(00:24):
Welcome to Downtown, brought to youby Arlington Citizen Media. This week on
the Downtown, we talked to RandyFord with Jay Gilligans all about their forty
fifth annual Saint Patrick's Day block party, which is happening this Saturday, March
sixteenth. It is happening all day. If you have never been to a
block party at Jay Gilligans, youare missing out and you desperately need to

(00:47):
do this. If you are nota big crowd person, go during the
day. It's a little more calm, but it is so much fun no
matter what you're doing, and it'salso very family friendly, so obviously bring
the kids. We also have localmusic on the show with actory laugh ning
with crying out Loud. But firsthere is the Asshats with surf songs.

(01:19):
I said, you're sitting there.I look back at that baddy Yah.
Yeah, I said, I meanthat I gotta forced the feeling. I
song you on mass man laugh.I said, you're fucking fine. You

(01:48):
know you gotta make up your mind. Why do I mean that, I
gotta force the feeling, So whydon't it take my I'm shout at Last

(02:12):
week back h Light makes Pat SunLast weeks back. I'm gol you fucking

(02:59):
five, you know you gotta I'vegotta la last, I would like to

(03:31):
welcome the show Randy Ford with JayGilligans. How are you doing to this?
I'm sorry? Are you so goodto me? So we've met before,
but it's good to actually have youon the show, on the show
forever for a multitude of reasons, because Jay Gilligans is this year celebrating the
forty fifth anniversary. Congratulations, bythe way, thank you for forty five

(03:51):
years. It's a long time,it is. Yeah, I want it's
a long time for somebody to bealive, let alone a business. Yeah,
yeah, you're right now. Ihad read that you aim this place
after one of your friends. Uhand you also opened it with ten thousand
dollars worth of borrowed money. Yes, that party s Ygain John John Galligan.
John and I went to well Iwas actually already graduated, and John

(04:12):
and I went to U t A. Although at different times, right and
John played basketball for U t A. And uh so I was in the
same fraturnity he was in. Butthat was along that which fraternity was it
was the Fidels. Yeah, Ihad I had a bad that was in
Beta, right, yeah, soyou know, and back then it was
a you know, it was ayou needed to belong to something of ut
I love U t A and thatand to It wasn't for U t A,

(04:35):
we probably wouldn't be here today.Honestly, I mean that. I
mean, you know, we're talkingabout staff, we're talking about professors,
and then obviously the students, andyou know, they've grown so much over
the years. But so so Ihave a lot of fondness about UTA.
So John had gone to ut A. Well when he was there, some
of the older guys, so hewanted a job. He needed a job,

(04:56):
he was playing basketball, needed ajob. Then, so we'll go
see four. He'll give you ajob. So he can to work for
me at a place over across thestreet where City Hall is today. Okay,
uh and it it's called the mindChef. Okay. So then eventually
one thing led to another and Icame over here. So, uh,
I was trying to salvage a joband salvage another deal. So I called
John up. I said hey,I said, John, what are you

(05:17):
doing? He said, well,I just graduated and I just took my
last final and I said, well, what are you gonna do? He
said, I have no clue.So we made a deal. He came
by and I said, you knowwhat, I said, Uh, we'll
call it. We'll call it Gilligansand I'll come by once a week and
get my money. So I didn'twork out that way. Forty five years
later, here I am. Butbut you know, it was a it

(05:38):
was a good partnership. You know, John passed, Okay, he he
had already uh been out of thebusiness. Uh he was Uh he went
into real estate and uh but hehad always it was a positive deal.
Uh so you know, but hepassed, so uh even before that,
you know, we'd already he decidedhe wanted to go another direction. But
uh, we we had the buildingwe owned. So every now and then

(05:59):
when axes was come around, I'dcall John, I said, hey,
man, taxes do I said, you call You call the young guys,
and I'll call the old guys thatyou know, break them on down.
You know. So it was awin win for everybody, of course,
it really was. Now Okay,so you said you were running a place
called the Mine Shaft, which Iimagine is a concert venue. Right,
It was just it was just alittle it was a bar, just what.

