Da quella folgorazione inizia a ricercare, sperimentare e scrivere a tema pane arrivando a collaborare con tantissime realtà tra cui il Reale*** di Niko Romito.
Con Laura abbiamo parlato del suo percorso come consulente in progetti di panificazione e della sua visione del ruolo del pane all’interno della ristorazione moderna, scoprendo che le bakery non sono tutte uguali e per fare un buon pane non basta usare il lievito madre.
