he was in the studio. You remember for the Strawberry Festival,
which is going on today, and that's where you are,
isn't it.

Yeah? Absolutely, it's this sixty fifth annual Gardngrove Strawberry Festival,
brought to you by Safe Oh See say Something, see Something,
Say something right. And we had the parade today with
all the guys. We missed you this year, but it
had a lot of fun. But it's beautiful out here.
Lots and lots of everything strawberry to you.

That is so awesome. And I know that there's another
event coming up that you're excited about because I'll tell
you something about wing. He got his name because he
never touches the ground. He's running and flying from place
to place all the time. And you're going to be
doing a demonstration, a cooking demonstration. What on the thirty first, Yeah.

Speaker 2 (01:36):
The thirty first, In the first next week we have
the twentieth annual La Wine Festival with Wild Forks, So
they got a bunch of locations all over Socow, but
we're going to be doing something different. Yeah, they're good guys.
A Pekanya tako, which is a brazilion top sirloin cut top,

(01:58):
some fresh truffles and maybe a little bump of caviar
from truffle boards. And that's at the Hairy Bridge Memorial
Park in Long Beach, right at the Queen Mary. Oh.

Speaker 1 (02:09):
Yeah, that is a great place for an event. I mean,
you got the breeze from the water going on there,
but it is a really wonderful place to have an event.
For sure. What are you going to be demoing with
the you said the pekanha and you're putting it in.

Speaker 2 (02:24):
Yeah, taco it's basically yeah. So remember, I'm one of
the few Asian chefs from Brazil that I know in
southern California, right, So we're teaming up because yes, we
do sell top sirloin in traditional retailers, but at Wildfort

(02:45):
they serve pecanya, which is a Brazilian cut of it.
So basically it's ultra delicious. It's got a nice little
fat cap on one of the sides, so we're going
to grill it, chop it up and put it in
some tacos and maybe a little bit of salsa, in
a little bit of fresh truffle and a little bit
of caviar.

Speaker 1 (03:06):
Yeah. And if you haven't been out to a Wild Fork,
check arounds, because a lot of people don't know there
even is one in their neighborhood, and there's plenty in
Orange County. There's plenty here in Los Angeles as well,
even getting into Ventura County in the Thousand Oaks West
Lake area as well. It is a store like you've
never experienced before, much different than what you might expect.

(03:31):
But the cuts of meat, the more rare stuff that's
hard to find, is a real treat because, like you said,
you can't get these cuts everywhere. What about it, this
particular cut do you like so much?

Speaker 2 (03:46):
Well, because again it comes in a bowler like almost
like a like a big roast. So you can slice it,
you can grill it. There's multiple ways you can serve it.
But you're not going to smoke it because it's not
that cut. It's a much better cut when you grill it.
So when you see the guys that are Brazilian steakhouse,

(04:08):
that big, gigantic piece of meat that they carve table sign,
the best one is the pecanya.

Speaker 1 (04:16):
Oh man, Now I want to, you know, go out
in set a Brazilian steakhouse and have cheese balls and steak.
Oh yes, oh man, there's nothing like that, just you know,
having steak cut after steak cut. And how do you
how do you cook it? How do you prepare it

(04:37):
for the tacos?

Speaker 2 (04:38):
Well, the two options obviously, because we get about five
thousand people coming in every day. A flattop grill is easy,
kind of like you would cook carneas out of right,
so quickly, see you chop it up and throw it
in the taco right. The other way, if you have
more time over a open fire. So I know you
and I talked about using the green egg. That's the
best way to cook it. So then but again the

(05:02):
Brazilian way would be you cook it, see it, and
then you just slice the outside and then you keep
it cooking. The other way is if you want to
be quicker and you want to serve everybody at the
same time, you cut into nice steaks like you would
have like a rabbi or something like that. Keep cooking medium.
But remember what gives you all that flavors, That really
nice sat cap on one of the sides, and that's

(05:23):
what holds all the moisture, also has all the juice,
and that's the way to do it. And it's my
favorite is actually you know, open flame traditional in that
green egg is a way to go.

Speaker 1 (05:35):
Oh yeah, you know, I'm a huge fan of the
big green egg. And now Bill handle is too. We
just got him set up with one and he is
using that thing all the time and calling my ass
every ten minutes to figure out how to use it.
But it really is this up here here cook There's
just something about it. How many people How can people
get tickets to the event they.