(06:20):
It was one of the very firstbars in Arlington. It was in
nineteen seventy four, and we didhave a lot of live entertainment. We
had live entertainment almost every night, you know, so it was yeah,
it was a live venue place. All that wasn't big enough to be called
a concert. But we did havepeople like B. W. Stevenson and
Rusty Weir and Willis Allan Ramsay andSteve Frumholt. That's a long long time

(06:41):
ago that many folks wh would hearthis wouldn't recognize. But that was kind
of when the it was the thewhat Willie and Wadan had the the country
deal. It wasn't it wasn't traditional, and it wasn't cross and it wasn't
outlaw outlaw. It's kind of anoutlaw country. So that was kind of
a it was a Texas country ifyou will, for lack of better terminology.

(07:02):
Yeah, and so that was kindof an ongoing thing. So we
played that role. And it wasa group called Calico that was at the
mine Shaft and Uh, one ofthe guys that I had got we had
gone to ut at the same time, so we knew each other pretty well.
So when I moved over here, well, they played it. They
played over at the Mine Shaft, and it was a big deal of the

(07:23):
town. And then he came andhelped us over here with music stuff.
But music has always been a partof the heritage at Jallian. So I
was gonna say, because I hadheard that you that Jay Gilligans was the
first place to I don't know ifyou had to get a license for it,
that you were essentially the first quoteunquote licensed place to have a concert
venue in Arlington. Yes, yeah, and that was like that was seventy

(07:44):
four and seventy five, and Idid a concert here in Arlington. It
was the it was the old CamelotBallroom, that was the Space Odyssey two
thousand day. So we Yes,I had been upset for years that that
had just been empty and no onehad opened up again. Why would you
not, because I mean, listen, we're both white people, but there

(08:07):
were so many Hispanics in this entirecommunity. They need a place to go
to to enjoy music, enjoy themselves, just let loose dance. Whatever it
is. I don't know the wholehistory behind it. I heard drugs was
behind it. That's the only thingI heard was that I heard drugs was
behind it. And that's why Isaid, Well, the h the man
that that I rented it from backin nineteen seventy seven or seventy six when

(08:28):
I did this Ray Willy Hubbard deal. His name was Luther Luther de la
Garza, okay, and he washe was he was older at that stage
and that was back in the lateseventies and stuff like that, and you
know, he was a Mexican heritageand stuff like that. And he had
had it open for you know, parties in Kenson years and I'm not sure
he was to me, he washe always he was a he was very

(08:50):
generous and a good businessman. Idon't know why it sat there for so
long. It was so upsetting tome. What's happening a huge playing parking
as it was a nice I'm notsure what happened because the weekends if that
place was passed like it was nuts. Like I never I just saw the
parking lot. It never went inside. I was too young, Oh I
know, yeah, so but youknow that, but that you know,

(09:11):
but and then now it's apartments,Yeah, who goes to show you exactly.
Yeah, it makes so when youbecause I had heard this about the
concert from someone else that was bigin the concerts, in the in the
local scene as well. What wasit like back then when it came to
concerts, because you, like yousaid, the original place, how big

(09:33):
was this place initially? And thenwhen did you do the extension? Well,
the you know over here, youknow it was the original building.
That's just the building first walk inand then you know what it just over
the years it's grown. And I'lltell you one thing speaking of concerts,
because you know this weekend at GlobeLife, right they have the rodeo Friday

(09:54):
and Saturday, and I went toLuke Bryant and then I also have yeah
MOSTI alone from right and then atthe Cowboy Stadium on Saturday night is Billy
Joel Stevie na So so we shotwhich I think was actually were not rocker
first, but Stevie Nicks and BillyJoel played at I think it was.

