Speaker 1 (00:06):
Hello friends,
welcome back to episode 302, and
today we are doing the bestedibles for summer.
Welcome to Bite Me, the showabout edibles, where I help you
take control of your high life.
I'm your host and certifiedgonger, margaret, and I love
helping cooks make safe andeffective edibles at home.
(00:27):
I'm so glad you're here.
Welcome back, friends, to BiteMe, the show about edibles, a
podcast that brings you theintersection of food, cannabis
and culture, helping cooks makegreat edibles at home.
I'm not a professional chef, soif I can do it, you can do it,
and I say that the most lovinglyway possible.
I enjoy cooking, I really do,although I will admit that I did
(00:49):
not really start to get intobaking until I started making
edibles, because that's just theway it is.
I wasn't really into bakingbefore I could get high from
doing it.
I did do a lot of bread baking,of course, which I did not
infuse, but yeah, that's how Ireally got into baking.
Even though I've done baking alot throughout my life, I do
(01:11):
have a lot of fond memories ofbaking with my grandmother
because, when I was a teenagerespecially, she would have us,
my sister and I, over to herhouse, oftentimes one at a time
so that she could spendone-on-one time with us.
And I came from a prettyrestrictive household, if you
will, because I grew up in areligious household and one of
(01:31):
the great things about mygrandmother is how open-minded
she was and she would always letme play the music that I wanted
to play, so she wouldn't sayanything about it.
She may have said, actually, now that I think about it, she
may have occasionally said likeI don't really get it or
whatever, because I grew up inthe nineties and there was a lot
of great grunge music at thetime and I listened to all that
(01:54):
stuff and it was not somethingthat my parents liked me
listening to.
I remember they tried to get meinto a little bit of Christian
rock at one point, which justisn't the same when you're
listening to Pearl Jam andNirvana and Soundgarden and all
these bands, the Christianequivalent is not going to cut
it.
But anyway, my grandmotherwould let me play this music
(02:14):
while we baked together and itwas awesome and I credit in a
lot of ways my grandmother toinitially giving me this
interest in baking, even thoughI didn't really get into it
until after I started makingedibles.
I mean sure, I baked cookiesand stuff and, you know, made
the occasional cake and all thatkind of thing, but I didn't
really start to bake a lot untilI started making edibles.
And I credit her also tohelping me learn a lot about
(02:38):
conversions.
Like the only reason I knowthat a teaspoon is five
milliliters is because I bakedso much with my grandmother
because I think she didn't knowwhat else to do with us when we
came over as teenagers.
And I recall going over andwe'd do like three or four
recipes in a row and we'd beable to taste, test and enjoy
and a lot of it would go intothe freezer for special
(02:59):
occasions when she had familyover and stuff like that.
But it is definitely a fondmemory.
And of course, another thingthat I credit to my ability to
do conversions is buyingcannabis off the street.
That is correct.
I mean, the only reason youknow there's 16 ounces to a
pound or 28 grams to an ounce,is because of cannabis.
That's the only reason.
Or 454 grams equals a pound.
(03:20):
I mean you might learn thatfrom butter as well, but in any
case, where was I going withthat?
I'm not even sure.
I'm so glad that you're here Ifyou're tuning in for the first
time, this will be a fun episodebecause it's sort of a roundup
of some of my favorite summeredibles.
This episode is coming out inthe first week of June and we're
finally going to be gettingsome great weather.
Here in Ontario, which is whereI'm located, we've had a pretty
(03:43):
rainy spring so far, butsummertime is a time that
Canadians in particular reallyyearn for.
So when summertime hits, wewant the edibles that we're
enjoying to reflect our mood, our vibe, our summertime
activities, and so this is goingto be a great roundup episode.
Now that I've been doing thispodcast for a few years now.
I have accumulated a prettylarge repertoire of recipes that
(04:04):
I've been doing this podcastfor a few years now.
I have accumulated a prettylarge repertoire of recipes that
I've done over the years and Iam going to be sharing some of
my favorites.
