so we can talk about the saratashortage and how bottles of sarata are going

for like one hundred and twenty bucksany bay right now? Okay, So
this was this was predicted two yearsago that we would get to this point.
What what what created the saracha shortage? Well, it started because High
Fun Foods, who owns the Sarachabrand, screwed over their halipano farm,
and the halipano farm went and suedhim for twenty three million dollars and one

so that I Long had to goahead and move their halipano production to Mexico,
which initially wasn't a problem. However, the first year that they were
set up in Mexico, they gothit with a hurricane. The farm did,
I thought he was gonna say,the cartels, Yeah, thought little

Lapo Breads. The cartels don't careabout halipanos as far as they cared about
lines and avocados a couple of yearsago. So they they head the hurricane
hit the first year. That wasthe last year's shortage, and now it's
followed up by a drought. Sonow that two of the seven plagues.

Yeah, yeah, so they theyhad still don't have any halopanos. So
now we're two years in of noHifong Sacho. Hope the locus don't show
up. No, that's it.Where's that? Did you talk with?
The locusts have showed up? Wegot all the plagues. Uh so so
it's going it's going for top dollarsnow on eBay, you say, right,

yeah, so the normal bottles ofhi Fong, which Saracho would go
for three bucks at the grocery store, are now going for seventy one hundred
and twenty dollars on eBay. It'sa blind demand copital. Yeah, I
got a couple of hundred dollars onthe pantry. That's great because two years
ago, hey, we don't wantto run on a shruts. I got
a couple of bottles. I gotto go home and check. Yeah,

I may retire again. Okay,So h there are gourmet options, And
that's the thing is, there's alot of people don't realize that the stuff
in the grocery store is just oneof many, and so I've brought some
higher quality gourmet options so that youdon't have to be trapped with the rooster

sauce. So now, and canyou what is saracha? And I didn't
even know how Lapinius was and Iassumed it was like chili, garlic and
some sort of a red pepper.So it's no that that's ambiance. She
looks all stressed. They're making noisein the background. You should have heard

what is it that makes up sharacha? Yeah, so the basis for saracha
is chili's, garlic and sugar.There you go. What a lot of
people don't realize is that the Americanversion of saracha has nothing to do with
the authentic Thai version of saracha,and that there is actually a port city

in Thailand that is called Saracha wherethe sauce originated. And the David Tran
who started High Fun Foods it wasa Vietnamese immigrant who has created an Americanized
version of a Thai hot sauce.Ah, sorry, that was completely offensive.

the now are I'm assuming these areavailable at Iburn? Absolutely, do I
get that class? Where where's where'sthe new Iburn location, New Iburn is

the options to saracha? As longas you have chili's, garlic and sugar,

a variety of different chilis to haveas the base for the sauce, which

makes it to where you can getsome really interesting flavor profiles. So let's
taste some alternatives to sharacha. Allright, who's with me? Oh,

it's like he uses a toothpick andit's like, okay, only put

he's using fresh red halapangos and it'screating more of a chili forward flavor.

So it's actually complimenting. You know, green halipangos aren't right, and the
farmers do that intentionally to get itto market faster. So red halpenos are
riping, which makes them sweeter naturally. Okay, Therefore when you put them
in a sauce, you don't needto add as much sugar and you can
just have a little bit of thegarlic and make it to where the flavor

profile is going to be a muchuser. This is the California Charman is.
Actually there's a an urban legend aboutCharman in California, about somebody who
got burned up in a wildfire andnow still roams the mountains in California.
So that's what it was named after. It's got a smoky smell. One

it's going to be more chilly forwardwith the charman. And then we've also
got a bacon version which is phenomenal, going to be more garlic forward and
more balanced. Oh okay one,oh that would be awesome on an I

some oysters. What extral its garlic? Heavier on the garlic with it.
That that's a little tamer actually killer, I like that one. So the
whole idea of eye burn Yes,from its inception, was to showcase with

stores would carry a couple of nontraditional flavors, they buy them, then
they'd sell out, and then youknow, so it was it was you
had the three major ones and thena couple of other flavors, but it
was there was no consistency. You'relike, I want there to be a
consistent destination for a variety of hotsauces in Houston, and then that's what

you brought to the city. Yeah, and it's a completely curating collection.
I've personally sampled over four thousand differenthot sauces and I've I know the difference
between run of the mill or trashsauce versus the absolute best that's out there.
And I turned down ninety five percentof the samples that are sent to

us. And it's even more nowbecause of my social media. But now
let's talk about and maybe doctor Jimbut from the Recolissity of Wellness, can
chime in on this. There issomething that's taking hot sauce or eating hot
sauce or things that have spice oreat too. It does something to you
naturally. It what does it do? It's called the thermogenic effect if if
you're taking away the pain aspect ofit and just focusing on the effects it's

having on your body is it's essentiallycausing your body to experience the same thing
as if you are exercising. It'sgoing to create almost a heat like effect

my life and basically, uh,you know, had bottomed out so uh,

every day, really unhealthy, reallyunhappy. I got really depressed during COVID
because we went from doing two hundredand twenty dates to you know, I

couldn't figure out how I would paymy bills. Didn't qualify for the personal,
the PPE or whatever because I wasa contract under an agent, right
ye, so they could qualify,but I couldn't. All those people that
got all that money, they didn'tuse it. What they were supposed to
use it for because I know Ididn't get paid from anybody, right,
So yeah, so long story short, man, And then uh my dad