(10:16):
Did they not play it Globe Lifelast time? They? I think they
might have. And then now they'rein the bigger one in the bigger venue
now. They were supposed to playlast year and one of them, and
then I think eventually both got sick, right, so they canceled it.
But it's it's just coming Saturday night. Yeah. And the reason what we're
talking about concerts and stuff like that, and so that has allowed us.
The Cowboys Stadium was you know, the first to start doing a lot of

(10:37):
the concerts Globe Blave and we shutup for both those venues now. And
that's why the expansion this out here, the we're pointing, I know you
can't has actually been to Jay Gilsonwere talking about, which I said,
you know, runs up to AbramStreet. Yes, we've got a new
outdoor canopy. Yes, and Lanemedals here in helps us do that.

(11:01):
They donated some of their materials andthey wanted to kind of do something in
the community, and they helped ushelp the community and it was a win
win. But that music stuff, back to the music stuff and back to
the concerts and stuff like that, that has been a great cause. Like
tomorrow night now, Tomorrow night,I don't know, but I'm guessing four
to five hundred people will be hereto see Bill Joe. I mean,

(11:22):
what won't be a killer Because Jillget ourselves, we get to shottle and
go out there and then we bringthem back here. So you know,
on a Saturday night, just comingin the first of March when this has
been the slow season and you getthat and you know what, not everybody
will eat and drink of course alarge percentage due large percentage due it's cheaper
to drink here. That yes,So that so that that all ties in

(11:46):
with the music dealing. Then wehave music here and uh, they at
an event December first there was achurch here in town called the Gospels City
Church where they do a tavern hymns. They had six hundred people whoa Friday
night the first Friday night in December, and uh it was great, you

(12:07):
know, and they had a littlesing along with music. So uh that
that that that's a neat, neatdeal to have that many people here on
from us and we have a canopyand put up a tan or two.
Yeah, so it was great. So music has always been a big,
huge part of this a lah SaintPatrick's Day, which is a week from
tomorrow's Saturday. Yeah, and youknow what, it fell on Friday last

(12:31):
year and then we leaped over Saturday. Yeah, we just had a last
week I guess yeah, and that'sreally disappointing from my pants. Saturday Saturdays.
I mean, Friday's are good andThursdays are good. Friday would be
better than a Thursday, but Saturdayis the best of all because remember Saturday
last year on a Friday, Ohyeah, exactly, it was very very
good. So so what we do, uh, well, we'll do the

(12:54):
Saturday night with the main music deal. I mean it's it's not just nighttime
either. Yeah, we'll start youwe'll started into we'll start around noon.
We'll have last year, yes exactly, We'll do a little face painting and
we do the green beer and ours. Of course that's not for the face
painting crew, but we have people'shouse. So you know, that has

(13:15):
become the reason that Saint Patrick's Dayis so successful. It's because it's about
the people. People bring the peopleand people know other people will be here,
and it's more and more and morethey're you know, we're now seeing
three and almost four generations of peoplenow they bring their kids and stuff like
that. So we you know, that's a big part of our business.

(13:37):
Uh. You know, obviously, you know, green beer is part of
what you know, St Patricks Dayis about at least in America. Of
course in America America, Iris arenot real fond of that at all.
But you know, this is alsoa family uh places like it is uh
which you know where we welcome allpeople. Yeah, and those people,

(13:58):
you know, they came here whenthey were growing up. Now they have,
Yes, they bring their kids here. So you know, we wanna
we wanna have We're having a bouncehouse. It's a face painting jail early
in the day noon the forests andfive us have a back black player.
But then then as the latter, yes that we have a music. We
have a band. We have twobands. We have a two bands outside.
We have two bands in the bar, and then a single guitar player

(14:18):
is gonna play before that. Andthen in the draft and the original building
we've got uh. There's a TiaraTiara she's out of Dallas and she has
a Celtic band. It's the realdeal. Ah. She's a fiddle player.
And then once she gets through, she goes around to each table and
plays. The fiddle player that's beenThis is the only reason he has not

(14:39):
been here forty five years is becauseabout three or four years ago we couldn't
have it. We couldn't have SaintPact think because of COVID. Little bit
of don don is ironic because itstarted it's like right before Saint Patrick's Day.
We say it was it was,it was. It was very troubling
because you can't set the week. Then we do and we got bars.