I mean, I was going throughquite a few of these recipes and
episodes that I've done in thepast and it really was hard to
narrow it down, but I tried tofind some that I think you would
find useful.
And, of course, if you you arelistening and you've been a
(04:24):
longtime listener, I really doappreciate you because this
podcast would not exist withoutyou and if you want to continue
the conversation.
I started the Bite Me CannabisClub because podcasting can feel
pretty lonely sometimes and, ifyou're interested, I can show
you more about what it's aboutover at joinbitemecom and I
encourage you to check it outbecause we will be talking more
(04:45):
about this over there.
Before we get into summeredibles that slapped today, I
just wanted to share a couple ofthings with you.
I got a new rating and reviewand it was five stars entitled
Great Love the Show, much Lovefrom Melbourne Australia, and
(05:08):
that came from Spencer01.
And thank you for the love fromMelbourne Australia.
It's so crazy to think thatthis podcast really is a
worldwide podcast and there'speople from all over the place
that are listening to it and Iappreciate you taking the time
out to create a review and thatreally does help spread the word
(05:29):
about the show.
I am a pretty niche podcast,it's a small podcast.
These reviews really do helpspread the word about the show,
as does sharing this episodewith somebody that you think
would enjoy it.
So if you think someone outthere would enjoy this episode,
please share it.
You can open up your phone andtext it to them right now, and
that helps a lot too.
The next thing I wanted to coveris I got some fan mail that I
(05:51):
thought you folks would findinteresting, and this one comes
from a listener in Rochester, new York.
Hey, margaret, I just listenedto your podcast about the
infusions and trials and teststhat you did.
One of the things you forgot tomention was the coloring in the
shorter infusion.
Did you notice whether or notthe color was deeper, darker or
(06:14):
the same?
By way of this, this came fromWayne in Rochester, new York.
I really appreciate thatcomment, wayne, because it never
even occurred to me to talkabout the coloring of these
experiments that I did, and I amhappy to answer that question.
And if you haven't listened tothat episode, I would really
encourage you to listen to thatone, because it will save you
time in the kitchen.
It is this research that hasbeen coming out, spearheaded by
(06:38):
Vanessa Lavorato, who I also hadon the podcast recently.
We talk about that in ourinterview together as well and
she did a bunch of research forher book how to Eat Wheat and
have a Good Time, and what shefound was that 30 minutes would
extract most of the cannabinoidsin any infusion that you're
doing.
I have typically done atwo-hour infusion as per the
(07:01):
usual advice out there.
When I had her on the podcastand she told me this and I have
her book as well I was like Ineed to try this out for myself.
So I did a few experiments onmy own just to confirm what she
was telling me and, lo andbehold, she was right.
I did two experiments withbutter and and with olive oil,
(07:23):
and I did one 30 minute infusionfor each and one two hour
infusion for each, and I used mytea check to test them both and
it was astounding.
The difference in the two the30 minute and the two hour
infusion was pretty marginal.
Now, this isn't to say you can'tgo ahead and infuse for two
hours if that's your routine andyou're happy with it, but just
(07:44):
know you're not necessarilygoing to be extracting out that
much more cannabinoids, and soyou can really save time,
especially if you're wanting tomake an edible on the fly.
You know you've decarbed andinfused and you want to make an
edible all in one sitting.
This can save you so much time.
You don't have to wait the twohours to get most of the
cannabinoids out Now again, I gomuch deeper into that in the
(08:06):
episode on 30-minute infusionsand some of the science behind
that.
Now that I dug into it and, ofcourse, big shout out to Vanessa
Lavorato, who has discoveredthis and is sharing is helping
us save all this time in thekitchen.
Her book is fantastic as well.
If you haven't checked that out, it is a great cannabis
cookbook to have on your shelf.
But she does get into a lot ofthe science that she found in
(08:27):
her own research when she wasdoing all these lab tests, and I
believe she did over 200.
So I did a couple just to seefor myself because I was curious
.
She did over 200.
Yeah, vanessa is the OG formaking this realization that we
don't need to spend so much timein the kitchen.
But to answer Wayne's question,I did not notice a difference in
the coloring.