died, ye and and twenty oneand my mom died. Yeah, it's
been a tough role. Yeah.So so it would not being able to
work and really be able to goout and just to emote that energy that
I would otherwise use to heal myselfproperly inside. I just said every day
and got deeper and deeper depressed andmore and more unhealthy. So at this

point it'll be one year July thirtyfirst that I haven't drink any alcohol,
and I've lost any seven pounds rightnow, It just fault. Where did
it go? We must have beenin that bottle in your hand the whole
time, dude. I was reallygood at drinking beer, so I could
drink thirty pack. Now. Bothyour mom and your dad had faith,
so right you there's comfort in that, Oh, yeah, there is,

man. And really it was mymom. You know, her death really
gave me life because it was onher deathbed. She was in a hospital
at our house and my wife wastaking care of her for about six months.
They gave her two weeks and shelived six months. And during that
time I was really struggling internally withmy own stuff going on, and just
to being able to go over andtalk to her every evening and watching her
face, you know, certain deathwith so kurt. You know, she's

worried about how I'm going to dealwith it, you know, like,
hey, dude, you're you're fixingmovie dead. But she was more worried
about how I was gonna be becauseshe had she knew where she was going.
Yeah. Man, So she's like, hey, dude, your dad
wanted to tell you, but hedied suddenly didn't get the chance to.
And basically, you know, I'mon my deathbed. My death wish is
that you would quit drinking and gethealthy through your family, really live for

them. Yeah, man. Shesaid she had a dream that I had
had a heart attack and left myfamily too young, and and so her
dying wish was that I would quitdrinking and try to get better. And
so so I went so cold turkeyquip man, and I drink. I
drink one time for twenty five years. You know, I drink every day.
I drank one for twenty five years. Is that a lot from a

Yeah. So, um, it'swe've got a guy. He's gonna

a step cell UV, blood workand everything. But I met him and

and and I said to him,my good look, I just turned fifty
five. I have four children fromeight to thirty. Uh. I thought
I thought you were gonna say fromeight different women. No, no,
no, no, just but soI'm like I said, Doc, I
don't want the last twenty five yearsof my life to be misery. And

I need to be And he goes, and I said, I'm already working
on it. My oldest is anutritionuswim. I'm trying to stay healthy.
I'm trying to stay lean. ButI said, I think there may be
help. But he said there is. He goes, we can now help
you. You just you slid intothird base hard. Uh, he goes,
But that last ninety feet home doesn'thave to be you know, on

skin knees and then busted elbows.So I'm with you on this journey and
you're considerably younger to me, butyou have two small children. Well,
yeah, they're not small anymore,are they. Well, you know,
they're not small, you know.And it's a it's weird, man,
because like I want to go likemy dad did. He was seventy nine.
He had just went to the harddoctor that he's told me had a
heart of a sixty five year oldman, you know, and he died
because he had a blood clout behindhis ear. So it was like,

were super sudden that dude never gotold, No, he did. He
never stopped. He never liked stopped, man, And like he did,
you know, he gave up cocaineseventy two because his dealer died. And
he's like, man, I'm afraidto like do that with anybody else.
I'm like, dang, dad,I said, Man, at least he
got so, you know, hewas and he he was sober, uh

for the first time in my lifethe last five years of his life.
And I really and that's when y'allwent out and did a couple of tours
together. We did, man,and I got to know and I got
to know a different side of himthat's beautiful, and he's a really,
really beautiful person. So well,your dad was always this larger than life,
but damn it, he was soreal. I mean when he hugged
you, when he looked at youand his eyes sparkled. I remember watching

so proud and he had little tearsin his eyes and he's like, he
looked at me because I love thatkid, and I go, I know,
I feel you. I feel yourlove. Dude. You know what,

believe it or not, this wasa neat experience. Never have I worked
where where I actually, you know, had feedback, like he actually pulled

old man named Tristan Setenium was arrestedfollowing at assaults in Minnesota. Apparently,

he walked into a restaurant last Fridayafternoon and he began throwing candy at the
employees and customers, skittles. Hewas throwing skittles at the customers and the
police were called. When they showedup, skittles were everywhere. They found
tristed at a nearby business. He'sbeen charged with the sault, disorderly conduct,
and resisting the police arrest and healso was arrested just a month ago

all the conversations, trying to getto know who you are as an individual

from that perspective, So we routinelytake about an hour to almost two hours
with some of our very complex patients, and then we go back with the
science and we delve into all ofthe tests that will actually tease out the
problem. My dad was a priorexample of that. I mean he was

he was significantly sick, he washaving some problems, and we would take
him to the doctor and he wouldget all of his labs and they would
be like, well, mister Wrinkle, all of your labs are normal,
and so we don't really know whatto do, so just keep on keeping
on. And we watched him literallydegrade himself into into death. So that's

why, and so he's kind ofgiven me that inspiration to move forward,
dig deep onto every single patient.Every single one of our patients is highly

named Dope David Romero was caught shopliftingthings from Target last Monday. He had

parking out there, arrested him.As they tried to get him into the
police car, the pink vibrator fellout of his pants, vibrating. He