(15:03):
It's and and and that came fromthe concert days. That's that's where you
know, we learned, uh todo that setting up for large events and
large music and so this is andthere's three different stages and so there's not
just one being huge. It wasoutside you know, there'll be a couple
of thousands of people outside. Sobut yeah, but it it's you know,
so that it came from the concertdays and uh but but the COVID

(15:28):
deal. We started setting up onFriday. Uh so Friday, Saturday,
Sunday and uh Saint Patrin it wasgoing to be on a Tuesday, and
we had uh we had planned tomove forward with it, but then it
just finally, you know, itjust it was we had everything set up,
everything ready to go, but thenyou know, it just it wasn't

(15:50):
prudent. It wasn't you know,it would optically it would not look good
for you guys to do it becauseyou think you're causing what they called it
ended up being a super spreader orexactly, like yeah, because I mean
you never know. And then likeI mean, Levitt did a great thing
where they sectioned places off. Yes, a little square. I mean,

(16:10):
if you're having that many drinks, everyone's having a good time at Saint Patrick's
day, who's going to really stayit's like their square and not be like,
oh, oh, there's a prettygirl, I'm gonna go talk to
her in that square. Yeah, exactly. But you know what it uh,
you know, the city and thefire department, Uh, they worked
with us on that, and uh, you know, so you know,
at the end of the day itwas a prudent thing to do, of

(16:32):
course, you know. And thenso then in the next year the governor
governor uh raised all you know,he lifted out like ten days before in
factor he said, you know, lifted a lot of the riches. So
the fire department normally when we dothat permit, when we do the Saint
Patrick, there's a permit process yougo through, of course, and there's

(16:53):
seven or eight different departments, riskmanagement, inspections, hel on and on
or not, and so they allknow you at this point. They do.
But the fire, the fire people, uh, they called me up
and said, hey, well we'regonna We told you last year that decent
health. We'd helped the idea.Yeah, because normally it's a thirty day
process. Oh yes, so it'sthey squeezed it into ten days, you

(17:15):
know. And we didn't do theWe didn't do the full, big,
huge blown do but we did havea we did have a couple of thousand
people, fifteen hundred and two thousand. It was on a Wednesday afternoon,
right and uh you know what peoplewere so people were smiling walking down the
street getting ready to come in becausethey were so tired of being cooped up.

(17:38):
Yes, you know, it wasjust you know, so that was
a neat deal sale and it worked, ciz. We had a lot of
hand sanitizing stations, of course,a lot of masks, a lot of
masks, you know, a lotof mass as long as as long as
you're our finger table were that mask. But we were that yeah, and
now that then last year was thelargest one we've ever had. Last year
over the front, I mean Iwas only here during the day yeah,
and I can't imagine how much biggerit was that night, so you know,

(18:00):
but it was a neat deal ofcourse. Yeah, but that that
sank pacty. That that's people. It's all about the people, all about
the autent and community. Because peopleknow that other people will be here,
they see people. So that's beena it's been a blessing to say the
least. You know, Well,so you're celebrating your forty fifth year this
year, what can people look for? I mean you've already kind of mentioned
you got to know the bounce houseduring the day, and the and the

(18:22):
painting the faces and the bands atnight. What else can people look forward
to during the day or during theday and then in the night. Well,
there is always you know, thewe get a lot of support,
we get a lot of support withthe food vendors. There's a lot of
support with the of the beer folksand the alcohol folks. I mean,
there will be that going on,but I've seen trucks just parked out here
just because they will. But youknow, there comes with that responsibility.