Now, that could be because Iwasn't necessarily using a ton
(08:49):
of cannabis and if it was, youknow, if I was using a lot more
cannabis in these infusions, maybe the color would be darker
for the two hour infusion.
But I just had to run up andlook at my own butter infusions
in particular, because the oliveoil pretty much looks the same
as well, but the butter wasalmost identical in color, so I
didn't notice a big differencethere.
You may experiment on your ownand see what you find.
(09:10):
There could be a few factorsinvolved in that.
The longer you infuse for, themore you're going to be
extracting out things other thanthe cannabinoids, like the
chlorophyll that will give itthat green taste.
So there are a lot ofadvantages to having that
shorter infusion time.
So check out that episode.
Save time in the kitchen, because now that summer is here,
baby, we are going to be outthere enjoying the beautiful
(09:35):
weather, and I have some ediblesfor you that will help make
your summer.
Let's get into it Now that thesun is out and the days are long
.
I really do love this time ofyear because leading up to
summer solstice, which is June Ithink it's June 21st this year
that is the longest day of theyear, and it'll be bright out at
(09:57):
like after 9pm here, and I justlove those lazy summer evenings
.
I'm sure many of you out theredo as well.
But it's the perfect time totalk about cannabis infused
treats for the hot days, thebeach days, the backyard
barbecues.
I love a backyard barbecue, andso I've shared a bunch.
(10:19):
So today we're going to betalking about a bunch of my
summer ready recipes that willhelp you enjoy the summer to the
best of your ability, and I'mbringing it all together in this
one episode.
So I will, of course, be doingmore episodes all summer long,
every Thursday, as you've cometo expect, but these ones are
ones that are going to help youbeat the heat, are great for
(10:40):
seasonal activities that we'regoing to be enjoying.
Let's get into it, shall wefriends, to kick it off.
I mean, the one thing that Ioften think in the summertime is
beverages, infused refreshments, and we know that edibles
aren't just brownies and gummiesanymore, thank goodness,
because the summer is theperfect time to get creative.
Also, because it's just toodamn hot to be turning on the
(11:01):
oven, isn't it Another bigreason why I tend to lean
towards some of the fresherstuff, non-baked items, in the
summertime, because it's justtoo warm to be turning on that
oven.
So I have a few that I thinkthat you will enjoy, and the
first one that comes to mind isinfused mojitos.
Now, I did this for an episodenot that long ago, actually.
(11:24):
I can tell by the photos in thepost.
I love a mojito and this was anon-infused version.
And if you have those herbsgrowing in your garden then it's
even better, because I didplant a bunch of herbs this year
in a pot on my deck Mint, parsley, basil, rosemary, I
think that was it, with theexception of the parsley.
(11:47):
It was mainly because I hadread that they do help repel
mosquitoes, which are a hugeproblem where I am, which can
really ruin a summer evening, asmany of you probably know.
You're trying to sit out onyour back deck and enjoy the
summer vibes, the summer warmth, and around dusk, those
mosquitoes just like to come outand make a nuisance of
(12:08):
themselves and ruin a perfectlybeautiful evening.
So I had heard that this helpedand so I planted them, because
also, who doesn't love freshherbs in the summertime?
So that was partly my rationale, and so this summer mojito is a
perfect one to enjoy.
Now there's also a fruit kvass.
For those of you who areinterested in some of the more
(12:28):
fermented recipes or fermentedbeverages, this one was pretty
simple and, as somebody who hasmade fermented, I've done like
kombucha over the years water, kefir I have made beet kvass,
which is a very differentprocess and I found did taste
very earthy, like beets.
I have made homemade sodas thatwere fermented with a ginger
(12:52):
bug.
I've done all that stuff.
I was really into it for alittle while and the fruit kvass
was really nice because it waspretty simple to make and you
didn't need a lot of expertiseto I shouldn't say expertise,
but you didn't need anythingspecial to make this.
And of course you can infuse it, because why not?
Of course we have the infusedpeach mint tea seltzer, which
(13:13):
was a lovely bubbly, refreshingdrink, and the mint really cools
you down on a hot summer day.
