here and then no one ever I didn't get like

get flooded out and was probably on its way to

you just get pulled over by a copy like, oh,
did I not use a blinker. I got pulled over,

with this is my fault. But the result was ridiculous.
So I got pulled over because my tags were like

got that going on. I didn't renew the sticker on
my old car until I got my new car. Well

months something like that, and every time I saw it,
I was like, oh, gotta go and do that. And
then I was like, okay, something else got pulled over
in Rocky River. I'm like, what what the heck? I
was like sitting in traffic and guy pulls me over
and he's like, you realize your tags are expired? Right,
And I got yeah, sir, I was, I'm an honest guy.
I was like, yeah, I did realize that, you know,

have to discard your license plate. Gotta get rid of
the plate, got to get rid of the plane. I'm like,
that seems wasteful. That dast seem weird. It seems very wasteful.
And then he's like, well, you also haven't got an
eat check, so we're gonna have to impound your car.
That's wild to me, and I'm like, I'm sorry. So

I had to sit there like a sad sap in
front of Savers on whatever road that is, and I
called an uber. My end to add like insult to injury.
My uber took twenty five minutes and then canceled on
me within three minutes out. Then I had to wait
another twenty five minutes for another uber, And I was like,
can I just like drive home and then can you

just drive to an eat check spot? You can renew
your tags online. That'd be good to know, And yeah,
I don't know. It was ridiculous. It was ridiculous. So
you had to then they've taken your vehicle. My vehicle's gone.
You've hitchhiked ho. Yeah, you had to go get a
temp tag because your old license plate was garbage. Yes,
take that temp tag to the impound lot yep, pay

all the fees that are associated with your car being impounded. Yeah,
then put the temp tag on and go directly to
an E check. I add like a month. You had
a month to go to temporary So they took your
car the impound Yeah, right right away, Yes, like they
were like within within immediately within twenty minutes of getting

pulled over. Yeah, the tow truck was there, but also
another emissions point. But tow truck. Once you get your
temp tags and you get your card of the impound lot,
you didn't have thirty days to go get a knee check. Yeah.

Matt Fish, the owner of Melt, been a friend of
the show for years, from the old iteration to the
show to the new and well. He's been making headlines

over the past couple months, some locations shutting down, all
of them actually, except for one. And here to tell
us all about that revamp, the grand opening, which is
happening Monday at eleven am. He's the grand cheese meister himself,
the master of the grilled cheese, owner of Melt Bar
and Grilled. To Matt Fish, Matt, how are you.

I'm fantastic, I'm well, I'm tired, I'm over work, but
I'm I'm ready. I'm ready and able. I'm doing it.

The big revamp, regrand opening, whatever you want to call it,
the Og Melt. All the grilled cheese lovers are are
excited because Monday, Melt is reopening in the OG spot
in Lakewood. Matt tell me all the things.

Yeah, Monday, September ninth, we are reopening. We've been closed
for a week. We closed from the second to the eighth.
We did a pretty hefty, pretty ambitious renovation project. The
space needed another facelift. We wanted to modernize it a
little bit. You know, the building we're in is over
one hundred years old. We've been here, believe it or not,
almost eighteen years worth proteen. This October. This October will

be our eighteenth year anniversary of the operations of Melt
Barn Grilled from the original and we're back. We're back
at only the original store. Like it or not, fortunately
or unfortunately, you know, we've we've backtracked over the last
five years, and we have gotten out of our leases
or closed our stores all around the state and all
around the city. And I decided personally and professionally that

the best thing for me to do is to go
back down to one location, run it with my key staff,
myself and fifteen to twenty other people, and just kick
butt and just do it the way we used to
do it, you know, do fantastic food, fantastic service, fantastic atmosphere.
Back at our roots here in Lake With, Ohio. Back
to a neighborhood bar and grilled, you know, creating regulars again,

seeing people every week, every day, and just becoming part
of the community, not only community in lakew but the
community and greater Cleveland again.

