  What is Fried Rice Syndrome?   Each year, over 63,000 cases of food poisoning occurred due to one specific bacteria. That bacteria is called Bacillus cereus. It is an unusual cause of food poisoning because it produces a toxin that is linked with fried rice. That's why it's called Fried Rice Syndrome.   The bacteria naturally colonizes uncooked rice grains. There are spores that are produced which have the toxin in them.   The cooking process of fried rice allows this particular bacteria to produce a toxin which cannot be destroyed. When a person ingests the toxin, they may immediately begin to have symptoms within 30 minutes. Some people may not have symptoms for several hours so they may not directly link the cause and the effect.   Leftover fried rice has the highest risk of developing nausea, vomiting, diarrhea, and abdominal pain.   Most people have mild symptoms, however some people can become severely dehydrated. Because this particular infection is caused by a toxin, antibiotics don't help it. Most people start to feel better within a couple of days.