So that's where I'm leaningtowards when it comes to cooling
off.
But what if you aren't reallyinto the beverages and you
prefer something colder?
Even I love the tequila limepops recipe.
(13:33):
I have been making this recipefor quite a few years now,
probably even before I wasmaking edibles, because I love
it so much.
You don't need the tequila, youcan leave it out, but the
frozen treat with a littlecitrus, it's got a beautiful
kick.
So I really recommend thetequila lime pop.
Now what if you're getting intospecific activities over the
summer?
(13:53):
You've got, maybe you're doinga beach day or you're enjoying
some outdoor sports.
Maybe you've gotten into thelatest craze of pickleball,
which is still something that Iwould like to try.
Wouldn't it be nice to enjoy?
You know, get a little high andenjoy some pickleball.
So maybe it's beach days, maybeyou're out playing pickleball,
maybe you're going camping orenjoying a cottage weekend,
maybe you're going to thatbarbecue potluck or summer pool
(14:15):
parties or neighborhood picnicsthere's all kinds of ways that
we're enjoying the outdoors.
So for all of these types ofactivities, no matter what it is
that you're doing, you can findan edible that will work for
you.
I'm going to suggest, first ofall, no-bake breakfast bars,
because, of course, they can beused for not breakfast as well,
and they make a pretty caloriedense fuel when you're on the go
(14:39):
, as do protein energy balls.
So I would recommend both ofthose, especially if you're
going to be doing some hiking.
I know some people who love togo hiking in the summertime, and
these are something that can beeasily stashed.
They're portable, they're easyto dose and they're not going to
stink up your backpack and youcan enjoy some nice elevation.
You can feel engaged anduplifted while you're enjoying
(15:01):
your summertime activity.
These energy balls not only canyou dose them how you see fit,
when you're enjoying youractivity.
Maybe that's with CBD, aTHC-CBD ratio, maybe you want
high THC, but they're also goingto give you that energy that
you need to keep going.
When you're enjoying a beautifulday For the summer barbecues,
parties, picnics, all thosekinds of things the first thing
(15:25):
I'm going to recommend, ofcourse, for your barbecue side
is an infused barbecue sauce.
I mean, that's going to lenditself well to all kinds of
different things that you'regoing to be putting on that
grill.
I myself have a charcoal grilland I am a fair weather
barbecuer.
You will never see me out thereshoveling the snow off the deck
so I can get to barbecuing.
It just seems so unpleasant tome.
(15:46):
It's one of my favorite thingsto do.
I'll sit out on the deck, Iwill enjoy some cannabis.
I will enjoy a cannabisbeverage.
Oftentimes, and you know, enjoying some of the beverages
already mentioned to enjoy whileyou're doing your barbecuing is
another good way to make gooduse of the herbs or whatever
else it is that you are going tobe making use of.
Barbecue sauce that I have heretoday is a sugar-free version,
(16:08):
so expect that in the show notesand of course, I did an episode
not that long ago on curryketchup, which can be a nice
addition to your burgers, yourhot dogs or any kind of things
like that that you're making forsummertime.
So those are some great optionsfor the barbecues.
But what if you're going to apicnic or a potluck and you want
(16:30):
to bring something?
How about our freshMediterranean beef salad?
Maybe you've cooked the beef onthe barbecue, but the salad
comes together beautifully andit's light and refreshing and
doesn't require a lot of time ina hot kitchen.
And, of course, a favorite ofmine as well is the three bean
salad, because you can make thisahead and it's really simple
ingredients.
If you haven't infused oliveoil, it's gonna work perfectly
(16:51):
for the sauce on this and youcan make a pretty big batch and
enjoy it for a few days and it'sgoing to have, it's going to be
nutrient dense.
It's really good for you, as isthe Mediterranean salad.
What summer would be completewithout your chicken carnita
tacos I mean tacos just are goodany time of the year, but in
the summertime I think they hita bit different.
(17:13):
And I think the last thing Ididn't mention, which can be
really nice for summer morningsmaybe you've had some company
over and you need to feed them, having some granola, just good
old-fashioned granola.
