Speaker 1 (00:00):
Hey, it's Neil Savedre. You're listening to kfi EM six
forty the four Report on demand on the iHeartRadio app.
I gotta tell you they were talking about rain listening
to The Mo Kelly Show last night, heard Mark Ronner.
I know they go put a toe on this all
the time. The mo will mock your butt if you're
gonna say it's gonna rain and it doesn't. So it

(00:22):
doesn't look like it's raining here. It might be rating
where you are in the Southland. There was like a
twenty percent chance or so today, but it is cloudy.
We may get some between I don't know in the
next hour or two, but we'll be looking out for that.
The fact is when the weather changes and it's the holidays,
it's always a good thing. Thanks for hanging out today
as we enjoy talking about food, beverages and beyond. I

(00:45):
know a lot of you have been asking me about
gift ideas, so I thought we'd do that for technique
of the week today is to start off with the holidays. Also,
since it is the time of giving, we will be
giving to you later on the program. We'll do this
twice today. Twice today. We will be giving compliments of

(01:05):
our friends at Don Francisco's Coffee. They're going to make
your holidays brighter with a chance to win coffee for
a year. So we'll do this twice today. One lucky
winner will be selected and of each time that we
do this, and you'll get to select your favorite flavors
and brewing methods at Don Francisco's dot com. Your coffee

(01:29):
will be delivered quarterly for shipment. Includes two branded mugs.
I know I have these very mugs in my house
and the price is valued at four between four hundred
and five hundred dollars. That depends on the brewing methods.
So if you get the capsules like I use. We
have an espresso machine, so we get the cafe La
Jave is what I drink here and really really love.

(01:53):
It's one of my main It is my main main
coffee quite honestly, that you could choose that for instance,
it's an excellent espresso, and we'll be doing that a
little bit later in the program. As a matter of fact,
they are on my list the holiday gift ideas. So
we'll start with coffees because coffees is a fun one
to give. It's a fun one to receive, and these

(02:15):
are some of my top favorites. Cafe La Jave Espresso.
It is from the Don Francisco family, and I love
their coffee. It's just it's always it's consistently wonderful. This
particular blend is dark roasted, it's intensely aromatic. I love
the smell of this coffee when we're making it in

(02:38):
the morning. I love, you know. I do the morning
show with Bill Handle Monday through Friday, starting at six am,
and so I'm up at around four or so in
the morning, and that's the first thing after water. Big
thing is they drink a big old glass of water,
and then Cafe la Jave espresso is what goes into

(02:58):
about a dark roast, tensely aromatic. It's rich, it's got
this strong Latin style espresso vibe, and it is just great.
We use a I don't know how to pronounce this
delongi DeLonge, I don't know, an espresso machine that we love.
It's a small one because it's only my wife and
me that drink it here at the house. Max is

(03:20):
only eight. Well, let him get his coffee fixed much later.
But it just it smells so fantastic. And it is
one of the few things on our list our you know,
Amazon list or our purchasing list that is automatic, so
it comes to the house. We are never away from this.

(03:43):
As a matter of fact, we have a carrying case
for our an espresso machine and it carries our espresso
machine and our cafe leave espresso in it, and it
goes with us anywhere if we go to a hotel wherever.
You know, we have a cabin, you know, for our
vacation cabins, but we also rented out so others can

(04:06):
enjoy it. It has a machine in there too for
these very pots. So big fan of that and I'm
thrilled we're giving away some of their coffee today as
well on the program. Alton Brown has a wonderful blend
called the Multitasker. By the way, the coffee le Jave
you can get on Amazon, you can get your local grocer.

