Super-soft gluten free orange cake:
Cook time: 60 minutes
Prep time: 180 minutes
Serves: 8-10
3 small oranges
6 eggs
1 cup caster sugar
2 1/2 cups ground almond
1 tsp baking powder
Pinch of smoked flaky salt
Garnish:
1/2 cup whole almonds, roasted and crushed
2 tbsp icing sugar
Start with the longest part of the cake by cooking the oranges.
Place the oranges into a large pot of water and cover with cold water. Bring to the boil and turn down to a simmer for 1 hour. Adding more water of required.
Preheat a oven to 160*c
Take a 22 cm cake tin and line the bottom with a round of greaseproof paper, then spray the rest of the tin with some cooking spray.
Chop the cooked oranges and place into a food processor, blend until smooth.
Beat the eggs with the sugar until frothy and add in the blended orange and pinch of smoked flaky salt, fold through the almond meal and baking powder.
Pour the batter into your tin and place into your oven. Bake for 60 minutes or until a skewer removes clean.
Turn the cake out and garnish with crushed almonds and dust with icing sugar. Enjoy!