(18:45):
So for example, we do notsell I p A outside why do we
not show I PA outside of ipsare typically a higher percent of alcohol,
you know, like a seven percentor some of them could be ten or
twelve percent. Yeah, they're not. Yeah, they're not festival deal on
that. We don't sell pictures ofbeer. Okay, we don't sell pictures
of beer. We there is aline to get something. But you know

(19:07):
what, that's okay if we don'tsell what war in a time? So
there there's different things that you know, you need to be you know,
thinking about the safety. But wehave we'll have like ten to twelve constables.
The farmer farmer is here. Theyworn to make sure that you know,
everybody is not crowded into one's placelike the bar, and so that

(19:27):
we can spread this thing out.So yeah, but there's a lot of
fun things that there's a lot ofgiveaways. There's a lot of bees,
there's T shirts, you know, there's green beer and iris not show.
So it's up and the band isthe band. This year is just the
third year they play, and it'sa five piece band and it's a kind
of a current rock and veal. But they have a female bank pipe player.

(19:48):
Oh yeah, so that really kindof you know the backpipes. You
know, it's not a traditional thingwe would have here, but on the
same fact, stay exactly it worksand and they're they're a good little band
and uh so, and then theGuinness people, you know, speaking of
the beer. They they helped geta bag flack player here. That's all.
We have the bag flack player DonaldCleod, that's been here for forty

(20:12):
four years only because yeah, buthe'll be here that night, so there'll
be a lot of fun packs. That's amazing. So we love it.
Yeah, I mean obviously throughout fortyfive years, you guys are growing,
yes, as you should. Whatwould you tell what don't you tell Randy
from the after your forty fifth year? What would you tell him going into

(20:33):
his first year? You know, you get you know what, there's no
it's the school of experience, yeah, you know, and there's a lot
of been learned over the years.Looking back, what I would say to
the guy today is that, uh, just take care of just take care
of and you know it's a learningprocess. He has a learning puss.

(20:55):
Over the years, we've been reallyreally fortunately we've never had any you know,
you know, uh, the peoplethat come here are looking for a
good time, but it's it's alwaysresponsibly exactly responsibility and so you know what,
Uh, each year it grows alittle bit and uh, but looking
back it is a lot of work. Of course, obviously you're playing a

(21:15):
lot of the biggest uh Saint Patrick'sDay party in Arlington, you guys,
and that's it. Yeah, soyou know, so you know, looking
back on it, Uh, youknow, I wouldn't have a lot to
say it because you know, therewasn't I know a lot more now,
but that's just through the you know, the forty five year just what to

(21:36):
do and what not to do.And you know sometimes when you're learning and
you just dive into it with bothfeet, there's some mistakes along the way,
but fortunately there's anything that would wouldbe real bad. You know,
we might I should have had anotherkitchen over here, another station over here,
But it wasn't anything to do withanybody, thankfully, getting hurt.
You know, stuff like that. You know when the very first year we

(21:57):
ever ever did it, Cores wasthe one that initially came to me and
said, hey, you know, what do you think about green beer?
And I said, well, Edinardthought much about it, and so they
came out and they took a Hypherdermitneedle. Oh, they take it and
they shoot it in the keg andthen take the keg and shape the keg
up. So we had one kegof beer sitting down on a one one

(22:21):
keg of beer. That was thefirst year there was a couple of hundred
people. So well, and thenyou know we're expecting there if the weather's
good and stuff like that, there'llbe four to five thousand people not here
at the same time throughout the day, throughout the day and stuff like that.
And you know Dallas does a bigdeal get the Giant parade, Yeah,
with their parade, and in FortWorth, uh, they do some

(22:44):
deal. So on a Saturday, there'll be people moving around, people moving
around, and now Sunday we willbe here. We'll be here. We're
not gonna go all outside and doall the outside stuff. It's just too
much, it is, and notas many people want to turn up on
a Sunday as they do. Sowe do the Saturday night as more of
the and we'll do the daytime,we'll do the family stuff and then Saturday
night we'll have the music in thebands. But we will we'll we'll for