Speaker 2 (05:56):
Can go on the website LA Wine Festival, but just
make sure that you're looking at the one in the
Long Beach next weekend, because there are multiple festivals starting
in all summer long, all over LA. But look for
the one is sponsored by the Long Beach City and
that's it's been around. It's the twentieth annual and it's
next weekend. And make sure you get the right address

at the harry Bridge Memorial Park because the other ones
are in Santa Monica and other parts of LA. But
this one is next weekend in Long Beach and literally
you can see the Queen Mary ride by you.

my whole team out there. It's going to be a
lot of fun. So come early because, as we say,

You have any step because oh yeah, we got our
team has got out with a couple of different charities.
I will name them all, but we got some strawberry
watermelon Iowa Frescas. We got Crema Cafe at another booth
doing the handheld strawberry cream pies. We have another group
from Yoga Land doing the beautiful you know, strawberry frozen

yogurt with toppings, and again all the local vendors. There's
hot dogs, burgers, tacos, there is funnel cakes, there's strawberry shortcake,
there is everything strawberry. Lots of rides and just lots
of people, you know, and it's a lot of fun.
It's free to the public. All you got to do
is buy whatever you're eating or writing, Right, I want

to go on to ride, you buy some ride tickets
to to eat anything, just you know, pay as you go.
But it's super easy. Lots of parking around there, and
the weather's beautiful. It's not too hot. It cooled down
a little bit, so I'm not a weather guy, but
I think it's in the mid seventies. It's very nice.
It's really comfortable right now.

my wife and my boy flipped over them, and so

was because I can't remember. And then they went and
got some at another local place and they're like, these
are not as good. So I said, I'll find out.

It's already started, but there's still plenty of time to

National Hamburger Day that Burger King is doing now. Everybody
celebrates National Hamburger Day if they make hamburgers. It's on
May twenty eighth. But the cool thing here is that
Burger King is giving away free food throughout now until
the twenty eight. So it started on the two twenty

second that they started this giving away all kinds of
free stuff. But today, since it's the twenty fourth, you
can still get in on this. You can get free
frozen Fanta strawberry with a purchase of one dollar or more.
Then tomorrow you can get a free four piece nugget

on the twenty six, buy one, get one free whoppers.
Come on now, on the twenty seventh, free original chicken

It's pretty easy to do all this. You can take

the way, Burger King is offering Royal Perk members a
chance to score a hamburger for only one hundred and

have to own a crown because when you think about it, crowns,
you know, often are made out of precious stones and materials,
and that seems like, why would I give you one
hundred and twenty five crowns for a hamburger? So they're
just points and that is on their app. You know. Now,
you may not be into apps or things like that.

The reality is, as it's been said many times before
that if something nothing is ever free. If if an
item is free, most likely you are the product that
means selling information and all that. But you know what,
it's everywhere. That's with every point system at your grocery
store otherwise. So if you want to get in on

these things and enjoy them, yeah, they're probably gonna track
how often you eat something, or what time of the
day you eat something, and something like that. That doesn't
bother you most of the time. It doesn't bother me either.
Go for it. I'd rather people be sending me ads
for things I want and sending me ads for things
I don't want. However, I don't know if you've noticed lately.

I don't know if this is newer, but it's just
hitting me lately. Is I noticed that I'm getting hit
up by Amazon saying we thought you'd like this. Maybe
that's been around for a while and I've just ignored it.
But here's something we thought you would like. And I'm like, what, No,
I come to you when I need something. You don't
need to come to me when you think i'd need something.

and we'll see you there. You know, I get asked
about frozen foods, canned foods, and people saying, hey, I
want to eat better, but I don't always have the
time to put things together. Came across this great list
from dietitians that we're looking over. You know, things that

(16:23):
you can buy that are canned, that are you can
add to dishes, and that can give you great nutritional value,
but you might not think of them necessarily. And these
happen to be a list of things that you can
find on your cost go run, so your next cost
go run. You know, we kind of put different lists together.

