·     Homemade dressings provide control over ingredients—healthy fats like extra virgin olive oil, avocado oil, tahini, and flavor boosters like citrus, herbs, and spices can make salad both delicious and nutrient-rich.

·     Sodium content in dressings can be surprisingly high; those sensitive to salt or with high blood pressure should pay particular attention.

·     Simple homemade dressings, such as olive oil with lemon or a basic vinaigrette, are easy to make and store in glass containers.