(04:27):
You can also just go to their website. The Cafeljave
dot com, I believe is for that particular brand. Alton
Brown's Multitasker coffee brand a brand blend. It is done
from Dancing Goats coffee. It's kind of this design. He
actually before it went on the market. Alton texted me

(04:48):
and he said, hey, I want to send you a
package of my new coffee. Let me know what you think.
And it's fantastic. He's had it for a couple of
five years now. Dancing Goats Coffee is the one he
partnered with. It's designed for brewing via multiple methods, whether
you're pouring over electric drip, mocha pot, French press, it
really does all of that. And it has notes of toffee,

(05:12):
black cherries, sesame seeds. You can find that at Alton
Brown dot com. Alton Brown dot com and you know
Alton from the Food Network and all of his various
books and tours. Fabulous guy and loves his coffee, so
you can't go wrong. A friend of the program and

(05:33):
just an excellent coffee maker. Old Down Roasters they rocket Fuel,
they have many. These are the ones I'm recommending for now.
Rocket Fuel is fruit forward. It's got a little bit
of sweetness, notes of milk, chocolate, honey, a little bit
of acidity, red grape, acidity, animators, blend. I just love

(05:53):
that name, notes of brown sugar, Baker's chocolate, allspice kind
of got this earthy notes to it and you could
find that old Townoasting dot com. Old Town Roasting dot com.
Sean has been on the program before. You might remember
that from the past, and just wonderful these are. I mean,

(06:17):
I can go on, there are many more, but these
are the highlights, the ones that I thought, gosh, these
would be great form as a gift for someone that
loves coffee. Like I said, there's something lovely about giving
the gift of coffee that war if you know somebody
really enjoys coffee. Now you may know their styles, what
they want, if they're an espresso person or not. But

(06:39):
I probably today already I probably shouldn't say this, but
I probably had four espressos today, you know. And it's
it's not that And I'm not one that gets a
real hyper response from caffeine. So to me, it's really
that flavorful, lovely, just kind of good morning vibe that

(07:01):
it gives me a special on a date, especially on
a daylight today that's overcasty, It just makes me really
enjoy it. So these are some that I would highly
recommend for you. In just a moment, when we return,
we're going to get some news. I'll go over knives
and pans, there's one particular maker, manufacturer of knives and

(07:23):
pans that I've really been into, gosh, the past handful
of years. They kind of came out of the blue
and started advertising a lot digitally on social media and like,
and I said, you know, I'm seeing this a lot.
I might as well try them out, and I fell
in love. They have some excellent products and the price
point is incredibly reasonable for the quality that you are getting.

(07:46):
And they've quickly become one of my favorites here at
the house and play a part not only here, but
we've got a set of them up at the cabin
as well, making sure that people have visited the cabin
have a great experience if they love to cook and
the like there. So we'll get into that when we return.
Just a little bit different of a technique of the

(08:07):
week because the holidays are here, and I thought, I'll
give you a couple of ideas for gifts, different ranges,
different kinds, So we'll do more of that when we return.

Speaker 2 (08:17):
You're listening to the Fork Report with Nil Savedra on
demand from KFI AM six forty.

Speaker 1 (08:23):
Talking food and the holidays. Of course they are upon us.
I know it seems like it's been going fast. But
I got to tell you, I'm smelling the roses a
little bit more lately. I hope you are too, taking
the time to hang out with family and friends and
just enjoy time and life with each other. Good food.

(08:44):
Who having a sip of a beverage. I don't have
to have boozing it, but you know, if you do
and vibe, there's a lot of good things in that.
As a matter of fact, there's some recipes all post
on social media. If you haven't been hanging out with
us on social media, I invite you to do so
at Fork Reporter on Instagram, At Fork Reporter on Instagram

(09:07):
and everywhere else. You can find me on everything else
at Fork Reporter, but I'm on Instagram quite a lot,
and that's kind of my jam. I love the photos
and videos and the like. But check us out there.
Don Francisco's has a couple of recipes. I'll post some
videos of them that I'll post up a little bit later.

(09:28):
Don Francisco's is partnering with us. By just talking to
my buddy Danny over there and I said, hey, you know,
you want to do something for the holidays. I love
Don Francisco's coffee already told you that Cafe Le Jave
Espresso is my jam, which they produce and brew, and
he said, absolutely, let's give him coffee for a year.

