Nato a Cles, in Trentino, è un egregio ciclista professionista italiano. Campione del mondo su strada nel 1988, Maurizio Fondriest ha vinto due volte la Coppa del Mondo, nel 1991 e 1993. Tra le sue principali vittorie oltre al mondiale, c'è la stagione d'oro del 1993 di cui vince la Milano-Sanremo, la Freccia Vallone, il Campionato di Zurigo e a fine stagione la Coppa del Mondo. Le sue buone qualità, oltre che negli allunghi finali, anche in salita, discesa e soprattutto a cronometro, gli permettono di ottenere il quarto posto alle olimpiadi di Atlanta nel 1996. Attualmente svolge l'attività di produttore di bici con il proprio marchio, oltre a fare il commentatore sportivo per alcune reti televisive.
