storm and it's losing speed and powerand all those things that we expected it
to do. However, go nowhere any breaking news anything you need to

know about. When it hits landfallin San Diego in the Southland here,
moving up through Los Angeles and thelike, we will tell you everything.
You'll be getting news throughout today tomorrow. As it gets heavier, our news
will be stepped up and there willbe change of schedules and things like that.

So no reason to go anywhere else. All the news will be heard
right here, So stick around.We're broadcasting live today from the Win Las
Vegas. We're at Blue Wire Studios. Again. They always treat us great,
and it's always really fun to behere. We've got some guests coming
in today from Las Vegas, sowe'll be introducing you to a couple of

folks on the program today as wellas telling you more about next weekend where
Twala and I will be broadcasting livetogether, him doing his show, me
doing my show the entire time fromtwo to seven out there in Pomona at

the Pinner's Convention. So we'll talkabout that coming up a little bit later
as well, and how you canget tickets and come by and say hello,
and all those good things coming up. So just stick around right here
is what I'm trying to tell you. Okay, So let's go back to
some basics today. Normally we startevery single Saturday with Technique of the Week
and we go through different cooking techniques, so or focus on a particular dish.

Let us start out specifically with somereminders about if the power goes out,
if winds come in heavily with thetropical storm, there is a likelihood
of power outage and the like.So if you're in that situation, we'll
go over a couple of things asfar as anything in the refrigerator. If

you don't open your refrigerator. Thepower goes out and you don't open your
refrigerator, then you have approximately fourhours, four hours what you have for
the parish bulls to be good inthere. Now, after that's without power,
it stays cool enough. We've talkedabout the Dane zone zone many times

on the program, and that iswhen food sits in a temperature between forty
degrees and one hundred and forty degrees. When it sits in that area,
that is when your bacteria, theyuckies double every twenty minutes, so that

that gets pretty heinous pretty quickly.The bacteria is slowed down by the chill
of the refrigerator. It is pausedby the freezer, meaning that once it
thaws out, that goes that startsback up again. Freezers usually last about
twenty four hours. If they're packed, they're more packed the better. So

what drives my wife crazy is apacked freezer. But every time we get
near the possibility of you know,blackouts or the power going out, I
always reminder, see, it's gonnalast even longer now because all of those
cowboys steaks and ribis and things likethat are acting as ice cubes. So

about twenty four hours for the thingsin the freezers. Freezer without opening it
and about four hours with the powerout in your refrigerator, so you could
start making your plan if the powerdoes go out. These are the thing
the most perishable. These are thethings that we're going to focus on and
then keep things closed. Look aroundyour pantry and the like. If there

is something that does go down andyou can't drive, it's not safe.
There's tons of rain and really theworst combination would be rain and wind.
You know, you get the rainand wind coming at you, that's when
you're going to have major problems.Like in Los Angeles, you got palm
fronds. Southern California is known forits palm trees. Those palm fronds are

much heavier and much larger than youthink. You know why because you're standing
on the ground and they're one hundredfeet up in the air and you go
they're not that big. Well,they get bigger as they come to land.
As it were. So many timeswe've had those get cars and neighbors
houses, and even our place fromtime to time because we live in an

old part of LA with it hasa ton of them, so falling debris,
those things make it not safe.You probably don't want to put anybody
else in any hazard situation by orderingfood. You know that's up to you
and the weather in your area.But if you can't go out, I
bet you have more in your homeand your pantry than you think, So

assess everything, bread, whatever youhave. I know this sounds super dramatic,
but I'm just trying to give youtips. I realize that we get
really hyped up about weather in southernCalifornia because we don't have it. And
last time it was kind of likea wooooo, and it wasn't that big
of a deal. But better safethan sorry, right, So if you

do get in those situations, you'regoing, well, I'm hungry, but
I don't want to go out.I'm not going to get delivery. Just
keep in mind you use it asa challenge. Use it as a challenge
for yourself and the family. Comeup with things with what you have in
the house. And if you don'thave power and you're you don't want to
be using your iPads or your computersfor looking up recipes. Just get creative.