I love to make a big batch ofthis stuff and then have it on
hand because it's really nice ontop of yogurt, I mean,
technically, I guess you couldeat it like a cereal.
You can like pack it for againfor hikes and trips and road
(17:34):
trips, and that's another greatoption as well.
Now, did I miss anything?
I think that's pretty much it,but of course we have to talk a
little bit about safety.
Please don't forget, if you'regoing to be sharing any of this,
know your audience.
If you know there's going to bea lot of people that you're
going to be spending time withthat, don't imbibe or have a low
dose.
Have low dose options with you.
(17:56):
A lot of these edibles thatI've mentioned are great because
they can be enjoyed in such away that if you want a higher
dose, you can just enjoy more, and that's a really easy way to
go about it.
Maybe you want to have somenon-infused options or opt for
CBD for some of your edibles, depending on the circumstance,
as always and you already knowthis label, label, label.
(18:22):
This one is so important, especially if you're bringing
something to someone else'splace of residence.
You want to make sure that itis abundantly clear that this is
infused, whether it's THC orCBD.
You still want to allow peopleto make informed decisions about
what they're putting in theirbodies.
So label, label, label.
Make everything super clear.
You'll be glad that you did it.
Keep the servings on the lowerend.
If you're going to be spendingsome time in the sun, you want
(18:42):
to be mindful of how you'restoring your edibles, because
some can degrade in the highheat.
You don't want to be making aMediterranean beef salad and
having it sit out in the sun.
I mean, that might not be theideal way to handle that.
But so have your coolers.
Keep them in shaded areas.
Avoid redosing too quickly.
Hot weather may intensify theeffects, especially if you're
(19:04):
dehydrated or if you're a littlenewer to cannabis.
So just know your dose and bepatient.
Even if you're prettyexperienced with edibles.
I've seen it happen time andtime again where people just
redose too quickly.
I may have been guilty of thata time or two myself.
Don't do anything risky whileyou're really high.
You want to enjoy your buzzsafely.
(19:25):
We want everybody to have a funand enjoyable summer and not be
spending any time in anemergency rooms.
This is a little redundant tosay I know you're all smart,
just for my due diligence.
Of course, don't forget to keepany of your infused goodies
away from kids, pets orunsuspecting friends, because
nothing ruins a summer activityor a summer barbecue like an
(19:46):
accidental dose.
But pets, please know that petsdo not tolerate THC.
Anytime you see anythingmarketed for pets, it's going to
be CBD based.
Pets do not do well with THC.
So there you have it, myfriends.
This is your unofficial guideto infused summer vibes.
So, whether you're chilling ona dock, you're sweating it out
(20:07):
on a trail, maybe you're hostinga backyard bash, there is a
cannabis edible that will fitthe moment, and if you weren't
really inspired by anything thatI listed here, I would be quite
shocked actually.
But you can find a whole lotmore over on bitemepodcastcom
and, as always, I'm going tohave a show notes for this
episode that will have all theones that I mentioned in today's
(20:28):
episode all in one place sothat you can easily find it and
get into enjoying the summer.
I love June for a lot of reasons, not only because summer
solstice.
Like I mentioned earlier, it'salso my birthday this month and
also the anniversary of Bite Mewhich is pretty remarkable as
well that I'm still here yearslater.
This will be the sixthanniversary.
(20:50):
Can you believe it?
I can hardly believe it either.
I have loved every minute ofdoing this show and I will be
hopefully universe willingputting out a whole bunch more
for you to enjoy, becauseedibles is how I love to consume
cannabis.
It's my favorite way.
Now I want to know from youwhat's your go-to summer edible.
(21:13):
Or, better yet, try out one ofthe recipes that I've talked
about today and tag me on thesocials or join the Bite Me
Cannabis Club and talk about itover there, because I just want
to inspire everyone to have adeliciously elevated, bite-y
summer.
As always, you can find theshow notes, recipes, juicy
details over at bitemepodcastcom, and I think that's it for this
(21:35):
week.
My friends.
I am your host, margaret Dayhigh.
