She can be sometimes be found teaching cooking classes at various cooking schools.
Elizabeth’s 2005, independently-published cookbook introducing her revolutionary, patented cooking concept spent more than eight weeks on the Local Bestsellers list and garnered multiple awards.
The latest edition of her cookbook, Glorious One-Pot Meals: A Revolutionary New Quick and Healthy Approach to Dutch Oven Cooking, was released from Clarkson-Potter (a Random House imprint) on January 6, 2009, and has now sold more than 60,000 copies. Elizabeth’s unique cooking method and inspirational story has been featured in numerous magazines, newspapers, television shows,online,and on the radio.
As director of the Fight MS with Food project, Elizabeth oversees diet-based research and options for managing multiple sclerosis by focusing on the connection between food sensitivities and auto-immune diseases. As a social entrepreneur, she searches for ways to offset the participation fees for the financially-stressed MS community so that economics are not a barrier to achieving health.
