probably doesn't get enoughattention If you've been here
for a while.
I am so glad you're joining meyet again for another episode.
And yes, as I mentioned, todaywe're doing an ingredient deep
dive into ghee, what it is, whyit's a superior fat for infusing

and how you can use it tocreate incredibly potent and
delicious edibles.
Before we get into today'sepisode, I'm going to do a
little cannabis trivia to testyour knowledge from the Stoner

I have read some Anne Ricebooks like it was like 100 years

ago and I'm not super familiarwith the other two.
I've heard of them, but StephenKing is the most well-known
master of horror that I canthink of.
I guess that that sounds likeI've heard that quote before.
Actually.
So Stephen King has longthought that cannabis should be
legal and a cottage industry.
So why don't we get into thiswonderful ingredient called ghee
(03:18):

If you've never used gheebefore, or maybe you've heard of
it but you're unsure if it'sworth trying, this episode is
for you.
Trust me, by the end you'll beready to swap out your butter or
coconut oil for this goldenbuttery goodness.
So let's dive in.
So ghee is a form of clarifiedbutter and that's been used in
(03:40):
Indian and Ayurvedic cooking forcenturies, and it's made by
slowly simmering butter toremove the water and milk solids
, leaving behind pure butter fat.
And if you've been makingedibles for any length of time.
You likely know that THC lovesfat.
The cannabinoids in cannabiswant to bind to fat and that's
(04:03):
what makes ghee such a wonderfulingredient to infuse.
And here's a few other thingsthat make ghee special.
It's got a higher smoke point.
So, unlike regular butter whichburns at 350 degrees, ghee can
handle up to 485 degreesFahrenheit, and that means it's
(04:23):
perfect for cooking and bakingwithout a nasty burnt butter
taste.
That 485 makes it veryapplicable to all kinds of
cooking situations.
It's also lactose free.
If you have a sensitivity todairy ghee is a great
alternative, since the milkproteins, the casein and the
lactose which most people have asensitivity to in most cases
(04:47):
have been removed.
It's got a rich and nuttyflavor.
Ghee has this deep caramelizednutty taste that's way more
flavorful than plain butter, andit's also nutrient dense.
It contains fat solublevitamins A, d, e and K, and it's
been used in Ayurveda forcenturies for its supposed
(05:08):
healing properties.
So if none of that convincesyou that you should try ghee in
some of your own cannabiscuisine, then Just know, of
course, like I mentioned, thatTHC loves butterfat, and those
two things are a perfect pairing.
Now why is ghee perfect forcannabis infusions?
Ghee is a game changer when itcomes to making edibles, and
(05:28):
here's why, like I alreadymentioned, the fat content.
Cannabinoids bind best to fatsand ghee is almost 100% fat,
meaning you get a highlyefficient extraction of THC and
CBD when you're infusing.
It also has a long shelf lifeBecause ghee has no water.
(05:48):
It doesn't tend to go bad asquickly as butter and if it's
stored properly it can lastmonths at room temperature and
even longer in the fridge.
And now I've never really hadbutter go bad on me, except on
those occasions where I haveinfused it and somehow the
introduction of the plantmaterial into the butter just
(06:09):
made it more susceptible tospoilage.
This also means that ghee hasthat longer shelf life because
there is no water in it.
Butter has water in it.
I know this because I have madebutter myself in my own home
kitchen.
Ghee has a smooth texture,unlike coconut oil, which can
get grainy.
Ghee stays silky and smooth,making for better edibles in
(06:31):
everything from baked goods tosavory dishes.
And there's also theversatility you can use ghee for
sweet or savory infusions, likecookies, brownies, or drizzling
it over popcorn or roastedvegetables.
Chef's kiss.
That all sounds delicious.
So, whether you're trying tomake something sweet or to make
something salty.
(06:51):
Ghee can work beautifully forboth.
Now how are you going to infuseghee?
This is the fun part isinfusing ghee with cannabis to
get a potent, flavorful infusionCup of ghee.
And you're going to wantdecarbed cannabis to go into
your infusion Cultivar of yourchoice, although I always find
it's debatable whether or notthat cultivar particularly
(07:14):
matters, because the terpeneshave often been lost during the
process of decarb and infusion.
But I digress often been lostduring the process of decarb and
infusion, but I digress Asaucepan, double boiler or slow
cooker and a cheesecloth and astrainer so you can remove the
plant material after the fact.
Now I also sometimes do this ina glass jar, so that's another
option, to put the glass jar ina pot of water instead of the
(07:38):
double boiler method.
But either will work.
So first you're going to want todecarb your cannabis and you
can bake that at about 240degrees Fahrenheit for about 30
minutes, give or take.
You will smell it in the airwithout question, and this is
going to activate your THC orCBD.
Now you can use a device likean Ardent to decarb, and they do
(08:02):
claim that that will give you ahigher percentage of activated
cannabis, or if you have somealready vaped cannabis that
you've been saving from your dryherb vaporizer, you could use
that in place of having todecarb fresh weed.
So there's a few different waysyou can do this, but your
decarbed weed is going to be thefirst step.
So next you're going to heatthe ghee in your double broiler.
(08:24):
You're going to melt it on lowheat.
The double broilers will helpprevent it from getting too hot,
because THC can degrade over250, even if the ghee does not
burn.
So bear that in mind.
Then you're going to add yourdecarbed cannabis to the ghee
and let it simmer on low for acouple of hours, stirring
occasionally.
Now also, if you go the routeof the mason jar or the glass
(08:48):
jar in the pot of water, youwould just add your ghee and
your cannabis into the jar andsimmer it on the stove.
The boiling water will bearound it.
You might have to top up thewater a little bit Now.
Interestingly, I had a guest onmy show recently who talked
about the fact that often longerinfusion times aren't necessary
(09:12):

