and I learned
a lot about family values and hard work. And when
I created Josh Sellers, it's kind of shouldn't have it,
and it grew into something that I never could have imagined.
It became this amazing pop culture favorite and now it's
America's number one premium line.

Speaker 2 (01:14):
Can't be proud of that ac publishment.

Speaker 3 (01:18):
Now we're able to expand our portfolio and make a
non alcohol.

Speaker 1 (01:25):
And just as a point of interest, I have a
Josh too, our son, but we call him Chef Josh
because he's a professional chef, which is why I got
into this whole thing anywhere. Maybe it's how he got
into it. Let's talk about non alcoholic products. You've expanded

(01:45):
your portfolio. You have a prosecco driving throughout Italy. A
couple of years ago we had a lot of prosecco,
more than I probably should admit. What have you done
in expanding the portfolio? And why?

Speaker 2 (02:08):
Well, you know, when we started really made one one
we made Cabernet seven.

Speaker 3 (02:12):
You and I actually I quit my job and my
wife and I started this little company and sold out
the back of our truck.

Speaker 2 (02:20):
Waiting to stard to death. And now we have over
twelve different lines. And a few years ago it was
very fortunate to meet Proposing family.

Speaker 3 (02:30):
It's a generation wine making the family producing wine in
the Veneto region as well as southern and.

Speaker 2 (02:40):
We got together and we built a winery up in the.

Speaker 3 (02:44):
Ventento region, not too far from the Alco Pache making
class at prosecco.

Speaker 2 (02:49):
And prosecco rose. And you know, in the last couple
of years, a non alcoholic segment of a single residing
for millennials, younger people, and people that don't drink alcohol.
But you still want to be part of the party,
and we want everyone to be a party as far
as we're concerned.

Speaker 3 (03:09):
So we set about to create a non alcoholic sparkling
wine produced in the Prosecco region.

Speaker 2 (03:16):
And here we are today.

Speaker 1 (03:19):
How is it made? My wife asked me. Do you
you make theo and remove the alcohol or do you
make it without alcohol?

Speaker 2 (03:28):
Well? I do it a couple of different ways. You
can make it with alcohol then if you don't do
or you can arrest the fermentation. If you arrest the fermentation,
that then the alcohol process doesn't happened. You know that
actually happens to our wines in Europe. You know, it's

(03:51):
called a stuck fermentation. It's too cold and the alcohol
never comes about. So that's kind of how we do it,
don't uh, no full fermentation.

Speaker 4 (04:04):
And we also add a moscott which is very popular,
and that because it lets the heat pairs and a
little reminiscent of apples.

Speaker 2 (04:16):
It's a beautiful it's a beautiful product. I really like
it a lot. I didn't think I was going to.
But uh and I got together and I wanted to
make a non alcoholic. You know, my late mom was
diabetic and she couldn't drink alcohol, but she wanted you know,
she wanted to be there at the party. Uh, I

(04:36):
wanted to be she wanted to be the party. So
so we wound up making this battles. It's getting all
kinds of great, great press things like.

Speaker 1 (04:46):
That when when you you drink a prosecco or even
a wine a cab. I was in a market the
other day and passed a display of Josh wines, and
you pairrot with food, what will the prosecco go with?

Speaker 2 (05:09):
Well, you know, my wife is Italian American, so we
ate a lot of Italian food, pizza and nicasta.

Speaker 3 (05:17):
Uh.

Speaker 2 (05:17):
You know, everybody everyone was challenged to see who can
make the best gravy, the best sauce. You know, I'm irish,
so I'd never stood a chance, still a chance in
that arena, but I like, I like prosecca with you know,
Italian foods, which would be traditional or Mediterranean foods. And
the other thing that's happening is these mixologists are coming

(05:42):
up with mock cocktails. So we We've made a world
famous ballini mock cocktail by adding our sparkling non alcoholic
wine with a peach and a raspberry juice. And then
of course there's you know the famous bellini or executically

(06:06):
Limosa where where we just add orange juice and it's delicious.

Speaker 1 (06:09):
It's great, great, I can I can think of one too.
Ki Royal would be great. Just add a little bit
of some kind of you know none, Yeah, I think