Get creative. Understand texture, protein, your starches, veggies. Hell,
you may even have some veggies inthe backyard, in your little garden
ready, and then you're you're allself contained and you can walk around all
high and mighty and better than everybodybecause you're like, I grew this myself

just in case a hurricane slash kindof story two tropical storm comes in,
and I will be ready, alwayssomething to be able to do in there
in the house. Not a problem, Get together with the family, have
a good time, make fun outof it, and be safe. It's
going to hit very different different partsof southern California depending on its trajectory,

so all fun and games. Nowwe shall see how it goes. And
you know, as I'm broadcasting herefrom the Win Win Las Vegas, my
flight for tomorrow has been canceled,so you know, there's a lot of
things that are going to be changingover the next twenty four hours, and

we're going to be keeping our eyeon it. Here. We're keeping an
eye on the storm, of course, but we come together for three hours,
two to five on a Saturday tocelebrate food, the people that make

get out here to Blue Wire Studios, and it's this gorgeous studio setup that
they have here in the middle ofwhat is a gorgeous, gorgeous campus and
resort at WIN, Las Vegas,and so much going on. Cosa Playa
is one of the restaurants here,and we're going to be talking about this,

the menu and everything they do herewith chef Sarah Thompson. Coming up
in a little bit. My buddyJoe Escalante, the bass player for the
Vandals, all over stud obviously hehas those of you who know him know

here in Las Vegas. We'll talkabout some of the food places nearby it
if you come to visit. ButI know lawd of people are having a
good time and you get to meetsome really, really fantastic people there.
So we'll talk about that coming upin just moments from now. As well,

so go nowhere, all right.I When it rains, I start
thinking about things like a grilled cheese. Now you have the standard grilled cheese,
of course, but I want totalk about elevating it in any way
you can. And I know you'rethinking, well, there's only a couple
of ingredients, right, So howdo you elevate a grilled cheese? Oh,

(09:28):
there are so many ways to takeit up a notch and bring in
something. So let's start with thefat. The fat is what you're going
to put up against the grill.You're gonna put it on the bread.
That's what's going to give it thatcrunch, that crispiness on the outside.
Most often, when you think aboutthis, you think about butter, which
is fantastic. I will tell youthe more butter doesn't give you necessarily,

the more crisp that more crunch.Sometimes lighter amounts of butter will give you
because you've got it just enough toget that sissle and just start browning those
sugars in the bread, but notso much that it moistens it and makes
it all soft. But there areothers. Mayonnaise, mayonnaise which has eggs

and oil in it as an emulsionthat can elevate your instead of using butter.
That can elevate your grilled cheese aswell. But there are others.
You can use rendered bacon fat thenI got a wa wa yep, bacon
fat. You can put just alittle bit of garlic powder on the outside
as well to kick it up.You can put some parmesan cheese on it

(10:41):
as well to make a crunch.One of the things that I like to
do is to cut it diagonally,which I always do. I'm on grilled
cheese, and then you put atiny bit of whatever your fat is,
butter what have you on the cuts, and then put those face down and
get those to see her off too, or to get nice and crunchy rather

(11:01):
and if the butter starts to melteven better, or the cheese, another
thing you can do is you canactually put a little bit of cheese down
on the grittle and then you putthat cut right into it. That cheese
starts to get caramelized in bubble.Once it cooks, you pull them off
and you'll have this really crispy,cheesy, crunchy goodness on the edge.

Keep in mind, there's now youcan find in sprays wonderful stuff like duck
butter. Not duck butter. Mindgrouping abs some boys duck fat s du
butter. Don't keep saying please,please, thank you, Joe, just

don't. Anyhow, you take theduck fat and it gives another flavor.
Now about the cheese is look aboutat other cheeses. I love the American
cheese for my grilled cheese. Iget it. It's the standard, It's
what we all grew up with.But check out different cheeses. Combine different
cheeses. Change the bread. Agreat sour door bread can kick it up

as well as others. So youopen yourself up to other things, and
as the rain starts to come in, comfort yourself with the simplicity of a
grilled cheese that'll bring smiles for allwho make them and eat them. Stick