(09:48):
So we'll do that to two lucky winners. We'll do
one in the three o'clock hour, one in the four
o'clock hour, So be listening for that. And this means
you'll be able to select your favorite flavors and brew
methods from Don Franciscos dot com. The coffee will be
delivered delivered quarterly for shiftment. Even includes two branded mugs

(10:10):
and uh, it's going to be a great thing. So
we'll give that away a little bit later, but it's
one of my favorite things. Had that this morning at
four Espressos, if you really must know. So, I'm kind
of going over for a technique of the week going
over some of the things that I enjoy that might
be good gifts for someone in your life. So we
went through coffees. You can go back and listen to

(10:32):
that at kf I AM six forty dot com or
on iHeartRadio just look for the FOURK Report podcasts for
today Knives and Pans meson meson m I S e
N dot com, M I S e n dot Com
has become one. They are not a sponsor or anything.
I just have fallen in love with them, and I'll

(10:53):
tell you one of the reasons why. They just they
have produced high quality items at very reasonable prices for
the quality of those items. And they first came across
or I first came across them through social media. I'd
seen them on social media and I'd go, I wonder

(11:14):
if they're any good and I got them and I
really love them against knives and pans that were twice
expensive easily, so you can check them out. There's many
different things. Mesen dot com, M I S e N.
I have a set of their knives, like a three
You know, you don't. Everybody goes what kind of knives

(11:35):
do I need? The reality is you don't need a
bunch of knives. You need three basic knives that are
going to take care of everything. Unless you do specialty work.
And if you're you know, like to fish, you're an
angler and you go out all the time, yes you're
gonna need something else. If you're very very into grilling
and the like and fabricating or breaking down animals before

(11:58):
butchering and things. Yes, and need other different types of knives,
but the basic knives. You're gonna want a bread knife,
you're gonna want a chef's knife, and you're gonna want
a pairing knife. That's the reality. And they have a set,
a beautiful set that goes for one hundred and thirty
nine right now, and they have different starter sets. But

(12:22):
I love their butcher's knife the Night. The three piece
set that I have is right now on their website
for one hundred and sixty five bucks at meison dot com. Again,
they're not a sponsor. I've never even talked to them.
I should approach them because I love their stuff so much.
Their nonstick frying pans are amazing. They're brazing pans are amazing.
They have stainless steel frying pans that are lovely. They

(12:46):
have stock pots, they have roasting pans, they have Dutch ovens.
Another thing that they have that I really love is
their carbon steel stuff. Their carbon steel stuff is amaze
balls and really just their Walk twelve. They have a
twelve inch carbon steel walk. All of their stuff. Their

(13:07):
saucyer pans are wonderful. Those are the ones with the
curved bottom. They don't have the ninety degree edge on them,
so sauces don't get caught in there and burn. Really
lovely stuff, all of it. Every single thing I've purchased
from them has become my new standard and I love
So that's all I can say about them. They don't
have a whole bunch of whole bunch of different things,

(13:29):
but what they do they do very very well, and
they are having a sale right now if that's what
you're looking for. The you know, they're cutting boards are plastic.
I'm not crazy about plastic cutting boards, although I do
have some here. You know that you can use your
best judgment. But they're everyday bench scraper, all these different things.

(13:50):
They're pastry brushes out of silicone, silicone pan protect protectors.
They just have a little bit of everything, and I've
just loved the quality. That's all so meson dot com.
You know what, I have some more. We'll extend this
when we come back. We'll extend it because I want
to get into some more pots and pans. I want

(14:13):
to get into some grills, some stocking stuffers and seasonings.
So stick around as we extend Technique of the Week
and our Gift Guide into the remainding of the hour,
So go nowhere.

Speaker 2 (14:26):
You're listening to the Fork Report with Nil Sevadra on
demand from KFI A six forty.

