delicious and very healthy, and Icall it my Superpower Salad. And it's
a combination of different recipes that Ihave in my book. And what I
wanted to do is really plug ina lot of fiber and plug in the
(00:24):
cruciferous vegetables which are great for you. So this new wholesome salad has both
kale and spinach, high fiber andcruciferous red cabbage, and its plant based,
so it has high protein at amammy and quinoa, sweet carrots,
and the delightful crunch of cashews, all partnered with some cooked kuma, which
is also source of protein. Hereare your ingredients. You're going to take
(00:44):
eight cups of chopped kale, fourcups of red cabbage, one and a
half cups of shredded carrots, oneand a half cups of frozen shelled at
a mammy thod, one and ahalf cups of cooked and cooled kuma,
and sprinkle on top a quart ofa cup of chopped cashews. Mix that
all together. What about the dressing, that's the best part, Right.
So I have a great Asian vinagrettewhich is found in my book. I
(01:04):
believe it's in a cabbage slaw. And it's a combination of two tablespoons of
reduced sodium soy sauce, a tablespoonof maple syrup, a tablespoon of rice
wine vinegar, tablespoon of sesame oils, and some fresh ginger. Drizzle that
vinagrette over the salad and you've gotthe most amazing, healthy power salad.