(16:44):
My wife puts different If there's a specialty store or
something we like at the local farmers market, there's like
one list for that. Then are regular grocery stores, which
there could be three of depending on you know, we're
getting certain things, have different stuff or what have you

(17:04):
two different places that we go for me or cost
go runs or things like that that you can only get,
and so you're making your cost go run and you
want to know what to get. These are a list
of some of the things you might not think about
but are very good and nutritious and you can get

(17:24):
them in cans. So we'll start with chickpeas, which is
one of my favorite. Chickpeas has this great earthiness to it.
Of course, it is the base the god bottons willbeing.
It is the base of hummus, you know, basically that's
what hummus is. You have some tahen in there and
some lemon and some olive oil, but chickpeas at their

(17:49):
finest you want it to taste that wonderful chickpiness. But
they're one of those foods we could use to eat
more of, so, says dietitians. Super versatile, lots of nutrients,
they are budget friendly, they're not expensive, and some people
just toss chickpeas into all kinds of meals like baked

(18:10):
falaffa flaffel or chickpea and spinach stew. If they end
up in hummus, which is great. We have hummus here
at the house a lot because we love it. It's
just an easy thing to eat. My wife loves it.
I love It's one of the few things I think
my wife and I, you know, eat the same of
you know, she eats differently than I do. She doesn't

(18:32):
eat red meat, she doesn't do dairy and all these things. Right,
So hummus is something we all agree on and everybody
seems to love it. You can put it on sandwiches, scupid,
onto veggies, or use it as a dip for veggies,
as girl grain bowl and there's just something you can
get there at Costco, So keep that in mind. Black

(18:54):
beans another one should be a pantry staple. You should
have them in your house at all the time. They
are loaded with fiber. There got a lot of protein
in them. They work in tons of dishes, just like chickpeas.
They're just easy to put anywhere. You can throw them
into a sheet pan, chicken, faeta bowl type thing, whip

(19:15):
up sweet potato, black bean chili. You could put it in,
you know, stuff that you want to be meat free,
or you can add meat to it, it doesn't matter.
Mashed black beans on toast and tacos. Yes, you can
put beans and tacos. H enjoy yourself burrito. You can

(19:38):
use it as a dip, so give that a shot
as well. Black beans are great. I like black beans
and rice. Little gayo pinto good night Irene. Such a
delicious option. Tuna, you know, tuna I love and it's
one of those things. I mean, we have it in
the pantry, but it's one of those things I forget about.

(20:00):
You know, you can dump out the water or the
oil in the can and just eat it right out
of a can. That may not sound appetizing to some,
but man, that can be tasty. So eating seafood more
in your diet is not a bad way to go.
It can get pricey if you want the higher end seafood,

(20:22):
but can tuna is. Man, They're inexpensive, They're super approachable,
they're versatile. You see that there's kind of a pattern
and all this stuff that seems to work out nicely.
And you can make big batches of tuna salad or
just a simple light mayo mix with it for quick lunches.

(20:43):
You know what I'm a sucker for. And my sister
Karen loves this as well. I don't know if she
turned me onto this or not. But the little Hawaiian rolls.
You get those little Hawaiian rolls and you mix up
a little tuna salad or just tuna and mayo and
you put it on the Oh my gosh, she would
bring those two picnics or things like that and they're

(21:04):
just man so simp Now I crave that. Now I'm
craving that personally. I like the tuna to be chilled.
So if it's been in the fridge for a little while,
it's nice and cold on that warm bun. Or if
you want to warm it up or toast it a
little bit, that's fine too, or you can just have it.
You know, it's Hawaiian role. Man King's Hawaiian can't go

(21:27):
wrong with that and put you could put King's Hawaiian
roll on King's Hawaiian roll and it would be delicious.
So tuna, it's a great quick way to do it.
I like a tuna castrole as well. Now my mom.
I grew up with my mom making tuna cast roles
and I haven't made one in a long time, and
they're so good. Maybe I'll get in on that a

(21:48):
little bit. I think Elizabeth Espinoza gave me a recipe.
I think it might have been a tuna castroll, something
that her uncle made or something. I'll have to go
back through my recipes. But easy too. The cakes just
super simple stuff that you can put together with that. Sardines. Now,
I know we all don't like sardines. I certainly aren't.

(22:08):
I'm not down with putting sardines on my pizza, but man,
I've had some delicious, you know, eat whole sardines in
the ten that were fantastic, full of protein, Omega threes.
That's bone health, that's brain health, and you can put

(22:30):
it in, you know, with pasta or things like that.
Pretty simple. I know a lot of people go at
first with sardines, but you know what, maybe give them
another chance in a different way. Dice tomatoes.

Speaker 2 (22:43):
Love it.