Speaker 1 (14:31):
We'll talk a little bit later about raw milk. What's
the whole thing with raw milk? Why is it a problem?
Is it a problem? Those types of things and what else?
I think pickles are on the dock. Anyways, It's going
to be a lot of good stuff, so go nowhere,
including us giving coffee making your holidays brighter. We'll tell

(14:53):
you all about that coming up. We'll do one giveaway
in the three o'clock hour, one giveaway in the four
o'clock hour for you there. Right now, we're extending our
technique of the week because we're getting into holiday gifts
and I'm kind of going through some of the things
that I love. It's not an extensive list, but it
is one that I think covers a lot of people

(15:15):
in your life if they love food and the like.
Talked about coffees earlier. You can listen back to that
on the podcast at the iHeartRadio on the iHeartRadio app.
I was getting into knives and pans Meson I think
is wonderful. Meson Dot com for pans and for knives.
Check them out. I find them to be incredibly reasonable.

(15:36):
They're having a bunch of sales now, and they were
kind of a sleeper. They came to me kind of
through a back door on social media. I am not
a spokesperson for them, although I would in a heartbeat
because I love their stuff. They don't pay me or
anything like that. I just really enjoy their stuff. So
check that out. Lodgecastron dot com. You've probably seen the

(16:00):
find them in hardware stores. You can find them in
military surplus stores and of course at lodge cast iron
dot com, and you know, all kinds of places sell them.
But band do I love their products. They've been around
for a long time. They are sturdy, they will last
a long time if you treat them properly. They just

(16:22):
have there's something about cooking, even baking, using cast iron
that's really wonderful. So check out Lodge cast Iron. The
cool thing is they have so many different styles. I mean,
having a skillet is important, a ten or twelve inch skillet,
that's important. But they also like our comal, our little

(16:43):
flat top we have here at the house, Tortillas, pancakes,
any of those things that goes on the komal they
have that that's a lodge. We use them a lot.
We even have these small lodge pans. They look like skillets,
but they're small and you can do your own, you know, pazookies,

(17:03):
you know from like BJ's Brewery. You can do those
at home in a pinch, you know, you go and
you make them in these little skillets. It's just you
can do a corn bread in them, you can do
pot pies in them. They're just wonderful. I use them
both indoors and outdoors, so I have a set that

(17:24):
I use for my outdoor kitchen, grilling, putting it in
our pizza oven, cooking steaks on it in the pizza
oven at high heat. They're just fantastic. You can't go wrong.
They're heavy as hell, but they really do the job.
And I can't recommend them enough. If you like cooking,

(17:44):
you have to have at least a few cast iron pans.
They're important. On my Big Green egg, Man, I will
throw them on there and they're just magical. I've done
corn bread in them on my Big Green Egg. There's
just something extra wonderful about that. They're great for camping.

(18:05):
As well keeping them to go on camping. They're just
super duper durable. Now, I'm not saying if you're going
to go hiking up a mountain you want to put
fifty pounds of these in your backpack to enjoy, but definitely,
if you're going camping in a camper, you are good
to go. They also might have things that you're you know,

(18:28):
as far as you know the sizes, you might be
surprised at the different sizes. You know how when you
go out to with your family to I don't know,
Chili's or something and you order fajitas and they come
out sizzling. That's on cast iron, So that cast iron
is coming out, you know, piping hot and wonderful. Some

(18:49):
of them you can even find and I think lodge, see,
I got them up here right now. I wonder if
they have the wood they got griddles, Dutch ovens, the skill.
They even have enamel, if you like the enamel I'm
looking for. I wanted to see if they have the
wooden accessories on the website, you know, because you can

(19:12):
serve them. They have the chainmail scrubbing pad, butterfly trivet.
I don't see any of the wood. They have these
wood serving trades, but I know you can get them
at other dealers, if not through Lodge, but I recommend

(19:35):
to go check out Lodge cast Iron dot com. The
stuff that they have. They have twenty percent off cast
Iron bakeware right now as well. They have this beautiful
cookware storage tower so you can stack them in a
corner in your kitchen and they won't take up all
the room. That thing is beautiful. What else is on

(19:56):
here that I think would be important for you. They
have of in liners, which is nice, but they've got
gril pant scraper's little things that would be great stocking
stuffers as well. But their pants, you just you cannot
go wrong with them. They're just amazing the work that
they do. All right, we come back, we'll get into grills,
get into a thermometer that I think has actually absolutely

(20:20):
changed the game. So stick around for that as we're
going over some gift ideas for the holidays. If you
have someone in your life that loves cooking, baking, already
of those things, so go know where.