And so, because I haven'ttested this out myself yet, you
know it's still pretty commonpractice to infuse for a couple
of hours.
But this guest and maybe I'mteasing this guest a little bit
that interview will be comingout in April of 2025, depending
on when you're listening to this.
She said you could probably getaway with half an hour and that
(09:34):
a lot of the THC binds to thefat relatively quickly and that
we just have this idea.
If we infuse for longer, itmeans that we'll be extracting
more of the THC.
But that's not actually thecase, according to the
experiments that she's done.
Now.
I find this a reallyinteresting topic.
I'm going to certainly do someexperiments in my own home
kitchen and report back becauseI do find that fascinating.
(09:56):
Because for a while, I wastalking about with some friends
what happened if you wouldinfuse your cannabis for even
longer than two hours, like fourhours.
Would it be more potent Eighthours?
Basically, this guest wassaying that that is absolutely
not the case.
In fact, what you're extractingis more of the plant material,
the undesirable stuff that givesa lot of the times.
(10:18):
If you have a really longinfusion time, you get that
really green color because it'sextracting things other than the
cannabinoids, extracting plantmaterial, chlorophyll and all
these other things.
I am still going to recommendtwo hours at this point, but I'm
going to be doing someexperiments around that Not to
digress too much.
But maybe we don't need to bedoing it for two to three hours.
(10:40):
Maybe we just need to do it for30 minutes, and wouldn't that
save us a whole lot of time?
So those are some experimentsI'll be doing upcoming.

Once you have infused for acouple of hours, however, you're
going to strain your infusionOnce it's a little cooled off.
(11:03):
You don't want to touch itright away because it's going to
be pretty hot, but strain itthrough the cheesecloth into a
clean glass jar, making sure tosqueeze out all the goodness
that you can, or whateverstrainer that it is that you're
using, and let it solidify andstore in an airtight jar or
container.
It'll last for several monthsin the fridge and then you'll

have this delicious ghee thatyou can have on hand and ready
to use in whatever it is thatyou're wanting to make Now.
Also, don't forget, you'regoing to want to figure out the
potency, so it's really going todepend if you're using a cup of
ghee to three and a half gramsof decarbed cannabis.
You can kind of figure out thepotency from there, either doing
the math or using an onlinecalculator or or a device like a
(11:46):
tea check.
If you're making a ton of a tonof edibles, it's a pretty
spendy little device if you'renot going to be making use of it
often or frequently.
But also be sure to label that.
Include that information on thelabel when you inevitably label
it when you put it in forstorage.
Remember that.
Do not forget to label, becausewe don't want people to
inadvertently dose themselves.

