Welcome to Day two Session one of the Interpreting Wine Hospitality Summit 2020. Today is all about restaurants and we start with a long overdue visit to Tredwells to speak with Chef Owner Chantelle Nicholson. We first hear her origin story and transition from studying law into various roles in hospitality. Looking at her up to date ideas for what a restaurant can be, which has developed during lockdown. We talk about the circular economy and the passion that Chantelle has for supporting local producers. Chantelle takes us inside decisions she made at the start of lockdown and discusses how the team kept on the same page and communicated throughout. She discusses how they reopened and thoughts on keeping staff engaged throughout. Chantelle shares the triple whammy her part of Central London is suffering and how this contrasts with London neighbourhoods. What people learned about food during lockdown and how their buying habits may have changed for good. We talk no-shows and how the industry might start to change perceptions.