Speaker 2 (20:35):
You're listening to The Fork Report with Nil Savedra on
demand from KFI AM six forty. I love it.

Speaker 1 (20:41):
Hanging out with family and friends. I've been to Disneyland
twice this week with my family. I don't get to
do that often. Gosh, if you haven't been to the park,
they've got their Festival of Holidays going on right now,
and the food was wonderful. As a matter of fact,
at Disneyland, they changed the oh gosh, the Bear restaurant
there in Frontierland, they made it a barbecue joint now

(21:06):
and they got they have these great corn on the
cob ribs, and we've talked about these on the air before.
It They not the Disneyland ones, but the ribs in general.
You cut the corn on the cob lengthwise into fourths
and then you can grill, you can deep fry, you

(21:27):
can do all kinds of things with them, and you
put spices and oils and things like that on there.
And they have them now is one of their side dishes,
and they're great. They've got a spicy aoli with them deliciously.
I had a wonderful pulled pork sandwich there with a
great slaw on top, and so pretty cool. They've got
some stuff going on there and it's always fun to

(21:47):
get out there to the parks. And enjoy yourself. So
good things happening over there, and that really signifies the
holidays being with my family. I know it gets busy shopping.
I know you you'll have to work and all these things,
but keep in mind that the important things are spending
time with each other. There is no gift that you

(22:08):
can give that is better than that. So just been
a you know, just been a great time trying to
spend more and more family time right now with my
little boy who's growing up and my wife who seems
to be aging in reverse. So not a bad mix
if you can get it. Grills, we're talking about the

(22:31):
we're talking about holidays gift ideas, you know, technique of
the week. I thought i'd do holiday gifts this year
because you know, people have been asking me and we've
gone through some great ones so far. So if you
didn't hear, please go back and check out the podcast
on the iHeartRadio app. It gets into some knives, pans, coffees,

(22:55):
and now grills Big Green Egg for your soft olid
fuel grilling. You will never ever have something better. I'm sorry.
It's an amazing it's just there is zero hyperbole. And
they have been partners on the show. They're not currently
right now, but they have been partners with us and

(23:16):
I can pick up the phone and we did recently
when we were doing a live broadcast at Wild Fork
in Laguna and a gal and just said, hey, we'd
love to give away a big green egg there Mini Max,
which is their only portable unit. Because these things are
you know, it's like three thousand year old technology. It's

(23:38):
made out of ceramic and they're heavy. So and they
think they're all like, we're in just really good people,
really good partners, and they stand behind their eggs. If
you're looking for something, they're not cheap, but the value
is insane. I think for what you receive. Bill Handle

(23:59):
talking him in to getting one, and he's like now
he's excited and calls me about about it like a
little kid every day. Oh do they have this? Do
they have that? If you're looking for versatility, they're large
is amazing. You can cook pizzas on it. I mean
you could cook pizzas on all of them. But they
have something called the wedge. As far as accessories go,
that large is perfect. I have the Exel here and

(24:21):
I love it. But I think for your average person,
a large is going to be right in your wheelhouse
unless you want something portable. That is the minimax and
that's the only ones portable if you go camping and
go to the beach and things like that. Biggreenagg dot
com is where you can find out more. If you
have someone who has a Big Green Egg, then go

(24:42):
and look for accessories because there are many of them.
As far as gas grills go. Now, Big Green Egg
is not a gas grill that is a solid fuel.
You're using lump charcoal in that you can smoke, you
can do low and slow cooking, you can bake in them.
But if you're going on a gas grill, I recommend
al Fresco is a brand that I trust, Twin Eagles,

(25:05):
Buyer Magic. These are all great brands, many of them
local here in southern California. I've been to their factories.
I've met these people. If you're looking for reputable sellers,
you know, I love the guys at Outdoor Elegance. They
just do a great job. Of course, Barbecue's Galore also

