Classic prawn cocktail:
Prep time: 30 minutes
Serves: 6
500-800gm raw prawn meat, frozen
1 tsp salt
5 leaves lettuce
2 lemons, cut into segments
Classic prawn cocktail sauce
1 cup mayonnaise
2 tbsp tomato paste
1 tsp tabasco sauce
1 tsp Worcestershire sauce
4 sweet and sour gherkins, diced finely
2 tbsp gherkin juice
salt and pepper
1 tsp honey
First start by cooking the prawns, place the frozen prawns into a large pot and cover with cold water. Sprinkle over the salt and place onto a medium heat. Slowly bring the prawns up in heat, slowly is the key here.
Once the prawns are coming up to heat, turn the heat down to a simmer and continue to keep an eye on them.
What you are looking for is the prawn meat to slowly turn from clear to white. This tells you that the prawns are cooked. Once this happens, turn the heat off and allow the prawns to cool in the cooking water.
If you can, leave the prawns in the water overnight in the fridge. The next day, drain and mix the prawns in a bowl with the cocktail sauce.
To serve- take some cocktail dishes and lay a lettuce leaf into the bottom followed by a good amount of prawns and finish with a slice of lemon. Happy Christmas!