Well, and you guys have always done such a great job.
I know talking to you and knowing you over the
years from my from the first day the Fabulous Food
Show when we competed together.

At one I remember that, Yeah, yeah we did, we won.

I just remember talking behind the scenes. You have always
had such a focus on your quality of food needs
to be where it is. It was never for you
about how many you know it was you had a
bunch of stories, but that wasn't what it was for you.
It was how many How can I do that and
still have a great quality. You told me all about

your behind the scenes, the whole commissary thing where you'd
like make everything on one spot and dish it out.
So I'm sure that added so much stress to your
life that you're like, oh no, so is there Ah,
Is there just a sense of relief of just getting
to focus on what you love and that's making delicious, melty,
cheesy goodness for Northeast o hiters to enjoy.

Speaker 3 (25:33):
Yeah, there is, there is. It's it's it's I feel
like there's a big burden and a big responsibility is
off my back and it takes out all the variables
you know, it allows us to get back to what
we do best, and that's creating culinary It's a culinary
driven restaurant, a service driven restaurant. And we've always been
a unique restaurant. We've always had a unique product. It's
always been fun, it's always been adventurous. And you know,

we're changing some stuff. We're changing some things around. I'm
Melt eighteen years old, so we want to grow up
a little bit. We're polishing up. We're polishing up every
thing we do. Because a lot of people say they
remember Melbourn Girl eighteen years ago, but my memory doesn't
go back that far. Oh I does, because I was
here every day. But you know, we focused on every
aspect of what a quality restaurant should be when we

(26:14):
first opened up. And you know, admittedly, you know, things
did slip as we as we expanded throughout northeast Ohio
and we expanded throughout Ohio, and the quality of the
product was still there, the brand was still the same.
But when you when you go from one store to
ten stores in less than fifteen years, you know some
things have to change. You cannot be the same restaurant.
And when I started my restaurant career almost thirty three

(26:36):
years ago. I was not a high volume cooking guy.
I was not a volume restaurant guy. I liked the
small Mama Pops and that's that's what I came up in.
And any big chain restaurant that I did work in,
I just never liked it. So I got out of
it really quick, and I was gravitated towards small, specialized
So that's why I opened Melbourne Grow in the first place,
was to create my own, you know, stamp on the

(26:57):
Cleveland culinary scene and say this is who we are.
But we're a small store. We only see one hundred people.
We do this, you know. And as I started to expand,
I realized quickly that that just wasn't the direction I
wanted to go. But the brand had taken itself that direction.
And you know, the way, we're riding the wave out
and when opportunity knox, you know you you you ride
the wave. And that's what we did for many, many years.

(27:18):
And then here comes the pandemic, then nobody expected, and
here comes all the woes and the issues that come
after the pandemic, and it just became harder and harder
and harder to run a multi chain restaurant group. So
I decided to you know, shut everything down, you know,
and said, hey, I want to go back to quality.
I want to go back to the way things used
to be. And it's certainly not going to be the

(27:39):
way things used to be. We can't recreate lightning in
a bottle from eighteen years ago, right, you know. But
we are still Melt Bar Grilled. We are still a
gourmet grill cheese restaurant. But we're going to focus on
high quality of those sandwiches and we're going to add
in a lot of other things that we never did
before that go along with that, go along with the brand,
that go along with the type of restaurant that we're
trying to create, and we did create, you know. So

(28:01):
it's gonna be fun. It's gonna be really good. I'm
looking forward to the people of Lakewood and northeast Ohwiden
coming and checking us back out again. You know, if
you haven't been to Melt in a very long time,
please come back, because it's gonna be very different and
it's gonna be very good. But if you're a regular
at Melt, there's gonna be a lot of things that
are familiar to you, and there's can be a lot
of new, adventurous things that that we've never done before

(28:22):
that I'm hoping will shock in awe and delight people.