on. Hurricane Hillary has now beendowngraded to a Category two tropical storm.
We will be keeping an eye onthat. It still looks like it's going
to bring a lot of wind andrain with it, even on the outskirts
of it. If you've seen anythe modeling being done, you've got this
big chunk of water activity on theoutsides that are definitely going to be hitting

a lot of us. As faras the winds that come around with hurricanes
and even tropical storms, now,it could get pretty crazy out there.
We've seen that in obviously in southernCalifornia. Before we get water, it
starts going into those fire areas thathave nothing holding them together that causes issues.
And then you add wind to thatbad bad mix. So where you're

going to be keeping an eye onthat throughout today. It looks like the
vast majority of it's going to hiteither early morning or into the middle of
tomorrow, so we will have specialprogramming going on. So there's no reason
to go anywhere else. And obviouslyas it goes into if and as it
goes in southern California on Monday,we will be taking care of you there

as well. So all I'm sayingis there's no reason to go anywhere else.
Okay, when it comes to cookingwithout power, it can be a
little tricky depending on the setup youhave. If you have electrical stuff,
that's going to be a problem.Some gas has shut offs as well,
so you can't light them if theyhave an electronic igniter and they are lightable

(15:22):
safely, then you can ignite themwith a match or something like that.
But there are other ways. Ifit is windy and you've got a lot
of rain and you're not in anenclosure of any kind and I mean more
like a something where you're covered inyour outdoor kitchen, then you're going to

have issues trying to grill. Youstill might be able to if you have
that and you have the little areatthat you can go under your good Otherwise,
look to the stuff that you wouldkeep with your with your camping stuff,
rocket stoves, you know, maybeeven open fire if you have a

fire pit again that's covered, oryou have space that you can keep out
of the elements. But some ofthose folding steel stoves or buttane stoves that
you have, those might come inhandy if it gets that bad. And
keep in mind, it's a prettylarge area in southern California, and you

know, not all of us aregoing to be experiencing the same storm in
the same way. As it movesa little bit more east, a little
bit more east, a little bitmore east, then less of us might
take that brunt as it moves closerto southern California out of Mexico. So
keep those things in mind that thereare ways just make sure that you're keeping

(16:48):
everything safe, not especially if you'reusing open flame and a fire somewhere.
There are many ways that you cando that. If you have generators and
back up. Keep in mind oneof the things that is most dangerous or
most difficult to use or to taketo power up with some generators or battery

(17:11):
packs is are things that heat,things like coffee makers, things heat elements.
Those things like a power plate ora little cook top plate or something
like that hot plate. Those thingsare going to be very difficult and may
not even power up from a batterypack. If you have a big enough

(17:34):
generator, yet they will, butoftentimes off those smaller ones they will not.
It just takes so much. It'snot just you know, you've got
vaults, you've got watts, You'vegot a lot of other things going on,
and they all mean something different asto how it can power up.
So don't be surprised if your generationwater works perfectly and and yet you can't

get the you know, something towork. It's a situational all right,

sitting there streaming. And if yoursongs are good and they're somewhat listenable,
I look at the streaming statistics andthey get played over and over. You
got a happy birthday song that getsplayed. You got a song that says

have a really really lifting if youhave if you have a really really hardcore
band, like I'm not going toname any but just really you know,

nasty, like a new York hardcore. I notice some of those bands are
popular, but they don't. Peoplearen't streaming them over and over and putting
them on playlists. But we dopretty well, and so do a lot
of other bands that normally would havezero income. And it gets bigger every
year because they figure out how tofind the royalties better and better every year.
Your representatives are out digging and scrapingup every penny, and I'm very

happy with it. I'm not oneof those artists saying that I'm being cheated
by the Spotify. Well, youare an attorney, an entertainment attorney.
Yes, any thoughts on the strikegoing on with the directors and the writers
when it comes as not streaming butdigital. I'm on both sides. So
I want a production company, andI also I am a writer. Oh

Remember the screen actors guilt? Yeah, well so am I because yeah,
because of all this, I usedto be remember the film actors guilt,