(25:28):
another one. And you go in and you ask for
these brands and they'll hook you up and they'll take
care of you and you will be good to go.
But those are great another brand that I love, and
they're harder to find. I think you could find them
at both those outlets of both Barbecues Galore and Outdoor

(25:50):
Elegance in Laverne and you can tell them that you
heard about it here. Both of them are very good
friends of the show. But Evo ev Oh, if you
like flat top cooking, this is like having a Mongolian
barbecue in your backyard. I have, and they have those
that will insert permanently into your island, or you can

(26:11):
get them on rollers. But man, are they fun to
cook on. I have a thirty inch cast iron top.
It It has two burners, probably sixty five thousand BTUs
when both of them are on the British thermal units
that's where that heat comes from. And man it is
they're just fun. Just doing breakfasts on them, grilling shrimp

(26:34):
on them. I do a lot of stir fry on them.
They are amazing. So if you've got someone who loves
to cook out back in the backyard looking for something
a little different, I think the Evo grills are amazing
all right. Onto stocking stuffers number one Zelmans. They are
great and they're going into stockings of family and friends.

(26:56):
As a matter of fact, a lot of times I
do baskets, you know, for family. That way I can
get a bunch of things for them, and they will
be going in the baskets this year because they are
I'm a huge fan. Now they're a sponsor, but I
love them. They're They're not I don't love them because
they're a sponsor. They're a sponsor because I love them. Yes,
that's what I meant to say. And that's how I roll.

(27:17):
Doctor p At of course and her spice mix. We
love that she was on the show last week. She's
got a new cookbook and she has her spices. They
are fantastic and we love everything that she does. Also,
you have oh my gosh, I'm kind of having brain

(27:41):
issues right now. Okay, so she's at the Prime Ingredient
dot com. You can get all of that, and thank you,
Kayla just said private. I know, but I was just
I was going on to the second thing. I have notes.
I was going on to the second thing and lost
my train of thought. Because sharp at the woodshed, the sharps,

(28:03):
they're at the woodshed. They have spices as well. They
have the California blend there that is fantastic, but they
have many other blends as well. California is one of
the main ones we love putting on chicken. They are great.
They're local and family owned and we love that as well.
So check that out. There's so many more that I
want to go to, but we'll put some lists up.

(28:24):
Just so many great local people doing great things as well,
so I hope that helps. Also. Lastly, there is a
new thermometer on the block and it is a progressive thermometer.
It is crazy, so it doesn't just have the temperature
read at the tip like normal thermometers. It has multiple

(28:47):
points of temperature taking throughout and it's by combustion. Now combustion,
I think that's the name of it. Let me look
where am I? Anywhere am I? I've been looking through
so many things today that I wanted to make sure
bustable combustion. Now I lost it. Son of a gun. Anyways,

(29:12):
they have a thermometer. It is not inexpensive, but it
is predictive, meaning you put it in, you go to cook,
and it will tell you when it believes it's going
to be ready. It starts taking the temperature increments and
says based on how it's cooking at this temperature. Right now,
this is when it's going to be ready. Just amaze
balls the stuff that is out there, and that is

(29:33):
one of the game changers. So check those things out.
Love on your people this year. It doesn't take money.
Just make sure you're spending time with them. If you
want gifts, there's some ideas for you and we've got
more to come when we return. It's the Fork Report

Are You A Charlotte?

Are You A Charlotte?

In 1997, actress Kristin Davis’ life was forever changed when she took on the role of Charlotte York in Sex and the City. As we watched Carrie, Samantha, Miranda and Charlotte navigate relationships in NYC, the show helped push once unacceptable conversation topics out of the shadows and altered the narrative around women and sex. We all saw ourselves in them as they searched for fulfillment in life, sex and friendships. Now, Kristin Davis wants to connect with you, the fans, and share untold stories and all the behind the scenes. Together, with Kristin and special guests, what will begin with Sex and the City will evolve into talks about themes that are still so relevant today. "Are you a Charlotte?" is much more than just rewatching this beloved show, it brings the past and the present together as we talk with heart, humor and of course some optimism.