And now you've got a rich,potent, golden ghee ready for
all of your edibles needs.
And now that you've got yourinfused ghee, what can you do
with it?
Well, if you're baking, you canjust swap it out one for one
for butter in your cookies,brownies, cakes, whatever.
If you're cooking, because ithas such a high smoke point,
it's great to saute vegetables,fry eggs, sear meats for an easy
(12:30):
infused meal.
Now, do keep in mind, despitethe fact that it has a high
smoke point on its own, thc doesnot.
So you are going to have tokeep some of the temperatures
down if you're using an infusedghee, but do remember that you
could use part of your recipeinfused ghee and non-infused
ghee because even though it hasthat super high smoke point,
(12:58):
like I mentioned earlier in thisepisode THC just doesn't.
So you're going to have to dosome things at lower
temperatures.
I think THC starts to degradeat about 250 degrees, if I
recall.
As I mentioned earlier, this isprobably one of the best ways to
use it is drizzling, becauseyou can melt it and pour it over
popcorn, pasta, roast potatoes,roasted vegetables, all that
kind of thing, and that's agreat way to use it, because
(13:18):
you're melting it gently andthen you're using it as a
drizzle.
You don't have to worry aboutdegrading any of the
cannabinoids precious, preciouscannabinoids that are in your
infusion and mixing.
You can stir it into coffee,tea, warm oatmeal for a dose of
cannabinoids with your breakfastor something similar, and
that's another nice way to useit as well.

Or maybe you enjoy a nice hotcup of tea or a warm beverage in
the evening when you'rerelaxing.
This is another great way to.
You can mix it into that.
I mean it is going to be alittle bit oily, of course,
because, as we know, oil andwater don't tend to mix too well
.
You're still going to get thatgoodness and you're still going
to be able to enjoy your hotbeverage.
Mixing into warm things isanother wonderful way to use it,
(14:01):
Because ghee is so efficient atabsorbing cannabinoids.
It can be quite strong.
So be sure that when you aredosing, you dose safely, as
always we all know.
Say with me together start lowand go slow, and if you're new
(14:22):
to edibles, just try a smallportion and wait at least two
hours before taking more.
Oftentimes people willrecommend and I do fall into
this camp, in fact don't evenwait two hours, just try again
the next day if you're brand newto edibles, because, for
whatever reason, sometimesthings just don't play out the
way you think they're going to.
Yeah, you just want to be onthe safe side and that really
does help you.
Make sure, if you're trying tofigure out your tolerance, that
(14:42):
there are no residual effectsfrom, potentially, that first
dose that you're taking, so youhave an even better
understanding of how your bodyis handling ingested cannabis.
And of course, you can mix itwith regular ghee.
If you find your infusion istoo strong, just dilute it with
some non-infused ghee for morecontrol.
Very simple.
So if a recipe asks for acertain amount.
(15:03):
You know how strong your gheeis, then you don't have to use
that entire amount.
You can definitely mix with theregular ghee to control your
dose.
Definitely mix with the regularghee to control your dose.
That's our big bite into ghee.
If you haven't tried infusingwith ghee yet, I highly
recommend it.
It's flavorful, potent andincredibly versatile for edibles

I haven't made ghee in a whilemyself, but like any other
fat-based ingredient, ghee is awonderful one that I don't think
gets enough intention A lot ofthe times when people think
about infusing differentingredients to use for cooking
purposes.
You know people think of butter, they think of coconut oil,
which are both wonderful.
I like infusing all of thosethings, but they have
(15:50):
limitations.
I mean I've also infused duckfat, which is another really
nice one to do.
