Hello, and welcome to Connoser's Corner. I'm Jordan talking with
George Howell, a first rate coffee innovator right here in Boston,
and George talks about how the coffee industry has evolved.

Coffee has been evolving and becoming much more sophisticated. The
processing of coffee, removing the beans from the fruit, which
is a very complex, tricky affair to do, that has
been massively improved over the last two or three decades.
So now you're starting to get experimental processes as well

(00:33):
in the removal of the bean and changing the flavors
of the beam. So you're seeing really sonic flavors come
out with coffee that just weren't there before. To the
point where we're about to put on all our bags,
not just three word descriptions of certain flavors, certain notes
that you can get in a particular coffee, but we're
about to make it visual. If you buy Central American coffee,

it's a kind of a coffee coffee. It's ninety percent
coffee flavor and then a little bit, maybe a dash
of citrus, a dash of something else. Today coffees cover
a much wider variety. You can have something that's like
fifty sixty percent coffee flavor and then fruitnotes to it,
really sweet, striking fruit notes as well. The diversity, the

rainbow of flavors and coffee has really increased dramatically.