(23:08):
sure outside we'll only go to midnightgot it on that. Okay. Could
we start early? You know westarted the first of music outside is four
o'clock, okay, so by midnightit's time to start whining and started winding
down. If people could come insideand stuffing, and then Sunday we'll be
back here. We'll be back herewith the green beer and iris stops.
We may have a backpack player floatthrough lay she may come for a minute,

(23:32):
but uh so we are going toacknowledge it owns that, but it
just makes more sense. People havethe weekend, they can go out and
uh that's where we'll go to takecare of the Saturday night and then come
back for Sunday to toast the reallife. Now, I imagine you know
who Stone called Steve Austin is theprogress right now? The progressler Stone called

(23:55):
Steve Austin, right, Okay.So three sixteen has always been associated with
him. So now the wrestling communityin the world, I think in general,
has has also put March sixteenth asStone Cold Day. Okay, So
do you have the favorite Stone calshe lost the memory? You know what
I do not? Yeah, I'molder than fine. Well, you remember

(24:17):
him when he was one before hewas rushing back the whole one real fast.
The Undertaker used to be a bouncerat it was it was caves now,
but it used to be uh whatwas it similar with an s escape?
Oh it was. People are goingto be all over me whenever they
hear anyway that bar. He usedto be the bouncer at that bar.

(24:42):
Community he was forever ago. Ohmy go what the guy that owned that
place. I can't call his nameright now, but anyways, but I
remember well then, yeah, yeah, back of the old Russel of the
von Eric. Yes, the box, the Iron Claw. Did you watch
the movie The Iron Claw? Itjust came ou It's streaming everywhere now.
I probably I highly recommend it.I've read it multiple times. I've seen

(25:06):
it. I've cried every time. It's yes. Well, I mean we
ask people who have grown up inthe Metroplex when all that was happening,
in all the tragedies, and soit's just a fantastic movie. Yeah.
Well Steve, Steve Austin, Yeahyeah, yeah, So what three sixteen
is normally his day of appreciation,So are celebrating on that day. We

(25:26):
don't have to know that that.I'll definitely come by because I'll be at
a brewery in Bedford afterwards. WhenI will, I imagine it's a long
day for you, so I imagineI'll be here. So no worries.
Now you can't, like I mean, you've talked about this entire interview.
You guys have been for forty fiveyears this year. Congratulations again, thank

(25:47):
you gravantic. But you guys havebeen the center of Arlington. Arlington obviously
has changed so much around you fortyfive years. What do you what do
you if you kind of seen that'sgrown in the community that you are just
like glowing about, and then whatare some things that you think that maybe
we could do better as a cityor you know, I'm not We're not

(26:10):
trying to EXPI but yeah, wellyou know the well the entertainments, you
know, and I know that therewas some controversy about the Cowboys Stadium,
of course, there were some controversiesabout the new ballpark. At the end
of the day, good gracious alive. That has kept the Orangton community and
economy vibrant, ye and exciting WorldCup games nine of them nine Cup games,

(26:34):
and so you know that is justan amazing It brings a diversity you
know, there's I don't know howmany millions of people back in the day,
we're just six flags over. Thanks. Yeah. And then and then
the old ballpark, the old ballpark, but old old, not the
not the Choctaw, but the oldold, yeah, old exactly. I
remember going there as a kid.The uh Nolan Ryan venturified. I was

(26:59):
there, Old Maga, you werethere. I was there when he had
his five thousand strikeout. You knowwhich he struck out? I think was
Ricky Henderson. Rick Henderson was inthat. But you know that entertainment deal
it uh you know, and that'sand then that's the baseball and the football
and the whole deal. Now youknow, the the us L, the
U the USL. Yeah, youwith we have extra football, which people