Speaker 1 (22:44):
I've been craving a brisquetta the other day and just
like on a little toasted piece of bread and come on,
but can tomatoes they are They can be fantastic. A
lot of people don't understand they are canned at their prime.
So if it's you know, you getting a fresh tomato

(23:06):
out of season is going to be worse. Mealy, possibly
flavorless versus a canned tomato, so soup, stews, pasta, sauces, curries,
whatever you're gonna do, this is the way to go.
And look for the no salted, no salt added kind.
This is the thing to do. Get that at Costco
as well. Coconut milk is also another good one. Goes

(23:28):
with the chickpeas coconut milk kind of hand in hand.
To have these things around, then you get yourself a
curry come very tasty, very good for you. And the
thing is don't that I want you to kind of
take away from this is don't think because it's in
a can. Having things at the ready in your pantry

(23:51):
is the thing that's going to make you a great cook.
Being ready to go and put something simple together that
is nutritious for your family and for yourself. And I
think these items were right on the top of the list.

So we do that. Maybe it's barbecue and playing games,
hanging out with family, enjoying what we have here in
these United States that was purchased with their blood and
their sacrifice. So may God bless all those that fight

for our freedoms and hold those that have given their
life up for us as well. Going on through the
politics of tips. Now, we don't always cover political stuff
on the show, but this is an important one that
ties into many people that listen that are in the
restaurant industry. So Senate passes the No Tax on Tips Bill,

(25:18):
and here's what it means for restaurant workers. Kind of
a little synopsis. Bill just cleared the US Senate on
May twentieth, could be a huge win for some you know, bartenders, servers,
others who rely on tips to make a living. So
the No Tax on Tips Act was passed unanimously, and

(25:38):
it aims to stop the government from taxing tipped income
or tip income. And I know that raises an eyebrow
as to what does that mean, who does it benefit?
How does that even work? And you know, will it
be abused by some? Not talking about the bartenders and
servers per se, but others. So the bill was first introduced,

(25:58):
if you remember, by Senator ten texas Is, back in January.
I got support from both Republicans and Democrats. Surprising enough,
it was something that both sides were looking at, including
Senators Jack Rosen, Catherine Cortes Mastow from Nevada. And this
move follows up on a promise by President Donald Trump,

(26:20):
who wants to get rid of taxes, and this part
of his not only his campaign but now coming to fruition.
So what will it actually do? And this is where
it comes down to literally brass texts. See what I
did there. It would make it so workers can get
a lot of their income from tips and they wouldn't

(26:43):
have to pay the federal income tax up to twenty
five thousand dollars of their tips each year. So let's
say a bartender earns like seventy grand a year, good
for them, and twenty five percent of that came from
tips instead of getting taxed in the full seventy Now
they don't be taxed on forty five thousand. See it's

(27:03):
not hard math. However, there's some limits here. If someone
makes over one hundred and sixty thousand bucks a year
this is starting this year, they wouldn't qualify for this break.
That's a good living though, if I mean, I don't
know what kind of tips you're getting at that point,

(27:23):
but good for you. Only jobs that typically get tips,
like servers, bartenders, hairstylists, that type of thing would be eligible,
you know, all jokes aside. I wonder if that would
be strippers or those types of entertainment. Is that the

(27:46):
I am I allowed to use safe strippers. So the
bill could offer tax breaks to businesses for payroll taxes
paid on tips that type of thing, including from the
beauty industry, barber's, estheticians. So this is going to go
beyond you know, our focus here, which is you know, food,
but it's it's going to affect many things. And I'm

(28:09):
hoping that this works out and that it's ends up
being good for people who work, you know, work their
butt off for these tips. Bill has to go through
the House of Representatives, then the President would need to
sign it for to become law. It's you know, there's
hopefully they don't put a whole lot of other stuff
on it and make it problematic. But the people that

(28:33):
are going to benefit the most from it are probably
those that are working in restaurants, and you know, and
that's going to be a good thing. About two point
five percent of all US workers in twenty twenty three
had jobs that involve tipping. I would have thought it'd
be a little more than that. But among lowage workers
under twenty five dollars an hour, gosh, that's lowage. That's nuts,

(28:58):
less than four percent we're in tipped positions. So we'll
see how this plays out. Any of the downsize customers
might tip less knowing that those tips aren't being taxed.
I hope that's not the case. Some restaurant owners might
not feel the need to raise base wages. That would
be wrong. Since workers are keeping more tips, they're supposed

(29:20):
to balance things out. Start pulling one way or the other,
then the balance is gone. It's still going to be
a problem. By the way, Currently federal sub minimum wage
for tipped workers is only now. A lot of people
don't know this two dollars and thirteen cents per hour.
Many states can be higher, but you know this might

(29:40):
help them out. You'll still need to report your tips
even if the bill passes, but you wouldn't be taxed
on them. But they have to know exactly what you're
making ultimately across the board, so we'll see how that goes.
