Looking for ways to eat healthier and still have incredible tasting meals? In this episode of the podcast, I chat with Chef Ilkay Basugur, who has a passion for flavor and wellness.

Chef Ilkay was born and raised in Turkey. After moving to the U.S., she left her career in health sciences to follow her passion for food, studying at Le Cordon Bleu College of Culinary Arts Hollywood. She's worked in many well known Los Angeles and Orange County restaurants. With a "food is your medicine" philosophy, she and her partner, Damian Ross, opened Fermentality in 2017, where they incorporate science and ancient techniques with modern flavors.

Over the years, she's become a wizard in gluten-free, low glycemic, no sugar added, keto and diabetic friendly baked goods, and is a Integrative and Functional Nutrition student. Find her on Instagram @fermentality, and at www.fermentalitylab.com

In this episode you’ll hear:

  • The right way to say Aliye’s name in Turkish
  • What is Fermentality and Niya Bakery?
  • How fermented foods helped Ilkay’s health problems
  • How and why she quit eating sugar and other high carbohydrate foods
  • The first low-carb product she created in her bakery
  • The nuances of a Mediterranean diet and is it really healthy?
  • The importance of macronutrients for our health