(27:22):
love football. So it's like yeah, so there you go. And you
know, Texas lived, that's awonderful place, so beautiful. So you
know the entertainment situation, you know, that brings me a lot of tours
and that helps the economy grow.I know that at one point Arlington Terrence
County, there was the only littlearea in the whole state of Texas that
was having any positive income positive youknow, tax income of Apollos stadiums,

(27:47):
yep, the States and the entertainmentYell, what could they do better?
You know? That's who am Iof sight? You know. I mean
you've I mean you've been here longerthan forty five years. You've been here
your entire lifetime. Yeah, I'lltell you one thing that I notice every
day and they or their traffic iscrazy traffic. I mean, we do
have almost four hundred thousand people livingin one city. Traffic is going to
be bad. And so you know, there's only so much thing you can

(28:11):
do with some of that, youknow. But uh, you know,
they Arrington is a can do city. I was saying that very true.
It's a can do city, anduh, you know, I you know,
people would shoot this and shoot that. But uh, you know,
I know there's a lot of commonbut you know, I don't. I
don't have any many access to grind. And we've been very fortunate here.
People have had an opportunity to growand go, you know, just out

(28:33):
in some areas they called this thedream city. They do, you know,
so but you know, I justnoticed the traffic going around more than
ever, you know. But it'sa it's a great place to uh,
you know, I've lived here mywhole life. That's uh. I was
lived here before I was a JayGulligan's bar and girl, you know,
so you know it's it's it's beengreat. It's been great. Yea,
I love it so much. NowI have a question. It's a little

(28:57):
off topic, but so there arepeople that are love your burgers because your
burgers are some of the best inthe city, has been voted for multiple
years. Well, good thing. But some people are allergic to gluten.
And so the question, I guessbecause so I had read that the veggie
burger was actually brought in because ofthe fact that someone would yes outside.

(29:18):
So that's a good point. CountNow we do a gluten free bun,
do you well, but we don'tyou know that. I'm glad you brought
that up because we do have aveggie burger, but you know, we
do need to keep when people havelike we do some catering. Yes,
Lottarties, it will come here eitheron promise or offerings, and so we

(29:38):
go to Whole Foods or Kroger orsomething like that to make special trips to
get gluten free. Thought on it. I'm a burger Now that that's a
good idea. We should offer thatevery day. They got what we what
we do do because day in andday out people will ask about that.
Now. You know, we doa we do a grilled chicken, right,

(30:00):
don't do any marination. So wedo a grilled chicken. We do
a lettuce and tomato salad on andwe'll do something like green beans with those
seasons. So we we do allfor a gluten free h corn tortillas,
we do a corn tortilla, andwe do a we do a taco.
We do a black bean veggie taco. Then we can use a corn taco
for the gluten free if vegan. We don't put cheese or dairy products we

(30:23):
go so but you know what weneed to be able to you know when
you go get a gluten burger atWhole Foods or Grog during the frozen's department.
Yeah, so that's what I needto do. I just need to
go buy you know, you knowa handful of those because we do the
veggie burger. We do acknowledge,Uh, we have a garden salad you

(30:44):
know for for vegetarians and for vegans, don't put the egg on it.
Maybe you know they don't do thatday. So, yeah, you know,
you have to be aware of people. My daughter is allergic to peanuts
and she's allergic to this out andthe other. So you have to be
aware of that and this environment. You sure do. Yeah, so we
we're doing that and on special requestswe do it. But we we could

(31:04):
do the cour We have the quarantinasall the time. I need a gluten
free burger all the time. Well, I'm glad I brought that up.
Now we have a segment show it'scalled the Tournament of Toppings, trying to
find the best pizza place in Arlington. As you've been here, your entire
life is your Do you have afavorite pizza place? You know what?

fantastic. Well, I have todo. I'll have to try that place.
And I haven't tried the one onand Kane, but I I have
one and for work what's good too. So it's good. Yeah, but
