🌿 Lunch Recipe:

Ingredients (serves 2):

4 large romaine lettuce leaves (washed and patted dry)

1 ripe avocado, sliced

1 tin sardines (packed in olive oil or water), drained

½ small cucumber, thinly sliced

2 small radishes, thinly sliced

1–2 tbsp fresh parsley, chopped

A few slices of red onion (to taste)

Juice of ½ lemon

1 tsp apple cider vinegar

Pinch of chili flakes

Sea salt and black pepper to taste

Optional: drizzle of olive oil or Dijon mustard for extra richness

Directions:

  • Lay out romaine leaves on a plate or cutting board.
  • Add avocado slices down the center of each leaf.
  • Gently flake sardines on top of the avocado.
  • Top with cucumber, radish, red onion, and parsley.
  • Drizzle lemon juice and apple cider vinegar evenly.
  • Season with chili flakes, salt, and pepper; add olive oil or Dijon if desired.
  • Fold like a taco or roll burrito-style and enjoy fresh.

Pro tip: If the sardine flavor feels strong, add extra lemon or parsley to balance it beautifully.
