Speaker 1 (00:03):
Welcome. It's Jordan Rich with Connoisseur's Corner in a multi
part series with George Howell of George Howell Coffee. Who
knows a thing or two about a great cup of Java?
And I drink my coffee black? George, what do you
say to that?

Speaker 2 (00:14):
If it's a good coffee, I want to drink it
black because it's a discovery. And something a lot of
people don't know is that you know, when you first
try coffee brewed, you can start to barely sip it
because it's so hot at about one hundred and fifty
five fahrenheit. It's not until coffee reaches about one hundred
and thirty one hundred and twenty fahrenheit, so much closer
to body temperature. That's when you're getting all the flavors

(00:36):
of coffee. One. I want people to be black coffee drinkers.
Most have no idea how amazing the coffee can be
a really good quality one, and how it can change
as it goes from hot to cool. Flavors start to
emerge that you at first don't notice when it's hot.
When it's hitting about one thirty one twenty, nothing's been

(00:57):
done to them. This is out of the earth and
is processed cleanly. They can have floral notes that are
suddenly hitting you surprise. Different varieties pink, poor bon or geisha.
One gives you jasmine like notes, another one floral notes
of rose if you will, blueberry, BlackBerry. All of these

(01:17):
start to emerge as the coffee cools. Don't chudge a
coffee when it's hot, chudge.

Speaker 1 (01:23):
It when it's cooling. Thank you, George Howell. Go to

connoisseur is Gorner WZ Boston's news radio

Ruthie's Table 4

Ruthie's Table 4

For more than 30 years The River Cafe in London, has been the home-from-home of artists, architects, designers, actors, collectors, writers, activists, and politicians. Michael Caine, Glenn Close, JJ Abrams, Steve McQueen, Victoria and David Beckham, and Lily Allen, are just some of the people who love to call The River Cafe home. On River Cafe Table 4, Rogers sits down with her customers—who have become friends—to talk about food memories. Table 4 explores how food impacts every aspect of our lives. “Foods is politics, food is cultural, food is how you express love, food is about your heritage, it defines who you and who you want to be,” says Rogers. Each week, Rogers invites her guest to reminisce about family suppers and first dates, what they cook, how they eat when performing, the restaurants they choose, and what food they seek when they need comfort. And to punctuate each episode of Table 4, guests such as Ralph Fiennes, Emily Blunt, and Alfonso Cuarón, read their favourite recipe from one of the best-selling River Cafe cookbooks. Table 4 itself, is situated near The River Cafe’s open kitchen, close to the bright pink wood-fired oven and next to the glossy yellow pass, where Ruthie oversees the restaurant. You are invited to take a seat at this intimate table and join the conversation.