Speaker 1 (28:25):
I like it. I like it. So I mean, what
what do we have to look forward to the first
time we crack the doors and we bust into this
new melt. What's gonna look different, what's gonna taste different
in the ways that you're excited to share with us? Oh?

Speaker 3 (28:38):
Well, the we did We did all new paint colors,
so there's a big look change to it. We were
going to clean it up. We're gonna polish it up.
It's not gonna be as busy and gaudy. I hate
to use that word as it was. So new paint colors,
new lights, new fixtures, new furniture. We redid the We
redid the Harvard floors, which are beautiful and fantastic. You know,

(28:59):
we we've got a lot of good bones to work with.
Like I mentioned, we're in one hundred plus year old building.
So we've got original tense in the original crown. We've
got original brick in here. We've got you know, a
great hardwood floor, so we're doing a lot of fun,
cool things. So that's gonna be big and different. The
service levels are gonna be increased, They're gonna be polished.
You know, we're we're picking the best of the best

(29:20):
for our staff and we're training them, and we're we're
redoing our menu. It's gonna be a pretty hefty overhaul.
You know, we're gonna have a still gonna have a
good amount of sandwiches on the menu, but they're gonna
be approached differently. They're gonna be approached each individually as
a culinary kind of journey on their own. So in
the past, what Melt did is like, let's put as
many things on the menu as possible, and this make
it as easy to execute. So all the bread was

(29:41):
the same, and all this was the same, and you know,
all the amounts of cheese and the sandwich are the
same and all this kind of stuff. But each sandwich
here is going to be well composed and looked at
as an individual dish. So so we're gonna have different
breads to play with. We're gonna have buns, We're gonna
have hokeep rolls, We're gonna have different sauces, they're gonna
be very composed. They're not gonna be as big and
as aunt as they've been in the past, because, you know,

(30:02):
one of the things that one of the critiques we've
always gotten is that too much food, or I don't
eat like that anymore, or you know, hey, you know
I love melts. We used to come to you guys
all the time, but you know, we just don't come
as often as we used to because I don't eat
like that anymore. There's too many calories, too many carbs,
too much cheese, too much, and we've been known for excess,
and I think that's that's been a very positive thing
for us, but it's also been a very negative where

(30:23):
it turns some people off where they're not going to
Melt for an everyday dining experience, They're coming to Melt
for a special event, or hey, it's my brother's in
town from Nevada and he's never been to MELT for
or I moved away and I come home to visit
my folks. I go to MELT once a year for
the holidays. That's great. I love those people. I love
when people visit us once or twice a year. But honestly,
we can't pay our bills on people come to see

(30:45):
us once or twice a year. You know, we need
we need Northeast Ohio to embrace us again, and we
need to get back in everyone top ten list of like, hey,
we dine out once or twice a month. Here's here's
the ten restaurants that we always go to. Let's pick one,
you know. And I don't think Melt's been on a
lot of people's lists like that for a very long
time because of the kind of restaurant we became. So
we're I want to get back and have regulars again.

(31:06):
I want to get back to know my guests and
listen to what they have to say and change things
on a daily basis, you know, which we used to do.
But as you get bigger and grow, you can't do
that with ten restaurants. It's impossive. It's impossible.

Speaker 1 (31:18):
So I mean, it sounds like you've you've literally stepped back.
You looked at Melt Bar and grilled You're like, all right,
let's shake it all up, and let's let's try something
completely different and still but still be Melt. When it
comes to me, it's you, You've evolved, This is Melt
we've been twenty twenty four.

