I am going to listen to youfor the perfect cuts of meat that I
want, and you were going todeliver and this and you stock the freezer,

and you are the correct You're prettymuch the only person from the from
the farm of the ranch almost untilyou know it gets to my house,
aren't you. Yeah, so that'sright. And you know so in today's
day and age, with the risingpopulation of humans in America alone, let
alone in Texas, the corporate packingplants and the people that supply the grocery

stores and the wholesale chains with beef, they're trying to take every shortcut that
they can to produce more product asquick as they can in the volumes that
they can. And so what wefind is and a lot of the stuff's
getting exposed Michael on these reality foodshows on Netflix and other streaming platforms.
But what we find is that there'sa lot of foe stuff. There's a

lot of additives and chemicals being approvedby the USDA allowed to be in the
beef that we buy from the store. And so we actually provide you a
direct from the source beef product towhere you pick out a steer from our
(48:58):
ranch and then we bring it tothe processor and get it custom butchered for
you, dry aged, and thenflash posen and vacuum sealed for you and
you get to choose exactly how youwant that steer to be butchered. So
it's a really old school concept thatwe're bringing back to Houston. Our customers
love it, and most of thetime people don't even know that we exist.

good as a product. But I'mgonna save me some money. And this
is what you do. But peoplehave to understand it. I bet you
go through this all the time.This isn't like, Okay, I'm just

gonna buy a pound here, twopounds here, and you know I'm gonna
walk out with you know, twentyor thirty dollars this. It's it's an
investment, but it's the end ofthe day, it's a smart investment because
you're you're you gotta buy quarter sideof beef, half a side of beef,
and I know you sell by theentire side of beef. You do
have to outlay a little some moneyin front, but man, it's it's
worth it. I know you've doneresearch and data, Anthony. I mean,
how much savings just generally average,you know, can you get by

buying it your way? Yeah,So you know today's economy, a lot
of people are living paycheck to paycheck, but if you're plan ahead, So
what we've done is with we oughtmizedout everything that you get from a side
of beef when you're ordering a steerfrom us, and we priced it out
with Walmart's pricing, which is obviouslythe cheapest and nastiest meat that you can

get here in Houston. And whatwe found was with everything that you get
from us on a side of beefor even a quarter, it was on
average two dollars a pound more expensiveat Walmart across the board than buying a
side of beef from US. Soit is an initial upfront cost because you're
buying all your beef for the yearto put in your freezer all in one
(51:35):
go. But it does save youtremendously by the end of the year because
you're beating inflation. You bought allyour beef, the highest quality beef that
money can buy one time at thestart of the year, and so by
the time inflation and rising costs getto you by the end of the year,
you're still eating that same beef thatyou paid for at the start of

them. What types of meats doyou want? I mean, do you
want the leanest you know, thebeef? Do you want some marbling?
So we're talking about the thickness ofsteaks and I was cooking a steak it
was probably maybe about an inch anda half thig and one of my boys,
he's like, I want the thickestmarbled piece of steak. He says

something like five or six inches.I mean, I guess you could do
that like that. What is therea is it a personal preference? Is
it our proper size? What doyou think is the ultimate like inch thickness
and marbling when you when your customroring steaks from you. Yeah, so
good question, Michael, Because Ihave an elaborate custom cutsheet. When you
buy a steer from us, youget to customize exactly the way you want

to steer cut. And so becauseI fill these cut sheets out with the
customer personally, you know, wehave a lot of variations on what people
like. Of course, the peoplethere's some people that want to cook a
steak really fast and they don't careabout it being medium to medium rare,
and a lot of people like mediumwell even, and they usually get a
thicker steak. For me personally,I'm a rare plus to medium rare guy.

I like an inch and a quarterto inch and a half thickness.
But the beauty of it is isyou're actually buying the steer. You're buying
a clear sheet of canvas, andso you get to choose how everything gets
cut with us, just the wayyou want it. We'll work question over
here because I'm just fielding them asthey come in. Is it possible to
split a side of beef with neighborsor friends? And how does that work?

That's actually a very good question.I bet you get that a lot.
Yeah, sure it is. Soa lot of families and communities and
friends at work are rallying together tosplit a quarter and split a half side
of beef and split a whole steer, going in together and then driving over
car pulling to the process of wherewe take our steers too to get custom

do, because they don't want usto live this way. They don't want
us to be in community, theydon't want us to go off the grid
and say, hey, we're notgoing to be at the mercy of these

we just crop, we just tickoff all the crosses, and it's honestly,
it's a really good way to feedyour family. Knowing what goes in
your family's freezer, knowing how goodthe taste and the quality is going to
be every time, specially in footballseason, because the hamburgers and the steaks
and the grilling. There's nothing worsethan getting a bunch of guys together and
biting a bunch of family over andand you've got this plan to have this
