Incoronata "Miss Lombardia", partecipa a Miss Italia nel 1997 dove si classifica settima. Annalisa Minetti trionfa al Festival di Sanremo nel 1998 con la canzone "Senza te o con te". Nel 2012 conquista la medaglia di bronzo nei 1500 metri alle paralimpiadi di Londra, stabilendo il record del mondo della categoria ciechi e viene nominata Cavaliere dell'Ordine al merito della Repubblica italiana. Nel 2015 gareggia ai campionati del mondo di paraciclismo su strada in Svizzerae e nel 2017 alla Maratona di Roma conquista la medaglia d'oro. Negli anni scrive vari libri e partecipa a vari talent show.