Speaker 3 (31:34):
This is MELT two point zero, you know, and it
is we We've evolved. I'm not the same person I
was eighteen years ago. I highly doubt you're the same
person you were eighteen years ago. And I guarantee everyone
listening to us today they can if they can honestly
say they're the same person as they were eighteen years ago,
they're probably lying. You know, it's hard to get You
can't go back, you can't recreate that stuff. And you've
got to evolve, and you got to change, you got

(31:55):
to mature, you got to grow up, and some things
stick with you throughout your life and some things just fall.
So we're taking what we think is the best of
the best of everything we've done for the last eighteen years,
and a lot of things are going to fall away
and we might bring them back so often, you know,
to please you know, some regulars, or hey, I really
want to see the sandwich again, and we might do.
You know, this gives us the opportunity to do a

(32:15):
lot of a lot of weekend specials or weekday specials,
or hey, we're going to run this for a couple
of weeks or We're just doing this today and when
it runs out, it runs out, you know, so we
can kind of promote that and give people an incentive
to come into Melt today for this. But again, I'm
not the same person as it was eighteen years ago
in Melt. It's certainly not the same restaurant as it
was eighteen years ago. And I'm fine with that, don't

(32:35):
I don't want to try to recreate what Melt was.

Speaker 1 (32:38):
Yeah, I want to.

Speaker 3 (32:40):
I want to stop and say, hey, the past is
in the past, and I love the past, and I
don't regret anything I did. I'm very happy with the
present of where I'm at. But I'm really excited about
the future, you know. And that's how I've always lived
my life personally, and that's how I'm living my life
in my profession.

Speaker 1 (32:54):
Will you sound invigorated, You sound excited, And I can't
tell you how pumped I think we all are to
come experience this, this Melt two point zero. When you
guys open up on Monday, It's it's exciting. It's exciting
to have just a new, a new life breathed into
such a staple of Cleveland and Northeast Ohio. I can't
wait to get out there and eat all the Jesus Matt,

(33:16):
if I'm being honest.

Speaker 3 (33:17):
Yeah, please see Yeah, send me attacks or call me
when you're when you guys are head now. And Yeah,
I left the I mean I will be here because
I'll be here most days anyway.

You're not leaving that place, you know, for at least
six months.

Yeah, I've been here a lot. It feels like old times.
It feels like I love it. I mean, I still
have memories of our first opening. I still have memories
of me being in this space by myself, renovating the
space myself when we first opened up for months, getting
it ready for the grand opening back in you know,
September twenty second, twenty twenty six, was going to be
grand open. So we're just, I mean, we're up against

(33:48):
so eighteen so literally we're opening up. We're reopening again
within thirteen days, thirteen days of the original which was
September September twenty second, two thousand and six, and we're
regrand opening on September ninth, twenty twenty four. So yeah,
thirteen days, so it's almost to the day we're doing
I couldn't time at that I wish I could have
timed it even better, but I couldn't put it off

(34:09):
any longer.

Speaker 1 (34:11):
The people want to cheese, Matt. We want to grilled cheese.
We want the new things, and we can't wait. What
time our doors open It on Monday eleven am.

Speaker 3 (34:19):
Or during lunch and dinner days a week so yeah,
eleven eleven to ten where will be our weekday hours?
And eleven no, sorry, eleven to nine and then eleven
to ten on the weekend.

Speaker 1 (34:29):
That's fantastic. We can't wait to try it, Matt. Of

of well who we are and what we do is

was stating at the Fountain Blue in Vegas and allegedly
used a homemade flamethrower to set off the building's sprinkler system,

which led to a counter terrorism investigation. His name was Gavin.
He's twenty six and charged with as salt with a
deadly weapon arson and oh look at that drug possession
this past Sunday. Someone called nine to one one to
report the disturbance, please say. When staff approached mister Gavin
in a stairwell, he used the device to spray a
flammable liquid at them, covered in a black, oily substance. Now,

(38:39):
he told officers he was trying to escape from two people,
and he used his flamethrower to try to open a
locked door. It's now how that works and which didn't work,
but triggered the sprinkler, releasing only blackwater. They found bog's
buttane and oh meth pipe in his backpack. Hamilton admitted
to creating the flamethrower being held on thirty four grand
bail over the Clark County Detention Center. You know what,

I didn't realize smoking meth could make you want to
